No-Bake granola bites with peanut butter and chocolate chips are a quick healthy homemade snack! This recipe has oats, bran &amp; flaxseed&nbsp;for an energy boost.

Granola Bites with Peanut Butter &amp; Chocolate

honey

chocolate chips (mini semi-sweet, plus extra for topping)

oats

rice crisps

flaxseed (ground)

In a medium-sized saucepan over medium heat, cook honey and brown sugar for 1 minute until brown sugar is dissolved.

Add vanilla and stir to combine.

Add mixture to a stand mixer fitted with a paddle. Add peanut butter and mix on medium speed until combined, about 1 to 2 minutes.

In a medium-sized bowl, combine oats, crisps, flaxseed and oat bran. Pour into a mixer with peanut butter mixture, and combine on medium-low speed, about 1 to 2 minutes.

Refrigerate the mixture for 10 minutes, or until the mixture has cooled completely to room temperature, to prevent the chocolate chips from melting.

Transfer mixing bowl back to stand mixer and add the chocolate chips. Mix on medium-low speed until combined, about 30 seconds to one minute.

Using a mini cupcake tin, enough to make 24 cups, add a heaping tablespoon of the peanut butter chocolate chip mixture into each cup.

Press the mixture firmly into each cup then top with additional mini chocolate chips, pressing gently into the batter. Each cup should be at least ¾ full with the mixture.

Refrigerate for at least an hour, or until the cups have hardened and are easy to remove with a small knife.

Store the peanut butter chocolate chip granola cups in an airtight container in the refrigerator for up to 1 month.

A crispy dry granola, like this cinnamon flavor from Kind, works best in this recipe.

Place the apricots into a bowl and cover with water. Let sit for at least 10 minutes. Drain.

Place 1 cup of the granola into a blender. Blend until well chopped.

Add the dried fruit and nut butter, and blend, stopping frequently to scrape down the sides of the bowl, or if you have a Vitamix, use the stick to help things move around. Blend until starting to clump together and are finely chopped.

Place the remaining granola into a bowl and portion out 1-tablespoon balls. Roll in your hand, then roll in the granola, pressing the granola into the ball. Place on a plate and repeat to finish the batch.

Serve, or store in the fridge in an airtight container for up to two weeks.

No Bake Chocolate Chip-Almond Granola Bites (+ Variations)

Choice of Toppings: sesame seeds, hemp seeds, chopped sunflower seeds,

Mix almond butter, honey, and vanilla in a medium-sized bowl.

Add remaining ingredients except for toppings, and mix well.

Refrigerate for about 1/2 hour, then shape into balls with a small cookie scoop about a tablespoon in size.

After shaping each ball, roll it in the coating of your choice.*

Store the bites in an airtight container in the refrigerator.

I am a granola lover too and I just made these bites and all I can say is yum yum! They are out of this world. I made them to have 1 with a cup of roobios tea in the afternoon when I get that "I need a little something something " what an excellent recommendation because it is sweet but not desserty sweet but healthier sweet. I want to shed about 8 to 10 lbs so I am following all your ideas on your " real food weight series" . I know my problem is serving size because I eat healthy.

These Granola Bites are crunchy healthy bites of granola, they taste like granola cookie bites, and they are perfect as a healthy snack packed with fiber and proteins.

Granola Bites

Old-Fashioned Rolled Oats ((note 1))

Peanut Butter ((note 2))

Maple Syrup ((note 3))

Chia Seeds ((note 4))

Sunflower Seeds ((note 5))

Pumpkin Seeds ((note 6))

Chocolate Chips ((note 7))

Vanilla Extract

Salt (if peanut butter unsalted)

Preheat the oven to 350 °F (180 °C). Line 2 mini-muffin pan with mini paper liners. Slightly oil each paper liner. Set aside.

In a mixing bowl, add peanut butter, maple syrup, and vanilla if used. Stir until smooth.

Add in rolled oats, chia seeds, sunflower seeds, pumpkin seeds, chocolate chips, and salt.

Stir to form a thick and sticky batter.

Use a cookie dough scoop or tablespoon to scoop out and pack some of the batter - packing matters if you want the bites to stick together in the oven.

Release the mixture in each muffin paper liner - I made 21 of them.

Bake the bites in the oven for 15 minutes at 350 °F (180 °C) until golden brown on top.

Remove the pan from the oven and cool down in the pan without touching the bites - they firm up as they cool down.

I just made these using almond butter, ground chia instead of the seeds, quick oats, sesame seeds, hemp hearts, sunflower seeds. I didn't have chocolate chips just 70% cacao chunks so I put them through the mini ninja food processor to make them smaller. I didn't use paper cups but put them straight into my non-stick mini muffin tins. They were a bit too dry so I used water on my hands to roll balls. They are delicious and have protein as well as fibre. So good! I'll be making these again for sure.

These were delicious! My grandchildren also approved the recipe. I did a mix of rolled and quick oats and added some raisins and slightly reduced the chocolate chips. Everything else I kept the same. These easy Granola Bites are our favorite on-the-go snack, packed with whole grains and protein, and all your favorite add-ins!

oats (regular or quick oats (135 grams))

flaxseed ((100 grams))

crispy rice cereal ((like Rice Krispies) (20-25 grams))

peanut butter (, or other nut butter

chocolate

honey (,

vanilla extract ((10 ml))

Combine all ingredients in a large bowl until well mixed.

Scoop into balls using a cookie scoop, spoon, or your hands and place in an airtight container, with pieces of parchment paper between stacked layers, if needed.

Storing: Refrigerate in an air-tight container for up to two weeks or freeze for several months.

These were so tasty! I used a cinnamon almond cashew butter and since it was already a little sweetened I reduced the amount of honey to a little over 1/3 cup. We love the crunch from the Rice Krispies! What a great idea!

These were easy to make and very delicious. I’d ground my flax more, the bulk flax I got from the store was about half ground. 
We are taking a long road trip soon and this will be something we take with us. I’m liking forward to having these stocked up for my kids!

These are a super hit at my house. We like that it has no eggs or sugar and is no bake. I think this is a healthy choice for a snack or on the go. My sweet-tooth family loves these!!!  And they are not typically fans of anything remotely “healthy” tasting.  I forgot the vanilla, and they were still delicious.  I drizzled a tiny amount of melted chocolate on top, but I’m sure they’re wonderful without that too.

Combine oats and next 4 ingredients (through chocolate chips) in a bowl and mix well.

Combine peanut butter and honey in a separate bowl and stir until smooth. (If your PB is hard or cold, you can do this in a small saucepan over medium low heat. It just takes a minute to warm up the peanut butter and get the mixture smooth.) Pour the peanut butter-honey mixture over the granola mix and stir until everything is well coated.

Wet your hands with water and roll into balls - I did mine about 1-inch wide (a little bigger than a golf ball). To make them easier to roll, you can put the mixture in the fridge for 20-30 minutes to let it firm up a bit. If I&#39;m making these ahead, I&#39;ll do that step. Otherwise, we roll and eat immediately.
