A quick easy mini version of traditional Banh Mi with a generous portion of our favourte part - pickled carrot!

Mini Banh Mi with quick pickled carrots

portion Just Veg. Carrot Shred Quick Pickle

mini dinner rolls (halved)

Cucumber

Coriander

Spring onion

Mayonnaise

Spread pate and mayonnaise on one side each of bread roll.

Fill with ham slice, cucumber, spring onion, coriander and a generous amount of Just Veg. Carrot Shred Quick Pickle.

Serve.

Irresistibly crisp, savory, 4-ingredient black bean burgers with oats, salsa, &amp; grated carrot! Either pan-fry them on the stove or bake them in the oven. Gluten-free, soy-free, &amp; no egg needed.

Vegan Black Bean Veggie Burgers

oats

black beans (drained & rinsed)

salsa ((or ketchup, or BBQ sauce))

carrot

salt

burger buns

lettuce

Roma tomatoes (sliced)

onion

sprouts

ketchup & mustard (to taste)

In a food processor, pulse rolled oats (~10 times) until chopped, but not into flour.

Add remaining ingredients and pulse together 6-7 times, or blend until integrated. (It doesn’t need to be smooth—you want some chunks.)

Portion mixture into balls and then form into ½-inch thick patties. (I used a heaping ice cream scoop to portion the mixture into 6 patties.)

Stovetop Method: Heat a pan over medium-high heat and spray with cooking spray. Cook patties for 3-4 minutes on each side, until browned &amp; crisp around the edges, but tender in the middle. (You can’t undercook these vegan patties, so just cook until as crisp as you like them.)

Oven-Baked Method: Preheat oven to 400°F (200°C). Line a baking sheet with parchment &amp; spray with cooking spray. Add patties and bake for 7 minutes, flip, and then bake another 7-8 minutes until browned and crispy.

Serve patty on a burger bun with your favorite toppings, over salad greens, or however you like!

Yields 6 veggie burger patties.

These are seriously the BEST vegan black bean burgers I’ve ever eaten—and I’m not usually a huge fan of veggie burgers! They’re amazingly savory & flavorful, and they don’t fall apart like most homemade bean burgers do. (Even though they’re gluten-free & egg-free!)

I’ll walk you through how to make black bean burgers with only 4 ingredients: canned black beans (or any beans), rolled oats, salsa, & grated carrot (plus some salt). You can pan-cook them on the stovetop or bake them in the oven. Either way, you’ll end up with tender-yet-sturdy vegan burger patties that are perfect for enjoying on a bun!

Whether you’re vegan or just looking for plant-based burger options, this is a great DIY veggie burger to try. You get to choose the type of beans, you don’t need an egg as a binder (unlike many other recipes), and they’re gluten-free since they’re made with oats (unlike many store-bought options).

But store-bought veggie burgers can ALSO be nutritious & convenient meal options, even though some contain more processed ingredients. We don’t HAVE to make homemade veggie burgers from scratch to be “healthy”—especially if choosing a premade option can reduce our stress. Remember to lighten up on yourself & give yourself permission to choose whatever is most supportive for YOU!
