Homemade Whipped Cream

heavy whipping cream (COLD) ((2 cups))

sugar

tsp pure vanilla extract

Put the bowl of a standing mixer or a large mixing bowl (glass or metal preferred) into the refrigerator to chill for at least 15-30 minutes (or longer).

Add whipping cream, powdered sugar and vanilla extract to the chilled bowl of a standing mixer (or chilled mixing bowl).

Use the wire whisk attachment to a standing mixer, or a hand-held mixer, and beat the ingredients together, starting on low speed and increasing to high slowly as it begins to firm up.

Beat for 60-90 seconds until stiff peaks form. Stopping once halfway through to scrape down the sides of the bowl.

Transfer mixture to a piping bag to pipe onto your favorite dessert or into hot chocolate. Or put in a serving dish to serve.

Salted Caramel Chocolate Cheesecake Bars

Oreo Cookies, crushed

(1/4 cup) Unsalted Butter, melted

-8 oz packages cream cheese, softened to room temp.

cocoa powder

Grams (1/2 cup) Granulated Sugar

Large Eggs, at room temp.

Tablespoons Pure Vanilla Extract

(1/2 cup) Sweetened Condensed Milk

(2 cups) Heavy Whipping Cream

(1/2 cup) salted caramel

Preheat oven to 350F/180C and line a 9X9 pan with foil and grease it heavily, including up the sides.

In a food processor crush the Oreo cookies into fine crumbs. In a small bowl combine the crushed Oreos and melted butter. Once combined press into prepared pan.

Crust

In the bowl of an electric mixer beat the cream cheese for two minutes.

Add the cocoa powder and granulated sugar and mix for another 2 minutes, make sure to scrape sides of the bowl so all is incorporated evenly.

Add in eggs, one at a time and then vanilla and sweetened condensed milk.

Pour on top of prepared crust and bake for 33-38 minutes or until center stops giggling. Set on wire rack and let cool for 30 minutes, then place in the fridge to chill for 2 hours or do 40 minutes in fridge and 30 in the freezer.

Cheesecake

Once chilled, whip heavy cream and powdered sugar together until stiff peaks form.

Drizzle 1/4 cup salted caramel on top of cheesecake layer, then place whipped cream and drizzle more salted caramel. Store in fridge.

Prepare Ingredients

Prepare all ingredients for making extra quick and easy keto cheesecake.

Prepare and whisk your batter

Line your baking dish

Prepare the baking dish covered from inside and bottom with parchment paper

Prepare your cheesecake for baking.

Place the mixture in and cover tightly with aluminium foil together with dry tissue underneath. Please read the post above with full  instructions. Make sure, the top of the baking dish is properly tightly closed

Prepare the aluminium sling for easy handling as per video

Prepare Instant Pot

Place it into the Instant Pot filled with 2 cups or water and switch the Pressure Cooker on High for 20 minutes

Store

Once the Cheesecake is baked, take it out of the Instant Pot, let it cool a bit and replace the paper towel with dry one to take more moisture out. Close it again with aluminium foil and place it into the fridge for 4-8 hours, best overnight

Prepare Sugar Free Meringue

Prepare a double boiler and bring water to boil

Reduce the temperature, so boiling is not extreme...
