Separate the egg whites and the egg yolks in two separate bowls. You’ll only need 3 yolks, so discard the other 2 or reserve for another use.

Whisk the egg yolks until they become homogenous and pale in color. Set aside.

Transfer the egg whites to a large bowl and whisk until they triple in size and become white with medium peaks.

Carefully fold the egg yolks into the egg whites until fully incorporated.

Pour the egg mixture into a medium nonstick frying pan with a lid. Cook over medium-low heat until bottom of omelet has set, about 5 minutes.

Lift up each side of the omelette and drop a tablespoon of butter underneath.

Cover the pan and cook for another 5 minutes, or until the top of the omelet has set.

Remove the lid and season the omelet with salt and pepper. Remove the pan from the heat.

Fold the omelette onto a plate and sprinkle with chives.

Beat the eggs with the salt until the whites and the yolks are completely combined, with no spots of egg white remaining.

Over medium-low heat, melt the butter in a skillet, then pour in the eggs.

Using a rubber spatula, constantly scrape the bottom of the pan while shaking the pan in a circular motion to ensure that the eggs cook slowly, forming only small curds, about 1-2 minutes.

Once you start to see the bottom of the pan for more than a second after scraping, push the eggs into a round circular shape. Cook until the edges solidify, then tilt the pan and carefully roll the omelette on itself.

Invert onto a plate, then sprinkle with chives.

In a large mixing bowl, add the eggs, sugar, salt, sake, mirin, and broth, and mix well.

Heat a tamagoyaki pan at over medium heat. Brush a thin layer of oil on the pan.

Pour ⅙ of egg mixture into pan and quickly swirl to cover the entire pan. When the egg is set, gently roll the egg.

With the rolled egg still in the pan, pour in ⅙ of the egg mixture. Lift up the rolled egg and let the mixture to flow under it. When the egg is set, roll the omelette toward you.

Repeat, adding ⅙ of the mixture at a time, continuing to roll the egg into a large roll.

Cut the tamagoyaki in half and pierce with a skewer.

Serve with a shiso leaf, grated radish, and soy sauce.

Crack your eggs into a bowl and beat them up with a fork. Finely chop your chives and beat them through the eggs.

Melt ½ the butter in a non-stick frying pan set over a medium heat. Once the butter is bubbling and foaming, pour in the eggs and use a spatula to keep the eggs moving around the pan until just starting to solidify in places, then stop touching them and leave them alone until almost cooked through.

Season generously with sea salt, then use your spatula to roll the omelette up and flip it out onto a plate. Brush with the remaining butter and sprinkle over some extra sea salt.

In a medium bowl, using a fork, whisk the eggs with the salt until they’re thoroughly yum combined.

In an 8-inch nonstick skillet over medium heat, melt 2 tablespoons of butter. Slowly pour in the eggs. Cook, undisturbed, until the bottom is just set, about 30 seconds.

Reduce the heat to low. Use a heatproof silicone spatula to constantly push the eggs around in the pan, scrambling them until soft, creamy curds form, but they are not completely set, about 1 to 2 minutes.

Gently spread the eggs into an even layer in the pan, pushing any runny parts towards the edges of the pan. Once the edges are cooked, about 1 more minute. Remove the skillet from the heat.

Tilt the skillet away from you at a 45 degree angle. Use the spatula to carefully lift the edge closest to you and roll the eggs slowly over themselves to create a smooth cylindrical shape. Transfer to a plate and spread the remaining ½ tablespoon of butter on top of the omelette.

Use the spatula to gently turn the finished omelette out of the pan onto a plate, seam side down.

Sprinkle fresh herbs over the top and serve immediately.

This was so delicious! Still working on my presentation but texture was phenomenal. I'll never say no to all that butter!
