For this recipe you will need a 12-hole muffin tray.

This healthy apple crumble packs a bundle of added goodness from the berries, oats, nuts and spices, and is very low in fat. It’s also dairy-free and suitable for vegans – as long as you can resist serving it with custard.

Each serving provides 287 kcal, 5g protein, 37g carbohydrates (of which 27g sugars), 12.5g fat (of which 3g saturates), 4g fibre and 0.1g salt.

These delicious raspberry and white chocolate muffins couldn’t be simpler to make and use frozen raspberries for ease. For really light, well-risen muffins, it’s important not to over-mix. Don't worry about any tiny smears of flour in the batter.

Mix up this high-protein fruit smoothie, with oats and almonds, for a fibre-filled start to the day.

Equipment and preparation: For this recipe you will need a blender that can crush ice. If your blender cannot crush ice you will need to defrost the berries.

Blackberry and apple crumble smoothie

Smoothies are not as sweet as milkshakes and are a little healthier too.  If you like yours sweeter, just add more icing sugar. To enjoy this smoothie all year round try it with frozen berries.

Vanilla Yogurt and Berry Trifle

(12-ounce) package frozen raspberries, thawed,

confectioners' sugar

In a medium saucepan over medium heat, whisk together raspberry and strawberry juices with 2/3 cup sugar and cornstarch. Boil until thickened, 1 to 2 minutes. Transfer to a medium bowl and refrigerate until cool, about 20 minutes.

Meanwhile, in a medium bowl, whip heavy cream to stiff peaks; set aside. In a large bowl, combine yogurt and remaining 2/3 cup sugar. Fold in whipped cream.

Break ladyfingers in half. Place half of them in a 2-quart glass bowl or trifle dish. Drizzle cookies with 1 tablespoon liqueur, if using, and dollop with one-third of yogurt mixture. Spoon half of berries over yogurt mixture, then drizzle 3 to 4 tablespoons thickened juices. Layer another one-third of yogurt mixture over berries, followed by a layer of remaining ladyfingers. Drizzle with remaining 1 tablespoon liqueur and dollop with remaining yogurt mixture. Top with remaining berries and 3 to 4 more tablespoons thickened juice. Refrigerate until chilled, about 2 hours, before serving.

Line a muffin tin with paper liners. Press 1-2 tablespoons of batter into the bottom of each muffin tin. Flatten with the back of a wet spoon. Pour a spoonful of cheesecake mixture over the top. Cover with another 1-2 tablespoons of muffin batter. Sprinkle with streusel.

Bake for 5 minutes at 425 degrees, then turn the oven temperature down to 350 and bake for another 15-18 minutes. Voila! Look at those beauties! You did it!

Made these today and they are AMAZING! I did add a bit more salt but I often do that in baked goods to increase the sweet/salty contrast. I got 12 muffins and the baking time was spot-on for me. The perfect amount of streusel. Thank you for the excellent recipe!

These sound and look amazing! There is nothing like old faithful comfort food!

I loooove these so much. I made them last night on a whim and only had sour cream and fresh blueberries in the fridge instead of yogurt and frozen berries. I added too much batter at the bottom (1.5tbsp), so next time I'm only doing a leveled 1tbsp (this will allow the cream cheese to actually sit at the middle). I also added an extra tbsp of cream cheese to the filling. Be sure to use all the crumbles - I thought I overdid it and omitted half a cup, but noticed I could've added much more after the muffins expanded. Don't overbake!! You'll lose the filling part of the muffin and be stuck with a slight cream cheese taste. These were gone the next morning in the matter of 2 hours!!!

Oh. Em. Gee.  I would give these seven stars. Like something from a high-end bakery and not hard at all to make.  I had all ingredients on hand except cream cheese &amp; froz fruit.  All future diets are now forever annihilated.

I had what I thought were a couple epic fails with this recipe (which I’ll get into in a sec in case it helps anyone else out) but in the end, these muffins still turned out incredibly delicious, and the fails can probably be chalked up to me not being a very experienced baker, so hence the 5 stars!

