Greek Lemon-Garlic Roasted Potatoes

mini potatoes ((I used Yukon Gold))

olive oil

lemon

garlic (minced)

oregano

salt

black pepper

vegetable broth (or chicken broth)

Preheat the oven to 400 degrees F. Cut the potatoes in half and set in a 9X13 inch baking dish.

Drizzle the olive oil over the top. Then add the lemon zest, minced garlic, oregano, salt and pepper. Toss the potatoes to coat in seasoning.

Pour the lemon juice and vegetable broth in the side of the pan, being careful not to “washed” the seasoning off the potatoes. Roast for 30 minutes in the oven.

Flip the potatoes and place back in the oven for 25-30 minutes, until the potatoes are tender and the skin is starting to crisp.

Toss the potatoes in the glaze and serve. (Sprinkle with fresh parsley if desired.)

Garlic Roasted Potatoes are a delicious and versatile side dish that goes well with just about everything. Made with just five simple ingredients, these oven-roasted potatoes have crispy edges, fluffy centers, and bold garlic flavor.

Easy Roasted Potatoes

baby potatoes (halved)

tbsp extra virgin olive oil

rosemary (finely minced)

0.5 tsp freshly grated black pepper

lemon juice (approx. 2 tbsp) (optional)

parsley (to garnish)

Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. Set aside.

Add the potatoes to a medium-sized mixing bowl and drizzle with 2 tablespoons of good-quality olive oil. Add the&nbsp;minced garlic, rosemary, salt, and pepper. Mix well to combine.

Transfer the potatoes to the prepared baking sheet and bake for approximately 45 minutes to one hour, stirring occasionally, or until golden and crispy.

Remove from the oven, sprinkle with fresh chopped parsley, and drizzle with fresh lemon juice, if desired. Enjoy!

Preheat oven to 400°F.

In a small saucepan or frying pan add olive oil, minced garlic and chopped rosemary, cook over medium heat. Cook, constantly stirring, until the garlic just turns to a light golden color, about 2 to 3 minutes.

Immediately strain the oil through a fine-mesh metal strainer into a medium-sized bowl.

Reserve the fried garlic and rosemary to add to the potatoes after roasting.

Add quartered potatoes to the bowl with the garlic infused oil.

Add salt and pepper, tossing until coated.

Transfer to a large baking sheet, spreading out evenly in a single layer.

Roast for 20 minutes, then use a spatula to turn over potatoes carefully.

Roast another 20 minutes, toss potatoes.

Roast 10 to 20 additional minutes until potatoes are browned, crisp and tender.

Toss potatoes with reserved fried garlic and rosemary.

Sprinkle with chopped parsley, serve hot.

These crispy garlic roasted potatoes recipe has a light honey miso garlic drizzle caramelized at the very end to give it a layer of umaminess which makes them a super addictive snack or side dish.

Honey Miso Garlic Roasted Potatoes

lbs russet potatoes

white vinegar

salted butter

water

miso ((See notes about types of miso))

honey

garlic powder ((not garlic salt))

green onions ((finely chopped))

Scrub the potatoes clean and cut them into 1-1 1/2 inch chunks.

Place the cut potatoes in a bowl of clean water to wash out the excess starch

In a large pot, put the potatoes in the pot and cover it with COLD water, enough to cover the potatoes

Add in the white vinegar and salt and set the stove to medium high heat.

Boil it for 20-30 minutes, do not use a lid.

Once the potatoes have finished boiling, drain the water and let it sit for about 10 minutes to cool and dry out. (It cools faster if you can spread it out into 1 layer)

Preparing the Potatoes for Roasting

In a small bowl, add in the miso and hot water and mix until the miso has melted.

Add in the honey and mix well until the sauce is smooth.

Add in the garlic powder and mix.

Set aside for later

Making the Honey Miso Garlic Sauce

Melt the butter (I like to use the microwave and nuke it for 20 seconds, 10 seconds at a time so it doesn't splatter. If you don't have a microwave, use a small pot or pan)

Mix in the oil with the butter and set it aside.

Once 10 minutes is up and the potatoes are dried and somewhat tacky and sticky, place the potatoes in a roasting pan (use one large enough that you can spread the potatoes into a single layer) and mix the butter/oil mixture with the potatoes until they are all well coated.

Set the oven rack to the center of the oven.

Place the potatoes in the oven and broil it for 15-20 minutes. Flipping them every 5 minutes. (It is crucial that you watch the oven on this step, since things burn really quickly under broil.)

Once the potatoes are brown and crispy (If the potatoes are not crispy yet, broil for another 5 minutes), mix in the Honey Miso Garlic sauce and mix well until all the potatoes are well coated.

Put it back in the oven, and broil it for 2-3 minutes

Enjoy as a snack or a side dish! :)

Preheat the oven to 400°F and lightly grease a 9x13 baking dish.

Toss the potatoes in the baking dish with the olive oil, minced garlic, parmesan cheese and thyme. Season with salt and pepper.

Bake at 400°F until potatoes are golden brown and look crisp on the outside, about 45-55 minutes, tossing once at the halfway point.

Garnish with parsley if desired, and serve warm

Preheat

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Line a large, rimmed baking dish with parchment paper or a silicone baking mat for easy cleanup.

Place

Place the potatoes and garlic cloves in the center of the baking sheet.

Whisk

In a small mixing bowl or large liquid measuring cup, whisk together the olive oil, 1/2 teaspoon of the salt, black pepper, and rosemary. Pour over the potatoes and garlic.

Toss

Toss the potatoes and garlic until they are evenly coated. Spread into an even layer, placing the cut sides of the potatoes down against the baking sheet.

Roast

Roast for 45 to 55 minutes, tossing once and rotating the pan 180 degrees halfway through, until the potatoes are dark golden and crisp (the time will vary based upon how crowded your pan is and the type of potatoes you use). Remove from the oven and sprinkle with the remaining ¼ teaspoon kosher salt. Let cool a few minutes, then serve hot.

These garlic butter potatoes are truly incredible and so simple to whip up!

Garlic Butter Potatoes

Garlic

1kg / 2lb small Potatoes ((see notes))

tbsp Olive Oil

Salt

tsp Black Pepper

/ 6 tbsp Butter

tbsp very finely diced Fresh Parsley

Preheat the oven to 200C/390F.

Slice the tips off the garlic bulbs to expose the cloves. Drizzle with a little oil then individually wrap them in foil.

Make very thin slices (1/16&quot; - 1/8&quot;) along the potatoes, ensuring you don&#39;t go all the way down so they stay intact. Place them in a large mixing bowl with 3 tbsp oil, 1/2 tsp salt and 1/4 tsp pepper. Give them a good toss so they&#39;re evenly coated in the oil and seasoning, then space them out cut-side-up on the baking tray. Use a brush to collect any leftover oil in the bowl and brush it over the tops of the potatoes.

Add the garlic bulbs to the tray then roast everything for 30 minutes. Remove and use a brush to coat the potatoes in any excess oil in the tray (you might find it easiest to tip the tray a little). Check the garlic and if it looks like it&#39;s browning too quickly, lower the heat slightly to 180C/350F.

Roast everything again for another 15-20 minutes, or until the potatoes are deep golden and crispy and the garlic is very soft, light golden and sticky.

Squeeze the roasted garlic into a small bowl with the butter, parsley and a pinch of salt and pepper (to taste). You might need kitchen roll or a towel to protect your fingers when squeezing the garlic if it&#39;s very hot. Combine the butter, check for seasoning, then spread over the potatoes whilst they&#39;re hot. There should be plenty of butter so don&#39;t hold back!
