These easy Greek Chicken Bowls are always a favorite! Meal prep all of the ingredients so you can have lunch or dinner ready in no time!

Greek Chicken Bowls

chicken breasts (2 large breasts))

olive oil

lemon

lemon juice

garlic (minced)

oregano

salt

black pepper

red pepper flakes

cauliflower rice (regular rice, or quinoa)

grape tomatoes (halved)

cucumber

kalamata olives (pitted and sliced)

onion

tzatziki sauce

feta cheese

Lemon wedges (for serving)

Pita chips (optional)

dill and parsley (for garnish, optional)

For the chicken: In a gallon size Ziploc bag, combine chicken breasts, olive oil, lemon zest, lemon juice, garlic, oregano, salt, pepper, and crushed red pepper. Marinate for at least 30 minutes to 1 hour, turning the bag occasionally.

When ready to cook the chicken, brush grill grates or a grill pan with olive oil and heat to medium high heat. Remove the chicken from the bag and discard the marinade.

Place chicken breasts on grill and grill about 5 minutes per side, depending on the thickness of the chicken. Cook until the chicken is no longer pink in the center and registers 165 degrees in the center, using an instant read thermometer. Remove the chicken from the grill or grill pan and let rest for 5 minutes before slicing. Slice the chicken into think slices and set aside.

To assemble the Greek bowls: divide the cauliflower rice or quinoa among 4 bowls. Top with sliced chicken, tomatoes, cucumber, olives, red onion, tzatziki sauce, and feta cheese. Add a squeeze of fresh lemon juice over the top. Tuck pita chips into the side of the bowl, if using. Garnish with dill and parsley, if desired. Serve immediately.

Greek Lamb Meatballs

red onion (135 grams)

garlic,

fresh parsley, chopped

fresh mint leaves, chopped ((8-10 large leaves))

salt and pepper,

tapioca flour, for rolling

oil needed)

cucumber, deseeded and chopped ((215 grams))

cherry tomatoes, halved ((210 grams))

kalamata olives, halved ((70 grams))

onion ((45 grams))

red wine vinegar

batches green goddess cauliflower rice

chopped romaine

lemon wedges

Make the meatballs. In a large bowl, mix all meatballs ingredients today (except tapioca flour and oil for frying). Cover mixture and place in the fridge for at least an hour to let flavors marinate. If you don’t have time, you can skip this step, but it really helps give the meatballs so much flavor. You can also marinate for more than an hour if you like.

Make additional sides if desired. While the meatballs marinate, make the greek salad. Combine all ingredients into a medium bowl and stir to combine. If making tzatziki and cauliflower rice, make those as well.

Form meatballs. After they marinate, use a tablespoon as a scoop to form into meatballs. Add flour into a small bowl and roll each meatball in the flour, making sure it is coated, but shaking off the excess.

Cook meatballs. Heat a well-seasoned cast iron over medium heat. Add oil if needed. Cook meatballs for 5-8 minutes, stirring occasionally, until golden brown and cooked through. I had to cook mine in 2 batches.
