Fry Bread batter is a four-ingredient bread that fries up crunchy and crispy on the outside while light, tasty, light, and tender on the inside.   For dessert, sprinkle with brown sugar and cinnamon straight out of the fryer, or better yet, dust with powdered sugar, drizzle with honey, or for a savory dish, top with taco meat and fixings for Fry Bread Tacos.

Native American Fry Bread Recipe

all purpose flour

baking powder

salt

water

vegetable oil

beef

taco seasoning

cheddar cheese

tomatoes

black olives

-2 sliced green onions

sour cream

lettuce (optional)

avocado (optional)

In a medium bowl, whisk flour, baking powder, and salt.  Slowly stir in warm water with a fork.  Mix just until the dough comes together. Use only as much water as you need for the dough to come together. Cover with wrap and let rest for 1 to 2 hours. Flour your hands and the working surface. Pull off a piece a little smaller than a golf ball. Roll into a ball, then pat it out to 1/8 to 1/4 inch thick.

In a heavy pan, heat 1-2 inches of oil to 375 degrees. Fry until the bread is golden brown and puffs up, about 2-3 minutes.  Flip halfway through to brown the other side. Remove to paper towels to drain.

In a large skillet over medium heat, brown ground beef.  Drain any excess grease.  Add taco seasoning and water; simmer for 5-10 minutes.  Spoon on top of fry bread and sprinkle with cheddar cheese, tomatoes, black olives, and green onions.  Top with sour cream and serve immediately.

We are taco lovers here too but have never had them with fry bread. I'm excited to try this for our next Taco Tuesday dinner, thanks!

Fry Bread

In the bowl of a stand mixer add the flour, baking powder, and salt whisk by hand to combine.

Pour half the water into the bowl and using a dough hook, mix the dough on medium speed, gradually add more of the water until all the water has been added.

Once everything has come together and the dough is smooth, remove it from the mixing bowl and place in a lightly oiled bowl. Cover and let the dough rest 45 minutes to an hour.

When the dough has rested, divide it all into 2 inch rounds. Place the rounds on a floured surface and roll them all out about ⅛  to ¼ inch thick. You can either roll them with a rolling pin or flatten and stretch them using your hands.

Add the vegetable oil to a skillet and heat it up over medium high heat. When the oil is ready, begin frying the frybread one bread at a time by carefully placing them in the oil, frying for 2-3 minutes per side.

The fry bread should puff up and be a golden brown color. When they are done, remove them from the oil and place them on a paper towel lined plate to soak up any excess oil.

Allow them to rest a little before serving.

Fry Bread is a flatbread made with simple and accessible everyday ingredients. The dough is deep fried in oil and can be enjoyed plain or with various toppings—sweet or savory.

unsalted butter (melted)

all-purpose flour

baking powder (not baking soda!)

sugar

instant yeast (or active dry yeast)

milk (I use whole)

vegetable oil (plus more for frying)

Make Dough

Melt butter in the microwave. Let the butter cool back to room temperature (it’s important it’s not hot!). Microwave the milk until just warmed (see note 2) but not hot. Mix together melted butter and milk and set aside. In a large bowl, add the flour, sugar, baking powder, yeast, and salt. Whisk to combine. Add the milk mixture to the dry ingredients and stir with a wooden spoon until the dough comes together.

Let Dough Rest

Dough should be rough, shaggy, and fairly sticky, but not so sticky you can’t work with it. Lightly flour your hands and knead the dough just a few times to shape it into a ball, being careful not to overwork/overhandle the dough. In the same bowl used for mixing, drizzle a tablespoon of vegetable oil. Rub oil on the bottom of the bowl and slightly up the sides. Add the dough ball back into the bowl and turn it to coat in the oil. Cover the bowl with a damp kitchen towel. Let it rest for 15–20 minutes. We don’t need the dough to rise, just the gluten to relax!

Prepare for Frying

Add 1 inch of oil to a large, cast-iron pot and heat to 350°F. Divide the rested dough into 8 equal portions (cut the dough ball in half then half again to get 4 large triangle pieces. Cut each triangle into 2 pieces to get 8 equal triangles). Lightly flour your hands and work with 1 dough piece at a time (keep the rest covered). Holding the piece of dough with your hands, gently work the dough into a circle, pressing it out with your fingers. (Don’t roll it out with a rolling pin or flatten on the table.) The dough should make a thin 5- to 6-inch circle and doesn’t need to look pretty—it’s supposed to look rustic! The thinner the pieces, the better; keep working the dough outward, being careful to not rip it.

Gently drop only one piece of dough at a time into the fully heated oil. Fry about 30 seconds to 1 minute per side (if not using cast-iron pot, it will be longer)—fry pieces to a dark golden brown color, flipping the dough with 2 forks (or tongs) halfway through. Use a large slotted spoon (or tongs) to remove it onto a paper-towel-lined plate. Repeat to fry the remaining dough.

We have tried out a few different fry bread recipes and this is hands down our family’s favorite one. I do like to divide the dough into   10-12 pieces instead of 8. We like to eat them as a treat and it slows my kids down on how fast they eat them. If I were making them for Navajo Tacos dividing into 8 would be perfect.
