Mary Berry’s mother Marjorie cooked this every year on Christmas Eve. Mary still does it today with happy memories of childhood. Make it up to 36 hours ahead before cooking and keep in the fridge.

Use a combination of both smoked and raw unsmoked fish for optimum flavour and texture. Fish Pie

/ 750 ml milk (, low fat

brown onion (, quartered (Note 3))

unsalted butter

garlic (, minced)

onion (, finely chopped)

carrot (, finely chopped)

celery stick (, finely chopped)

tbsp fresh tarragon (, finely chopped (optional))

tbsp parsley (, finely chopped)

Salt and pepper

/ 125 ml milk, any fat %

eggs (, quartered (optional) (Note 6))

g / 2 tbsp butter (, melted)

parsley (, for garnish (optional))

Push a clove into the skin of each onion. Place in a pot or large skillet, add milk, turn stove onto medium high heat.

When milk is barely simmering, add fish - don't worry if it's not entirely covered, it can be turned / moved around.

Poach fish for 7 minutes, then use a slotted spoon to transfer fish straight into a medium baking dish (Note 8).

Flake into chunks using forks. Remove bones if you see any.

Use slotted spoon to remove onion and cloves from milk, discard. RESERVE milk.

Preheat oven to 180C/350F. Boil water for potatoes.

Fish:

Melt butter in a large, deep skillet or pot over medium high heat. Add onion and garlic, cook for 1 minute. Then add celery and carrot, cook for 5 minutes until carrot is soft.

Turn heat down to medium low. Add flour, mix in - it will look gluey.

Add half the milk and quickly start mixing. Once incorporated, the mixture will thicken quickly. Add remaining milk and stir. (Video helpful here)

Turn heat up to medium and keep stirring until the mixture thickens to the consistency of honey - about 3 minutes. (Note 7)

Take it off the heat, stir through tarragon and parsley. Adjust salt and pepper to taste.

Sauce:

Scatter top of flaked fish with peas, then pour over the Sauce. GENTLY stir through (don't want fish to turn into mush!).*

Smooth top, then nestle egg in all over the pie.

Pie:

Bring a large pot of water to the boil.&nbsp;Add potatoes and cook for 15 minutes or until soft. (Do this while making the Sauce).

Drain potato, add butter, milk, salt and pepper. Mash until creamy - add more milk if required.

Immediately dollop then spread onto pie (cold mash = hard to spread).

Use fork to draw squiggles on surface (rough surface = better golden bits).

Mashed Potato:

Drizzle surface with melted butter, sprinkle with parmesan.

Bake for 35 minutes or until top is deep golden.

Stand for 5 minutes before serving, garnished with parsley if desired. See notes for reheating and make ahead.

Salmon Shepherd’s Pie

(1 kg) potatoes,

onion, chopped

2 bell peppers,

tbsp ml) olive oil

cup ml) water

tbsp ml) tomato paste

tsp ml) harissa

lb g) skinless salmon fillet, cubed

cup g) frozen corn, thawed

(19 oz/540 ml) cream corn

tbsp butter, thinly sliced

With the rack in the middle position, preheat the oven to 425°F (220°C).

In a large pot, cover the potatoes with cold water. Season with salt. Bring to a boil and simmer for 20 minutes or until the potatoes are tender. Set aside in the cooking water. 

Meanwhile, in a large skillet over medium-high heat, brown the onion and bell peppers in the oil. Add the water, tomato paste and harissa. Cook for 1 minute. Add the salmon and cook for 4 minutes or until medium-rare. Break the fish into large flakes and season with salt and pepper. Transfer the mixture to a 10-cup (2.5 litre), 8 x 11-inch (20 x 28 cm) baking dish. Layer with the thawed corn and cream corn.

Drain the potatoes and squeeze through a potato ricer directly over the corn in an even layer (see note). Dot the surface with the butter slices. 


Bake for 25 minutes or until the potatoes begin to brown. If desired, finish browning under the broiler. Let rest for 10 minutes before serving. 

