Cover bottoms of 3 (9-inch) round pans with parchment; spray sides with cooking spray. Microwave chocolate and water in large microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.

Beat egg whites in small bowl with mixer on high speed until stiff peaks form; set aside. Combine flour, baking soda and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks, 1 at a time, beating well after each. Blend in melted chocolate and vanilla. Add flour mixture alternately with buttermilk, beating until well blended after each addition.

Add egg whites; stir gently until well blended. Pour into prepared pans.

Bake 30 min. or until toothpick inserted in centers comes out clean. Immediately run small spatula around cakes in pans. Cool cakes in pans 15 min. Remove from pans to wire racks; cool completely.

unsalted butter (melted)

14 oz can sweetened condensed milk

tsp vanilla extract

milk chocolate chips

Preheat the oven to 350 degrees.

Grease a 9x13 inch baking pan (I used non-stick cooking spray).

In a medium bowl, mix together the cake mix, butter and egg, and press into the bottom of the prepared pan.

The crust should not come up the sides.

Bake for 7 minutes and remove from the oven. The crust will not look done.

While the crust is baking, mix together the sweetened condensed milk, vanilla, egg, pecans and coconut.

Pour evenly over the warm crust.

Sprinkle evenly with the chocolate chips.

Bake for 24-30 minutes, until the top is a light golden brown.

Remove from the oven and cool completely before cutting into squares.

Preheat oven to 350°F and grease a 9x13-inch baking pan with nonstick spray. Set aside.

In a large bowl, combine cake mix, pudding, eggs, yogurt, vegetable oil, milk, vanilla extract, and salt. Beat with an electric mixer until combined and pour into prepared pan.

Bake until a toothpick inserted into the center comes out clean, 30-40 minutes. Remove from oven and poke holes all over the cake with the handle of a wooden spoon.

Pour the sweetened condensed milk all over the cake and allow to soak into the holes. Let cool.

While cake is cooling, place chopped chocolate in a medium bowl. Heat cream in a saucepan until just beginning to bubble around the edges. Pour over chocolate and allow to sit for 5 minutes.

After 5 minutes, stir until chocolate melts. Allow ganache to thicken 5 to 10 minutes before spreading over the top of the cake.

Spread coconut frosting over the ganache, serve and enjoy!

Store in the refrigerator in an airtight container.

This German Chocolate Cake Roll is a twist on the typical German Chocolate cake! A chocolate swiss roll genoise cake is filled with coconut pecan filling and the whole thing is topped with rich chocolate ganache and toasted coconut.

Grease a 10x15 inch jelly roll pan with butter or spray with non-stick spray. Line the pan with parchment paper, making sure that the paper overhangs the sides. Grease the parchment paper with butter - this will help with peeling the paper off once the sponge has baked.Preheat oven to 350 degrees F.

Prepare your tea towel. Lay a tea towel or a piece of parchment paper on your work surface and dust lightly with cocoa powder.

In the bowl of a stand mixer fitted with the whisk attachment or a large bowl if using a hand mixer, add the eggs, sugar, and vanilla extract and whip until the mixture is light and creamy, about 5 minutes. When lifting out the whisk, you want to be able to see trails of the mixture for a few seconds.

Into a separate bowl, sift in the flour, cocoa powder, baking powder, and salt.Gently fold about half of the dry ingredients into the egg mixture until just combined. Sift in the remaining flour mixture and again fold through while rotating the bowl. Ensure that you scrape right to the bottom of the bowl where flour pockets may be hiding. Do not over mix, as this will deflate the air that was created during the initial whisking of the eggs.

Pour the batter into the prepared pan and gently spread with an offset spatula all the way to the corners.Bake in the oven for 7-9 minutes until a toothpick inserted into the center comes out clean and the cake springs back when pressed lightly.Do not overbake as this is the most common cause of a cracked sponge!

Once the sponge has baked, remove it from the oven and immediately invert the sponge onto the tea towel while it is still hot. Gently peel off the parchment paper. Starting from the sponge&#39;s short end, using your hands, roll the sponge up gently but firmly until it is totally rolled into the tea towel or parchment paper. Set the cake roll aside with its seam side down to cool completely.

Make the Cake

In a large saucepan, add brown sugar, egg yolks, evaporated milk, and butter. Heat on medium, stirring constantly, for about 15 to 18 minutes, until brown and thickened to a  custard-like consistency.

Remove from heat, stir in the vanilla, pecans, and coconut. Transfer to a large bowl and cover. Refrigerate, stirring often to cool thoroughly before using to fill the cake.

Make the Filling

Place the chopped chocolate and butter into a medium bowl. In a small saucepan or in the microwave, heat the cream gently on low heat until simmering around the edges. Pour the cream over the chocolate into the bowl and cover with a small plate to trap the heat. Let it sit for a couple of minutes. Whisk continuously until the chocolate is smooth and the butter has melted.

Place the swiss roll onto a wire rack set on top of a baking tray. Slowly pour the ganache over the top of the cake roll to coat completely. Decorate with toasted coconut and let the chocolate set for 20 minutes before slicing ends off to neaten up the roll before serving.

In a medium saucepan add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk. Stir to combine and bring the mixture to a low boil over medium heat. Stir constantly for several minutes until the mixture begins to thicken.

Remove from heat and stir in vanilla, nuts and coconut.

For the coconut frosting:

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. 

Pipe chocolate frosting along the outside edge of a chocolate cupcake. Spoon coconut frosting in the center.

For the chocolate frosting:

Made them for my boyfriend for valentines day, I personally don't like coconut so I had plain cupcakes. His only comment was less pecans and to be chopped before adding to the mixture. Other then that he loved them will be making again.

I love to bake. I have never made german chocolate cake. And whenever I make cupcakes they are always dry. But these were the best cupcakes!!!! I made them for my sons birthday and took the rest to my doctors office. Everyone was so complimentary. A definite keeper!!!

These are delicious, but when I made them, they fell.  None of my ingredients were expired, and I baked them for probably 25-26 minutes, because the toothpick kept coming out wet.  Any idea why they would fall?

I made these cupcakes for my son's 16th birthday and they were SENSATIONAL!  Definitely recommend following the recipe to make the chocolate cupcakes from scratch, if time allows, as the cake flavor and texture is just perfect (much better than boxed mix).  I once made a German chocolate cake, which I adored, but was looking for smaller sized portions and this recipe piqued my curiosity.  Also saw the YouTube video on frosting tips which helped.
