Busy weeknights? No problem. This easy and fast Gnocchi with Sausage and Spinach is wonderfully tasty! All you need is 20 minutes and one pan. Deliciously simple! Serve with a loaf of French or Italian bread to eat up any leftover sauce.

20-Minute, One-Pan Gnocchi with Sausage and Spinach

olive oil

onion, chopped

garlic cloves,

lb Italian sausage (bulk, no casings)

(16 oz) package potato gnocchi (from refrigerated or pasta aisle)

(14.5 tomatoes

chicken broth

baby spinach leaves

tsp black pepper

mozzarella cheese

Parmesan cheese

In a large nonstick skillet, add oil and heat over medium high until hot. Add onion and garlic and stir/cook until fragrant, 30 seconds.

Add sausage; stir and break it up into pieces, until nicely browned. Don&#8217;t drain. Add uncooked gnocchi. Stir 1 min, gently breaking up any clumps. Stir in tomatoes with juices and chicken broth. Cover and cook on medium heat, 5 min, or just until gnocchi is fluffy and cooked through. Turn off heat.

Add spinach and pepper. Stir until spinach leaves are wilted. Sprinkle with cheeses and cover for 3-5 minutes or until cheese is melty. Serve immediately.

Thank you! I was looking for a recipe that I had most of the ingredients for already. I used spinach gnocchi and a bag of mixed italian style veggies instead of going out to find fresh spinach. Skipped the mozza cheese too, but the Parmesan was enough for us. I love these kinds of recipes that can be adapted to what you have. Loved it!

made this for dinner last night! Used chicken sausages and fresh mushrooms as well as made it with dairy free cheese to make it dairy free! Yummy!!

Cut back on the onions (bf doesn’t like) and cheese (because I didn’t have any mozz) and added some fresh basil from my garden, and it was one of the BEST things I’ve EVER made!! Thanks for a great recipe!!!

Made this last night.  It was very tasty! Took longer to make than 30 minutes, but here is the reason. I couldn't find dry or refrigerated gnocchi at the market (live in a small town) so I decided to make them when I got home. Found several recipes online using instant potato flakes.  Next time I will cook them first before adding them to the meat.  I didn't because your recipe called for uncooked, but it took about 15 minutes for them to cook through.  I now have some in my freezer, the recipe made enough for two batches.

One-Pot Gnocchi with Spinach and Chicken

This one pan creamy gnocchi with sausage recipe is an easy, quick, and incredibly delicious comfort food meal. Ready in 30 minutes!

One Pan Creamy Gnocchi with Sausage

sausages

onion (chopped finely)

garlic (minced)

dry white wine (e.g. sauvignon blanc)

(14 fluid ounce) can diced tomatoes (with juices)

heavy/whipping cream

potato gnocchi

parmesan cheese

basil (torn)

Salt & pepper (to taste)

Prep your sausage and onion. Feel free to take the sausage meat out of the casing if that&#x27;s easier than cutting it.

Sauté the sausage pieces and onion in a skillet on on medium-high heat for 7-10 minutes, or until the sausage and onions are lightly browned.

Add the garlic to the pan and sauté for 30 seconds, or until fragrant. 

Add the wine and let it cook for about a minute.

Stir in the diced tomatoes, cream, and gnocchi. Once the sauce starts to bubble again, cover the pan and reduce the heat to medium. Cook for 5 minutes. 

Uncover the pan, give it a good stir, and let it cook for another few minutes, or until the gnocchi has cooked through and is nice and soft and the sauce has thickened to your liking.