Very good recipe.  We enjoyed this yesterday evening with broccoli,  and a light salad and glass of red wine.I might use a little more harissa paste next time.

Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don&rsquo;t worry if the potatoes break up a little.

Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.

Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it&rsquo;s grilling, steam or boil the broccoli to serve with the bake.

Double the ingredients in this easy fish pie if you need to feed four, or quadruple for eight. This comforting dinner is perfect for midweek, and adaptable for any situation

Easy-to-scale cheesy fish pie with kale

Maris Piper potatoes

tbsp flour

whole milk

Dijon mustard

Tip the potatoes into a pan, cover with hot water from the kettle and add a pinch of salt. Simmer for 15-20 mins until tender, then drain and leave to steam-dry.

Meanwhile, warm the butter in a heavy-based pan over a low heat. Add the flour and stir until you have a paste. Gradually whisk in 200ml milk until you have a thick white sauce. Simmer for 3-4 mins, stirring. Season, then stir in the mustard and half the cheese, and continue to stir until the cheese has melted. Fold in the fish, peas and kale, and cook for 8 mins more, or until the kale wilts, the fish is just cooked and the prawns are starting to turn pink.

Heat the grill to medium-high. Mash the potatoes with the spring onion and 1 tbsp milk. Fold in the remaining cheese and season well.

Tip the filling into a heatproof dish and spoon the cheesy mash on top, swirling it with a fork until the filling is completely covered. Sprinkle over the parmesan and grill for 10-15 mins until the pie is golden and bubbling. Serve with a green salad, if you like. Uncooked pie, well covered in the dish, will keep in the freezer for up to three months.

The kids will love this flavourful Fisherman's Pie with creamy mash and cheese topping. Serve with a salad and you have an easy midweek meal.

Thermomix recipe: Sweet Potato Fisherman's Pie

Italian parsley

650-700 Grams sweet potatoes,

baby spinach

Grams Butter

Flakes

black pepper

Grams milk

Grams onion

Grams Extra Virgin Olive Oil (EVOO)

Grams carrot, diced

Grams mascarpone

Grams lemon juice, fresh

Tablespoon Ancient Roman Mustard

Teaspoon nutmeg

Grams frozen shelled peas

Place parsley into Thermomix bowl and chop **3 sec/speed 6**. Remove from bowl and set aside.

Place cheese into Thermomix bowl and mill **3 sec/speed 7**. Remove from bowl and set aside.

Place sweet potatoes into simmering basket, insert into Thermomix bowl and pour 1 Litre water over. Place spinach into steamer dish and set into position. Cook **20 min/Varoma/speed 4**. Remove steamer, set aside.

Remove and drain sweet potatoes, return them to Thermomix bowl and add butter, seasoning and milk. Mash **10 sec/speed 6**. Set aside.

Place onion and EVOO into clean, dry Thermomix bowl and chop **4 sec/speed 4**. Add carrot and saute **4 min/Varoma/speed 1**.

Add mascarpone, lemon juice, mustard, nutmeg, and combine **5 sec/Reverse/speed soft**. Fold in tuna and peas with a spatula.

Preheat oven to 200ºC. Butter a 20cm deep pie dish. Pour tuna mixture into dish, top with wilted spinach, finish with mashed potato and sprinkle with parsley and cheese. Bake for 20 minutes until well browned. Serve hot.

Pour the milk into a large pan and add the flour and butter. Set over a medium heat and whisk continuously until you have a smooth, thick white sauce. Remove from the heat, add the mustard, most of the cheese (save a handful for the top), peas and parsley.

Meanwhile, boil the pasta in a large pan of water following pack instructions until just cooked. Drain.

Heat the oven to 200C/180C fan/gas 6. Tip the pasta into the sauce and add half the fish, stir everything together then tip into a large baking dish. Top with the rest of the fish, pushing it into the pasta a little, then scatter with the remaining cheese. Bake for 30 mins until golden, then serve with salad, if you like. Can be chilled and eaten within three days or frozen for up to a month. Defrost in the fridge, then reheat in a microwave or oven until piping hot.
