fennel slaw

Crunchy and fresh, this Fennel Asparagus Salad pairs well with grilled fish, chicken or tofu. Also delicious on a bed of spring greens with cucumber and radishes. A vegan salad that can be made ahead and holds well in refrigerator for several days.

Fennel Asparagus Salad

leek

olive oil

fennel bulb (yielding about 2 cups)

lemon thyme (or substitute regular thyme)

Lemon juice

Sea Salt

½ teaspoon ground Black Pepper

Coriander

almonds,

avocado,

Thinly slice the tender white part of the leek in half circles. Add 3 tablespoons of the olive oil to a cold sauté pan. Turn burner on to medium and add the leeks. Sauté until wilted and just starting to turn golden on the edges, about 6 minutes. Add a pinch of salt to the leeks and set aside to cool.

Core and shave the fennel bulb with a mandolin, peeler, or sharp knife, into very thin slices. Slice the asparagus diagonally at similar thickness to the fennel, discarding tough ends.

In a large bowl, add lemon thyme, lemon juice, salt, pepper, coriander and whisk in remaining olive oil. Add the sautéed leeks, sliced asparagus and fennel. Toss to thoroughly incorporate dressing.

Add avocado slices and toasted almonds to serve.

Merci pour cette belle recette! Je l'ai essayé et toute la famille a beaucoup aimé. J'Ai ajouté du bacon croustillant. C'était parfait!

Made this and loved it - thank you! This is going on the mother’s day brunch menu :)

We love this recipe and found that verjus substitutes perfectly for the lemon juice for anyone (like my husband) who has a citrus allergy.

Loved this salad as did everyone who I shared it with. It's crunchy, interesting, flavorful and healthy. I'll make this one again and again. I have shared this recipe with everyone that I served it too.

Love this salad!! Didnt change anything in the recipe.

I have made this several times. Especially when Asparagus first started this spring. An excellent potluck dish!

This was sooooo good! My daughter, who could be a fennel addict, chose this for me to make, we loved it. It will be a regular on our Lent menu over the next forty days, and then beyond.

Oh my. This is pure goodness -- and looks beautiful as well!!
I LOVE fennel. Made the beet orange fennel salad last week (another fave) and had an extra fennel bulb, so I made this salad tonight.
I substituted a red onion for the leek because i didn't have a leek. No other changes. I served it on tender greens mixed with some cooked quinoa I had in the fridge, avocado, radishes and cucumbers. I did not want the meal to end :)

Thank you Sylvia.

I made this today with farm fresh asparagus. Was so delectably satisfying! Tastes like spring.
I could drink the dressing....
Thanks Tonia and Sylvia!

I wanted a lite dinner and made this tonight. The fresh and straight forward taste makes this something special. I added hearts of palm which complemented the avocado. This is definitely a keeper - next time I’d like to add some mint as well.

So fresh and delicious. I followed the recipe as written except used less oil. The flavors in the dressing were a perfect compliment to the raw veggies. This is so healthy and delicious. Thank you for another winner!

I’ve made this several times already this summer and it’s on the menu again tonight🙂 It’s so fresh!

This was absolutely delicious! Will definitely be on repeat for my family!

This fennel salad recipe is easy to make with cucumber, dill, and a tangy lemon dressing. A simple, refreshing vegan side dish!

Best Fennel Salad Recipe

fennel bulbs- trimmed and cored (about 1 lb)

cucumbers,

dill

red onion, thinly sliced

extra virgin olive oil

lemon zest

lemon juice, more to taste (***Meyer lemon

salt

pepper,

sugar

Trim the ends off the fennel bulbs, cut in half legnthwise and remove their core with a sharp knife.

Using a mandolin, shave the fennel bulb paper thin and place it in a large bowl. Use a cut-resistant glove to protect your fingers. (Or finely slice as thin as possible with a chef’s knife). You should have about 6 cups packed.

Shave the cucumber and onion with the mandolin and place in the bowl.

Add the chopped dill and zest the lemon over the salad.

