Creamy Squash Fettuccine! Silky creamy sauce, caramelized onion, fork-twirled noodles, topped with the crispy pancetta and delicate little flakes of salty parmesan and fried sage leaves.

butternut squash (see notes)

heavy cream (honestly, it’s delicious with

pancetta,

onion,

sage leaves (optional)

Roast the squash: 

Preheat the oven to 400 degrees. Arrange squash on a baking sheet and toss with olive oil and a little salt. Add thyme sprigs. Roast for 20-30 minutes until soft and fragrant.

Fry the pancetta

Meanwhile, fry pancetta bits in a skillet until crispy and browned. Remove from the pan and set aside. Drain all but 1 tablespoon of the grease.

Caramelize the onion

Turn the heat down and let the pan cool for a moment. Add the onion to the pancetta grease. Sauté for 20-30 minutes (while you&#8217;re waiting for the squash to roast) until soft, fragrant, and caramel-colored. (Optional: after you remove the onions, fry the sage right in the same pan.)

Blend the squash sauce

Transfer squash to a blender (removing thyme sprigs). Puree the squash with the broth, garlic, and salt until smooth.

Almost there

Place your cooked pasta in your onion pan over medium low heat. Pour squash sauce over pasta. Toss gently with cream and about half of the onions. It should be looking real good right now.

Serve it up all fancy: 

Plate up the pasta. Top with caramelized onions, pancetta, sage, and fresh Parmesan. Are you at a restaurant? YOU ARE TOTALLY AT A RESTAURANT. Mwah!

And just in case anyone needs this information, I made it vegan very easily! I omitted the pancetta and in place of the cream I added almond milk, it was silky and velvety perfection!

This was definitely a labor of love (I doubled it) but we all thoroughly enjoyed it, including my three kids 5 and under. Served alongside a salad from our garden and it was a delicious, filling, and elegant meal. POY FTW yet again!

Made this today. It was yummy. Since I am vegetarian I added walnuts and rosemary to the onions. 

And it is ok to use all the sauce on only 2 portions, right?

This Creamy Apple Gouda Sausage Pasta recipe is a delicious way to cozy up with dinner. The beautiful combination of the apples with the sausage really makes this dish and it is a 30 minute meal! Save it to Pinterest now so you can make it!

Creamy Apple Gouda Sausage Pasta

grated smoked gouda cheese + 1/4 cup for topping

Sea salt and pepper

Boil a large pot of salted water on the stove over high heat. When boiling, add the pasta and cook to al dente.  Reserve 1-2 cups of pasta water before you drain the pasta.

While the water boils, heat a large skillet or saute pan over medium heat and add the Italian Sausage. Brown and then remove and set aside on a plate with a paper towel to soak up the extra grease.

return the pan to the heat and add the onions. Cook for 4 minutes and stir continuously until the onions begin to brown.

Add the garlic and the apples and butter. Cook until the butter is melted and well incorporate. Stir continuously so the butter doesn&#39;t burn. Simmer for about 1 minute once the butter has melted.

Add in the flour and mix into the apples and onions to coat. Then add 1 cup of chicken broth and deglaze the pan by scraping the brown bits.

Let them simmer down and then add another cup of chicken broth and the sprigs of fresh thyme.

Add in 3/4 cup heavy cream. Mix well and let the sauce simmer for about 5 minutes on low heat.

Add the sausage back in and simmer 2 minutes. Then add in 1 cup of pasta water. Mix well.

Add in 1/2 cup smoked gouda cheese and mix well. The cheese will melt into the sauce while you mix. If the sauce seems too runny, you can let it simmer for a few minutes to reduce the liquid.

Add in the pasta and mix well to combine. Top with additional fresh thyme, sea salt and pepper to taste and a little more gouda cheese. Enjoy!

Oof I feel like this recipe had so much potential. Everything smelled amazing, the sauce tasted great, and then the pasta water was added. I should have known when the recipe called for pasta water. The recipe suggests using 1-2 cups, that seemed excessive so I used 3/4 of a cup and it was still too much. It completely watered down the sauce and got rid of the great taste it had prior. The recipe also doesn't specify how much pasta to use (I used about 12 oz) but I think in the future if I used 8 oz and didn't water down the sauce it would be enough to cover the noodles without absorbing all of it.

This was so yummy! And I love that it's basically a one-pot meal!