First off, I subbed GF flour. When making the streusel, the mixture immediately started turning into more of a paste then a crumble. I tried adding more flour but couldn’t bring it back, so I spread the mixture thinly on wax paper and popped in the freezer while I moved onto step two: the cheesecake filling. This step was actually problem free, so I optimistically moved onto the batter. After creaming the butter and sugar (or what I thought was creaming them), I added the eggs and yogurt. The whole mix immediately curdled! I decided not to panic and slowly added some gf flour to see if it would come back together. It appeared to be working so I finished up the batter steps. I took the “streusel” out of the freezer and broke it up into little bits to sprinkle on top.  

In the end, I’d say I’d overfilled the cups and the streusel did not look very pretty, but these are so incredibly delicious, I’m glad I persevered! I’ll definitely try again for a better aesthetic result next time!

This recipe is amazing! The cheesecake and streusel take these to the next level. I also failed to follow directions not once but twice and they still turned out great. 

I had just received my online grocery order when I first saw this recipe and didn’t have cream cheese on hand. So I had to be patient until the next grocery order and it was totally worth it.

Berry Crumble

c. oats

all-purpose flour

c. chopped pecans

c. dark-brown sugar

c. granulated sugar, divided

unsalted butter,

c. raspberries and/or blackberries

c. frozen blueberries

Preheat oven to 400°F. In a large bowl, toss together oats, 1/2 cup flour, pecans, brown sugar, 1/2 cup granulated sugar, cinnamon, and zest of 1 orange. Add butter and gently press with fingers to incorporate into mixture; set aside.

Place berries in a 12-inch skillet. Sprinkle with remaining 1/2 cup granulated sugar, zest of 1 orange, and 2 tablespoons flour and gently toss. Scatter oat mixture over berries. Transfer to oven and bake until fruit is bubbly and topping is golden, about 35 minutes.

Healthy blueberry bars sweetened with dates, a bit of maple syrup, and delicious frozen blueberries are an easy, gluten free, real food recipe that will become your go-to for snacks and breakfasts.

Healthy Blueberry Bars

frozen blueberries, (thawed slightly)

nuts, (walnuts, pecans, almonds, cashews)

¾ cup rolled oats, (divided)

almond flour

dates

butter (or coconut oil)

maple syrup (or honey)

Measure the frozen blueberries into a bowl and let them sit on the counter while proceeding with the recipe.

Heat oven to 350 degrees and line an 8x8-inch baking pan with parchment, leaving extra on 2 sides to act as handles to remove bars (alternately, you can grease the pan and cut the bars in the pan).

Chop nuts for the topping: add them to the bowl of a food processor and whir until fine. Scrape into a small bowl for later.

Into the food processor, measure 1 cup of the rolled oats and whir until fine to make oat flour, about 15 seconds. To the oat flour add the almond flour and salt and pulse a couple times to mix.

Add the dates to the mixture in the processor and pulse until roughly chopped. Add butter or oil, maple syrup, vanilla, and egg. Process about 15 seconds until mixture starts to come together. Add remaining 3/4 cup of oats and pulse about 10 times to mix.

Toss the thawing blueberries into processor and pulse a few times. The mixture will turn purple in areas, but should still have some whole berries remaining.

Scrape the mixture into the prepared pan, pressing down to spread evenly. Sprinkle with the chopped nuts and press lightly down to help adhere to the bars.

Bake 20 to 25 minutes until just starting to brown around the edges. Place pan on a wired rack to cool completely before cutting (or set in the freezer for about an hour to hurry it along).

Cut the bars into 16 regular square bars or cut once down the middle and then the opposite way 6 times to create 12 longer bars.

Store in the fridge for 1 week and freeze for up to 3 months.

Heat on MED-HIGH until the mixture comes to a boil.

Reduce heat to MED-LOW and simmer, stirring occasionally, for 25-30 minutes or until mixture thickens slightly. Mash berries with a potato masher, if desired.

Remove from heat and let stand for 5 minutes.

Ladle into jars and let stand at room temperature until the jam cools completely.

Add lids and store the jam in the refrigerator for up to 10 days or in the freezer for up to one year.

Make a colourful berry smoothie bowl for breakfast. You could swap in mango, pineapple and kiwi and substitute coconut water for the oat milk for a tropical version

The lack of flour means that they are gluten-free, but because of cross-contamination where oats are made, you should look for porridge oats that say they are gluten-free on the packet, if this is crucial.