Toss in the olive oil, lemon juice, salt, pepper, and sweetener and toss well.

Taste and adjust salt, honey, and lemon to taste, adding more as needed.

Very bright and refreshing. Love that it is so different from other salads, not boring. I added radishes instead of onions, because that is what I got from my CSA this week. Gave it a kick.

One of the best I have had. So very delish. Kept wanting more but to full. THANK YOU

The fennel salad is aabsolutely delish. The fresh crisp light flavor is a delight. I saved some for the end of my meal as a palte cleanser.
Great site for fabulous recipes.
Recomend to everyone. ?

I just found this recipe because I was looking for something to do with leftover dill and fennel. This salad is absolutely delicious!

I made this recipe (no onion) and it was a big hit. So fresh and the fennel is very refreshing.

This was delicious. I made it without any additional sweetness and decided to use a squeeze of agave as another reviewer had added some honey. It would have been good with or without the added sweetness. I did shave some Parmesan on the top. When I was looking for fennel salads, several did have Parmesan so I did add, but just like the added sweetness, it was delicious without!!!

Keep up the excellent works guys I've incorporated you guys

This may be one of my favorite recipes ever! So cool, light and refreshing, and a breeze to make with my food processor using the thin slicing disk.
Last minute I decided to add some thinly sliced naval oranges I had which added a great burst of color and perfect flavor with the fennel. If I had had toasted sliced almonds those would be good also, but didn’t have any and didn’t miss them! ☺️
Another plus is the leftovers the next day were even better after sitting.
I sincerely thank you so much for this recipe! I love to cook and seldom repeat recipes, however I can guarantee this will be made often!!!!

Such a refreshing and lovely dish! It was incredibly easy to make using a mandolin. It paired so well with your grilled salmon recipe.

This halibut burger recipe pairs flaky roasted halibut with crisp fennel slaw, homemade citrus mayonnaise and blueberry relish.

Halibut Burger with Fennel Slaw and Blueberry Relish

eggs

lemons

tsp sea salt

tsp black pepper

canola oil

shallot (finely chopped)

blueberries (divided)

tbsp honey

tbsp balsamic vinegar

lemon juice

sea salt

black pepper

halibut

unsalted butter

thyme (leaves only)

lemon (halved)

hamburger buns (to serve)

butter lettuce leaves (to serve)

dill pickles (halved lengthwise, to serve)

In a food processor or blender (or use an immersion blender), combine the eggs, egg yolks, mustard, lime zest and juice, lemon zest and juice, and salt and pepper. With the machine running, slowly add the oil in a thin steady stream until the mixture is emulsified and thickened and all the oil has been incorporated. Taste and adjust seasoning with more salt, pepper, or citrus if desired. Can be made ahead of time; will keep refrigerated for up to 3 days.

Citrus Mayo

Heat the oil in a skillet over medium heat. Add the shallots and sauté for 5 minutes or until tender and translucent. Add 1 cup of the blueberries, honey, vinegar, and salt and pepper. Cook for 12 minutes or until saucy and the blueberries have broken down. Remove the pan from the heat and stir in the remaining 1/2 cup of blueberries. Set aside to cool. (Relish can be made and refrigerated several days ahead.)

Blueberry Relish

Using a mandoline or sharp knife, slice the fennel paper thin. Toss in a bowl with the oil and lemon juice. Season with salt and pepper to taste.

Fennel Slaw

Use paper towels to pat the fish dry, and season with salt and pepper. Heat the oil in a heavy-bottomed, ovenproof skillet over medium-high heat until almost smoking.

Carefully lay the fish in the pan. (If necessary, cook the fish in batches to prevent overcrowding, which will keep the fish from caramelizing properly.) Reduce the heat to medium and cook for 2 to 3 minutes; a golden crust will have formed on the flesh.

Flip the fillets over and add the butter, the thyme, and a squeeze of lemon over each fish. Cook, basting with the buttery juices, for another 3 to 4 minutes or until browned and almost opaque all the way through. Transfer to a plate.
