As much as I would like to take the credit for this, it is my friend Maria’s recipe. Of all the recipes in my book, this one probably means the most to me, says Skye.

Maria's famous tiramisu

eggs, separated

caster sugar

mascarpone

ladyfinger biscuits (savoiardi)

450 milliliters strong coffee, cooled

cocoa powder,

Sage and cheddar scones

Flour

Baking powder

Sugar

Salt

Cayenne pepper

tsp Sage, finely chopped, plus some extra leaves (Main)

Cheddar cheese, grated, cheese (Main)

Full cream milk

Sift the dry ingredients in a bowl, then mix in the sage and the cheese.

Make a well in the centre, and add the milk. Gently mix with a wooden spoon, then turn out on to a bench lightly dusted with flour. Shape into a rectangle about 3cm high, and then cut into rectangles (makes about 8).

Place on a baking tray lined with baking paper, and add a sage leaf to the top of each scone.

Bake at 220C for 15-20 minutes until golden and crisp on top.

Heat the oil and butter in a frying pan until it starts to bubble slightly. Add the sage leaves and as they start to crisp, move them aside and carefully add the eggs. Swirl and tilt the pan, and with a tablespoon, lift the oil from the pan and pour over the edge of the eggs, to help get a crisp edge.

Cook until the yolk is cooked through to your liking, then season and serve on toast.

When he's not shotgunning cookie jars full of M&M's, Kevin sometimes treats his coworkers to the Malone family's mainstay: chili. Let's follow along and try very hard not to spill any.

Kevin's Famous Chili inspired by The Office

ancho chiles

dried cascabel chiles

cocoa powder

tbsp cornmeal

tbsp toasted & freshly ground cumin

oregano

chicken stock, divided

vegetable oil

chuck steak,

Spanish onion, chopped

jalapeños,

habanero pepper (optional),

garlic,

Mexican lager

roma tomatoes, cored and chopped

brown sugar

red kidney beans, rinsed and drained

Salt & pepper

white cheddar (optional)

Cut open dried chiles and remove seeds.  Cut into 1/2-inch pieces, and in a dry pan over medium-high heat, toast until fragrant and barely smoking.  Place in a food processor and process until reduced to a fine powder, about 3 minutes.  Add cocoa powder, cornmeal, cumin, and oregano, and pulse to combine.  Add chicken stock, and blend until a paste forms.  Set aside.

- 3 ounces dried ancho chiles
- 1 ounce dried cascabel chiles
- 1 tbsp cocoa powder
- 3 tbsp cornmeal
- 1 tbsp toasted & freshly ground cumin
- 6 ounces chicken stock divided
- 1 tbsp dried oregano


Place vegetable oil in a large stock pot over medium-high heat until shimmering.  Add beef in batches and brown on all sides.  Once at least half the beef is browned, add onion, jalapeños, habanero, and garlic to the pot and sweat briefly before deglazing with the Mexican beer.  Add tomatoes, brown sugar, kidney beans, beef, spice paste, and the rest of your chicken stock - stir until combined, and bring to a bare simmer.  Simmer for 2-3 hours, or until beef is tender and chili has thickened.  Season with salt and pepper, pour onto polyfiber carpet*, and top with cheese and other desired garnishes.*Don’t actually do this

- 2 tbsp vegetable oil
- 3 pounds chuck steak trimmed and diced into very small cubes
- 1 large Spanish onion chopped
- 2 jalapeños seeded and chopped
- 1 habanero pepper (optional) seeded and chopped
- 4 cloves large garlic crushed
- 12 ounces Mexican lager
- 6 roma tomatoes cored and chopped
- 12 ounce can red kidney beans rinsed and drained
- 2 tbsp brown sugar
- Salt & pepper to taste
- 26 ounces chicken stock divided
