This Egg Casserole (Egg Bake) is an easy breakfast casserole that&#x27;s made with only 9 ingredients (eggs, veggies, bacon, cheese and seasoning)! It&#x27;s a healthy, low-carb way to start the day!

Healthy Egg Casserole (Egg Bake)

bacon (diced)

onion (finely chopped)

tsp minced garlic

red bell pepper (diced (about 1 cup))

green bell pepper (diced (about 1 cup))

eggs (beaten)

sea salt

¼ tsp pepper

cheddar cheese

Preheat oven to 350 degrees F.

Grease a 9x13” baking dish, set aside.

In a large skillet, over medium heat, cook diced bacon until it just starts becomes soft.

Add minced garlic and onion and cook until bacon begins to brown.

Add red pepper and green pepper, cover and cook for 5-10 minutes or until the veggies are soft and bacon is browned, stirring occasionally.

Remove from heat and let cool.

In a medium bowl, whisk together eggs.

Add sea salt and pepper and whisk to combine.

Add cooled bacon/veggie mixture to the beaten eggs and stir to combine.

Add cheese. Stir to combine.

Pour into prepared baking dish and spread the mixture evenly in the dish.

Bake in preheated oven for 25-30 minutes, or until top is set and slightly browned.

Cool for 5 minutes and serve warm.

This Easy Breakfast Casserole Recipe has hash browns, ham, cheese, and eggs. &nbsp;This hash brown breakfast casserole can be made overnight. &nbsp;Perfect for a holiday breakfast!

Easy Breakfast Casserole Recipe

frozen hash browns (-about 8 cups)

sharp cheddar cheese (-shredded)

milk (-I used skim)

salt

black pepper

cooking spray

Add the frozen potatoes, ham, and cheese to a large bowl. Toss to combine. Pour the mixture into a 9 x 13 inch baking dish that has been sprayed with cooking spray.

In a large bowl, whisk the eggs with the milk, salt, and pepper (I use the same bowl from step 1).

Pour the egg mixture over the hash brown mixture. Pat everything down with the back of a wooden spoon.

Bake for one hour, uncovered. The center should be set and the edges should be golden brown.

Overnight Egg Casserole with Salami, Bread and Wine

T butter

c Havarti Cheese

c Swiss Cheese

c milk

dry white wine

green onions,

Salt and Pepper to taste

sour cream

Parmesan cheese

Butter a 9 x 13 baking dish. Tear bread into small pieces and scatter over bottom. Drizzle butter on top.

Beat together eggs, milk, wine, onions, mustard and salt and pepper. Pour over cheese and salami. Make sure bread is covered and weight it if necessary. Cover and refrigerate overnight.

Remove dish from fridge about 1/2 hour before baking. Preheat oven to 350. Bake covered about 35 minutes. At this point eggs should be just about cooked. If not, leave in oven a bit longer.

Uncover and spread with sour cream. Sprinkle Parmesan on top of that. Bake 10 more minutes until crusty and lightly browned. Let sit a few minutes before serving.
