Rinse Rice: Add 1 cup rice to inner pot. Rinse rice a few times over cold water, then drain really well.Rice to Water Ratios:1 cup (230g) Jasmine Rice - 1 cup (250ml) cold water1 cup (200g) Arborio Rice - 1 ½ cup (375ml) cold water1 cup (210g) Basmati Rice - 1 cup (250ml) cold waterAdd cold water in the inner pot, then remove 2 - 3 tablespoons of water.*Note: Instructions for a more precise method here.

Add Spice &amp; Pressure Cook Rice: Add 1 cinnamon stick (4g) + ½ teaspoon (2g) nutmeg to the inner pot. Give it a quick mix. Pressure Cook at High Pressure for 5 minutes, then Natural Release for 10 minutes. After 10 minutes, release remaining pressure.

Make Milk &amp; Egg Mixture: While the rice is pressure cooking, beat a large egg in a large glass container. Add 2 pinches sea salt, 1 tsp (5ml) vanilla extract, and ⅓ cup white sugar (78g), then mix well. Pour in 2 cups (500ml) whole milk, then mix well.

Make Rice Pudding: Pour milk mixture into the cooked rice. Bring the rice pudding mixture to a simmer (Instant Pot: press "Cancel", then "Saute" button). Stir occasionally with a spatula. As the rice pudding mixture heats up, the starch will be released and it will start to thicken. Add in 1 tbsp (14.5) unsalted butter for a more creamy, rich and smooth texture. Continue to stir until the rice pudding reaches desired consistency. Turn off the heat. The rice pudding will thicken as it cools down.

Sweeten &amp; Serve: If adding raisins, add them to the bottom of the serving bowl, then pour the rice pudding over the raisins, and stir to combine. Sprinkle some cinnamon powder on top. Then serve hot or cold. Enjoy~ :)*Pro Tip: If you are not adding raisins, be sure to taste and sweeten the rice pudding with more sugar or other sweeteners.

Creamy Vegan Rice Pudding (1 Pot)

½ cups dairy-free milk ((plain, unsweetened // we used almond milk))

maple syrup

cornstarch

sea salt

light coconut milk ((we like Whole Foods 365 brand))

tsp vanilla extract

If you don’t already have cooked white rice, prepare it at this time using these instructions. 1/2 cup dry rice yields ~1 ½ cups cooked. Set aside.

To a medium saucepan, add the dairy-free milk, maple syrup, cornstarch, and sea salt. Whisk to combine, then add cooked white rice and stir with a wooden spoon or spatula.

Heat the saucepan over medium heat, stirring occasionally. Cook for about 13-16 minutes or until the rice has absorbed most of the liquid but is still slightly runny. It should resemble risotto. Next, add the light coconut milk and vanilla extract and stir constantly for 2-4 minutes until the mixture is thick yet pourable. It should look like a loose risotto — it will thicken as it cools.

Remove the pot from the heat and let the pudding cool for a few minutes if serving warm (option to top with cinnamon and raisins). Alternatively, you can let it cool completely.

To cool the pudding, place into a medium heat-proof bowl and cover the top of the pudding with parchment paper or plastic wrap to prevent a skin from forming. Place the bowl in the refrigerator for 30 minutes to 1 hour. Again, option to serve with cinnamon and raisins. We prefer the chilled rice pudding.

It will keep stored in an airtight container in the refrigerator for up to 4-5 days. It can be frozen, but we find the texture becomes grainy and brittle rather than smooth and tender.

Looking for a quick treat to cozy up with on chilly afternoons? This classic rice pudding recipe is creamy, comforting &amp; full of warm flavors!

(52 grams) white or light brown sugar

(480 milliliters) whole milk

(120 milliliters) heavy whipping cream

(65 grams) short grain white rice

Whisk together the egg, sugar, vanilla and cinnamon in a small bowl. Set aside.

Add the milk, cream, rice and salt to a medium-sized saucepan and bring to a boil over high heat.

Once boiling, reduce the heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to keep the rice from sticking to the bottom of the pan.

Slowly add about half a cup of the hot rice mixture to the egg mixture, whisking quickly, to temper the egg mixture.

Add the egg mixture to the saucepan with the remaining rice mixture. Stir everything together and continue heating on low heat for about another 5-10 minutes, or until thickened. Don&#8217;t boil. It will thicken quickly. Keep in mind that the mixture will continue to thicken as it cools, so you don&#8217;t want it to be too thick before you take it off the heat. A touch soupy still is ok.

This is my go to rice pudding. I use almond or macadamia milk. You may think it looks thin but it really thickens after refrigerating.

Recipe did not work for me. I had to double the amount of milk/cream as the texture was too thick and after 45 mins of stirring/simmering, the rice was still too hard. The texture at the end was too pasty.

LOVE THIS rice pudding.  I followed it to the letter with the exception of the brown sugar.  I had to use half white sugar because I ran out of brown.  It was perfection!

I made this with coconut milk and coconut condensed milk and it turned out really well.

Came out just right,  doubled the recipe ingredients with 1 can of condensed milk and sweetness was perfect, for me anyway. Added after done 1 additional cup of milk to reduce thickness for serving. Thank you, this will be my new go to recipe.

I made this for tonight’s Latino themed menu for dessert. I only added one additional ingredient which was a full abuelita tablet (I doubled my recipe, so only use half tablet for regular recipe) that was grated into the mixture before cooking. It came out wonderfully delicious! This will be added to my recipe collection. 5 stars!
