Deliciously moist and decadent fig bread, with all the flavors of Fall!

Favorite Fig Bread (Fig Cake) Recipe

flour ((plus extra for dusting))

sugar

tsp baking soda

tsp baking powder

½ tsp ground cloves

nutmeg

cardamom

cinnamon

salt

vegetable oil

milk

eggs

tsp vanilla extract

figs

walnuts ((or pecans))

tbsp softened butter ((for greasing the pan/pans))

Preheat oven

mix dry ingredients

Mix dry ingredients (flour, sugar, baking soda, baking powder, ground cloves, ground nutmeg, cardamom, cinnamon, and sea salt) in a large bowl until combined.

crush walnuts

Place the walnuts in a ziplock bag and pound with a mallet until crushed. Another option is to use a small food processor. Fold the walnuts in with the dry ingredients.

 In a medium bowl, whisk the wet ingredients (oil, milk, eggs, and vanilla and chopped figs).

Fold wet ingredients into the flour mixture and stir just until incorporated. Pour batter into a greased and floured bundt pan, or two loaf pans.

Bake fig bread

Bake in the oven, on the middle rack, for approximately one hour for a bundt pan. If using loaf pans, bake for approximately 45 minutes or until golden brown.

Cool before slicing

Cool the fig bread for approximately 10 minutes before removing it from the pan. Cool on wire racks completely before slicing it.

¼ tsp (6.75 milliliters) ground cardamom

(50 grams) crystalized ginger, diced

½ cup (60 grams) all-purpose flour

tbsp (25 grams) white sugar

tbsp (23 grams) brown sugar

tbsp (75 milliliters) melted butter

(75 grams) chopped walnuts

Preheat oven to 350F (175C)

BETH'S FABULOUS FIG CAKE
Serves 8-10

INGREDIENTS: 
3 eggs
1 cup (240ml) of vegetable oil
½ cup (100g) sugar
½ cup(90g) light brown sugar
½ cup (120ml) water
1 ½ tsp (7.5ml) vanilla extract
2 cups (240g) all-purpose flour
2 tsp (10ml) baking powder
¾ tsp (3.75ml) salt
1 ¼ tsp (6.75ml) ground cardamom
1/3 cup (50g) crystalized ginger, diced
5-10 fresh figs (depending on size) sliced vertically (or sliced pears or sliced apples would be great too!)


Crumble:
½ cup (60g) all-purpose flour
½ tsp (2.5ml) baking powder
pinch of salt
2 tbsp (25g) white sugar
2 tbsp (23g) brown sugar
¼ tsp (1.25ml) cinnamon
5 tbsp (75ml) melted butter
1/2 cup (75g) chopped walnuts



METHOD:
Preheat oven to 350F (175C)

Spray a 9” cheesecake pan with baking spray and set aside.

In a large bowl combine eggs, oil, sugars, water and vanilla extract.  Whisk to combine and set aside.

In a small bowl combine flour, baking powder, salt and cardamom. Whisk to combine.

Add the dry ingredients to the wet ingredients and whisk slowly to combine.  Stir in the candied ginger. 

Pour cake batter into pan, arrange figs cut side up, in a circle around the cake. Set aside.

NOTE: This cake reheats beautifully!  Just wrap tightly in foil and refrigerate, then place in oven (covered in the foil) and bake at 350F for 20 mins or until warmed through.

Warm Spiced Fig Cake with Orange Zest is a delightful treat that combines sweet figs and zesty orange, creating a perfect harmony of flavors.

Warm Spiced Fig Cake with Orange Zest

(150 grams) dried figs, chopped

(180 milliliters) boiling water

(115 grams) unsalted butter, softened

(150 grams) brown sugar

(160 grams) all-purpose flour

tsp salt

tsp cinnamon

(80 milliliters) orange juice (freshly squeezed)

(65 grams) granulated sugar

Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.

In a separate bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.

In a bowl, combine chopped dried figs with baking soda and pour boiling water over them. Let soak for about 10 minutes.

Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract and orange zest. Stir in the fig mixture.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Pour the batter into the prepared cake pan and bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Poke holes in the top and pour warm orange syrup over it.
