Great, i used 1/2 lemon and had only dried Thyme. I love this! Great Northern beans work well also, if you do not have the other kind.

I was excited to use my  kale from a friend’s garden. Found this recipe and was less than excited with the results. Somewhat bland. Found it ‘MEH’.

I saw kale soup posted  and i decided to make a pot. I always doctor up a recipe, if i dont have an ingredient on hand i find a substitute. FALL SEASON IS MY SOUP MAKING SEASON. This soup is so delicious and enjoyable to eat...no meat, the taste is so good. I made cornbread muffins with it, so good.

It's all about that seasoning! Red pepper flakes and a little extra garlic make for a great winter time soup.

Sheltering In Place is awful but this gives me the time and opportunity to try different healthy recipes such as this Kale Bean soup.  My family loved it! The lemon at the end just gave it the perfect balance.

This is good stuff, did half kale, half chard.  Doubled the garlic,  added nutritional yeast and Italian seasoning.  The greens hold up for leftovers.  I omitted the vegan parm, just not that important.  Was even better day two.   Added a little vegan sausage on day three.

This soup has got loads of flavor. It’s a definite favorite..and. Oh it’s easy!!

Oh my god, this is so bland.  We followed the recipe..... bland.  No amount of parm cheese or salt can save this.  We were looking forward to it.  Yuck.  Perhaps I will try one more time with a parmesan rind as a few reviewers suggested.

Delicious, I actually craved it when I was at work and couldn’t wait to eat it for lunch. Only thing I did differently was dried thyme because that’s what I had on hand; I’m making it again tomorrow! Super easy, better the next day.

A light and warming carrot and celery soup. Mildly sweet from the carrot, this vegan soup is low-fat, healthy and perfect for dunking freshly baked bread into.

Carrot and Celery Soup (Easy + Vegan)

med Carrots (diced)

Celery (diced)

Onion (diced)

cm Ginger (Fresh, grated)

Garlic (small-med, grated)

Thyme (fresh, small)

tbsp Olive oil (extra virgin)

Water

Step 1

In a large pot, heat up olive oil on med-high heat and add onion. Sweat until semi translucent. Add carrot and celery, stir through the  onion and sweat for another five minutes with the lid on.

Step 2

Add water, garlic, ginger, thyme and salt and bring to a boil. Turn the heat down to med-low and cook until all veggies are tender. Serve warm.

Carrot and Celery Soup (Easy)

A slow simmered Vegetable Beef Soup with tender chunks of beef and wholesome fresh vegetables like carrots, potatoes, tomatoes and green beans.

Vegetable Beef Soup

canola oil

chuck

beef broth

bay leaves

onion

celery

carrots

garlic

parsley

oregano

marjoram

thyme leaves

basil

potatoes

green beans trimmed and cut in 1 inch segments

(14.5 ounce) petite diced tomatoes

Worcestershire Sauce

Heat 1 1/2 tablespoons canola oil in Dutch oven or heavy stockpot over medium to medium high heat.  Add the chuck roast and sear to brown each side. Add about 3 cups beef broth (or enough to cover it), black pepper and bay leaves.  Simmer for 2 1/2 &#8211; 3 hours or until fork tender.

After the beef has simmered for about 2 hours heat 1 tablespoon canola oil in separate Dutch oven or heavy stockpot over medium heat.  Add onion, celery and carrot; cook 5-7 or until onions and celery are tender. Reduce heat to low and add garlic, parsley, oregano, marjoram, thyme and basil; cook for 1 minute stirring constantly.

Add 4 cups beef broth, potatoes, green beans, diced tomatoes, Worcestershire Sauce. Ladle in 1 1/2 cups of the broth that you cooked the chuck roast in being careful to discard the bay leaves. Simmer until the vegetables are tender; 20-30 minutes.

Remove the chuck roast from the pot and let it cool on a cutting board. Shred it with 2 forks discarding the fat and the cartilage. Add the shredded beef to the pot and warm for 5 minutes.

I love how warm, hearty and delicious this is! Perfect for fall!

Heat the olive oil over medium heat in a Dutch Oven or heavy pot.  Add the onions and celery and cook until they are soft.  Then reduce the heat and add the garlic, dried thyme, dried marjoram, and fresh ground black pepper. Cook for 1 minute, stirring constantly.

Stir in the vegetable stock, carrots, fire-roasted tomatoes, potatoes, green beans, and bay leaves. Bring the mixture to a boil. Reduce the heat and simmer for 20 minutes.

Add the cabbage and peas, cooking for another 10 minutes or until all the vegetables are tender. Remove the bay leaves from the soup.  If desired, sprinkle with dried or fresh parsley, Parmesan Cheese, and crushed red pepper.
