Ful Medames is a popular Middle Eastern breakfast recipe that&#x27;s made with cooked fava beans and cumin, then topped with a garlicky, lemon olive oil sauce!

Ful Medames

fava beans

chickpeas

extra virgin olive oil

lemon juice

parsley

jalapenos

Salt and pepper (to taste)

Pour the fava beans and the chickpeas together into a colander to drain. Rinse the beans in cold water.

Transfer the rinsed, drained beans to a medium saucepan over medium heat, and add 1 and half cups of cold water. Season with cumin and kosher salt.

Bring mixture to a boil. Reduce heat to low and let simmer uncovered for 20 minutes until most of the water is absorbed, smashing occasionally with the back of a wooden spoon to get the desired consistency.

Meanwhile, combine all the ingredients for the sauce in a small bowl.

When the beans and chickpeas are done cooking, serve the sauce on top or next to the ful medames. You can have stir half the sauce with the bean mixture and serve the other half on the side.

Serve with fresh parsley on top along with warm pita, tomatoes and radishes.

Traditional Greek Fava is one of the best things I tasted in Greece. This Greek Fava recipe only takes is a handful of ingredients and half an hour. Serve with plenty of bread and fresh veggies!

Greek Fava Recipe

dry yellow split peas, rinsed

red onion

scallions (chopped)

garlic (peeled and chopped)

extra virgin olive oil (plus more for serving)

Paprika

Place the split peas in a large saucepan with 5 cups of warm water. Set the burner to high heat and allow the mixture to come to a boil. Skim any foam that forms on the surface of the liquid, then add the red onion, scallion, and garlic. Return the liquid to a boil, then turn the heat down to low and cover the pot. Simmer, stirring occasionally, until the peas are very tender, about 15 to 20 minutes.

Once the peas are tender, turn off the heat and add the olive oil and salt. Use an immersion blender to puree the mixture (or process in batches in a tabletop blender). Taste and add more salt as needed.

The fava will thicken as it cools. Serve topped with a generous drizzle of olive oil and a sprinkle of paprika; provide crusty bread and/or sliced vegetables for dipping.
