Air Fryer Fried Shrimp

all purpose flour

tsp black pepper (divided)

tsp kosher salt (divided)

tsp paprika (divided)

panko breadcrumbs

eggs (beaten)

lb. peeled and deveined raw shrimp ((I normally use 21/25))

canola oil cooking spray (or any nonstick spray)

store-bought remoulade sauce

Get out 3 shallow bowls.  To the first one, add flour, 1 tsp black pepper, 1 tsp salt, and 1/2 tsp paprika.  Stir with a fork until combined.

In the second bowl, add 2 eggs and whisk.  In the third bowl, add the panko and the remaining 1 tsp black pepper, 1 tsp salt and 1/2 tsp paprika.  Stir with a fork to combine.

Pat shrimp dry with a paper towel, then coat the shrimp, one at a time, in the flour mixture, then in the eggs, then in the panko mixture.  Set aside on a plate and repeat with remaining shrimp.

Preheat air fryer to 390°F.  Add breaded shrimp in a single layer to the bottom of the air fryer basket.  Lightly spray with a canola oil cooking spray, then cook for 5 minutes.

Shake the basket, lightly spray with oil again, and cook another 5 minutes, or until shrimp is golden brown.

Serve hot, with any dipping sauces you like.

vegetable/canola oil or peanut oil, (for frying)

shrimp,

cornstarch

cayenne powder

garlic powder

salt

mayonnaise

sweet chili sauce

sriracha sauce

lime juice, (or to taste)

chopped fresh parsley, (for garnish, optional)

sesame seeds, (for garnish, optional)

green onions, (for garnish, optional)

In a large frying pan or deep skillet, add the oil, coming up about 2 inches on the sides. Heat oil to 375˚F.

In the meantime, place raw shrimp in kefir or buttermilk to coat.

In a separate bowl or plate, combine cornstarch, cayenne, garlic powder, salt, and pepper.

Remove shrimp from liquid; shake off any excess, and coat shrimp in cornstarch mixture.

Add coated shrimp to the hot oil and fry for about 1 to 2 minutes per side, or until golden brown.

Remove shrimp to a paper towel lined plate.

In a mixing bowl stir together the mayonnaise, sweet chili sauce, sriracha, and lime juice.

Transfer shrimp to a serving bowl.

Garnish with parsley and sesame seeds.

Serve with the sauce. You can also drizzle the sauce over the shrimp.

Heat 1/2-inch of oil in a large, heavy-bottomed skillet over medium heat. Line a large plate with a paper towel, set aside.

Add shrimp to skillet making sure not to overcrowd the pan. Fry for 3 minutes, until crispy and golden brown. Drain on prepared plate. Continue until all shrimp is fried.&nbsp;

In a small bowl, rinse the shrimp and pat dry.

Season the shrimp with the shrimp seasoning.

In a small lidded container, prepare the dry mixture, cover and shake to combine.

Add the shrimp to the dry mixture, cover the container and shake to coat the shrimp.

In another small bowl, prepare the egg mixture and whisk together. If you choose to omit the milk, whisk the egg and set aside.

Add the shrimp to the wet (egg) mixture, then stir with a large fork until the shrimp is fully coated.

Return the shrimp to the dry mix container, cover and shake once more.

Heat the cooking oil in a large wide frying pan or wok. To know when the oil is ready, sprinkle a pinch of flour in the oil. When bubbles form around the flour, the oil is at the right temperature.

Add the shrimp to the oil one by one, lightly shaking off the excess flour before.

When you have added all the shrimp to the pot, reduce heat to medium.

Turn each shrimp every 2 minutes until cooked and golden brown all over.

In a shallow bowl, mix flour, salt, pepper, and garlic powder. Set aside.

Continue coating shrimp, adding panko to the plate as needed. You may need to use all 4 cups of panko, depending on the size of shrimp and thickness of egg wash left on shrimp.

Once all shrimp have been coated and placed on the plate, place plate in the refrigerator for at least 30 minutes and up to 5 hours.

Heat oil in a medium-size pan over medium-high heat until oil sizzles when a few panko crumbs are tossed in the pan.

Fry shrimp in hot oil until shrimp are golden brown. Be careful not to overcook.

Serve immediately with cocktail sauce and lemons.
