Preheat the oven to 400 degrees F and line a baking sheet with foil or parchment paper.

Arrange the English muffin halves cut side up on the baking sheet.

Place into the oven and toast until very lightly golden, about 4 minutes.

Spread a spoonful or two of the pizza sauce over each half. Top with mozzarella cheese, any toppings, and Parmesan cheese, if using.

Bake for 6-8 minutes or until the cheese is melted. Let cool briefly before serving and cut up as needed.

Preheat oven to 425°F. Line baking sheet with foil or parchment paper, or spray lightly with cooking spray. Place split English muffin halves on prepared baking sheet.

Bake 6 minutes or until lightly toasted.

Remove from oven and divide pizza sauce evenly among each half, spreading almost to edges.

Sprinkle with mozzarella cheese and add desired toppings.

Return to oven and bake 6 more minutes or until cheese is melted.

Saute chicken and add barbecue spice. Cover and cook for almost 10&nbsp; minutes until golden brown and fully cooked. Add in barbecue sauce and cook for another 2 minutes.&nbsp;

Place the English muffins on the sheet and spread some pizza sauce on top of each.

Top with barbecue chicken, roasted peppers, mushrooms and mozzarella cheese.&nbsp;

Bake in the oven for 8 minutes or until the cheese is melted and bubbly.
