Chicken Gyros

lbs chicken thighs

Greek yogurt (plain)

lemon juice

tbsp red wine vinegar

olive oil

garlic (minced)

tbsp cumin (ground)

tbsp smoked paprika

tzatziki sauce

½ red onion (thinly sliced)

cherry tomatoes (halved)

Marinate chicken: Add the chicken and marinade ingredients to a large freezer bag. Squeeze to mix all the ingredients around and transfer the bag to the fridge. Marinate for 1-4 hours.

Cook chicken: Preheat the oven to 425F°. Equip a baking sheet with a roasting rack. Line the chicken on the rack and bake for 15-18 minutes, or until the edges begin to crisp. You can turn on the broiler for 2-3 minutes if you&#039;d like more crispiness without drying the chicken out.

Assemble gyros: Roughly chop the chicken into bite-sized pieces. Warm the pitas for 15-20 seconds in the microwave or toast them individually in a dry skillet over medium-high heat. Spoon some of the chicken into the pita, then top with tzatziki, onion, and tomatoes.

Tender greek chicken, marinated then cooked in the Instant Pot pressure cooker or stove top, then layered in a pita with creamy homemade tzatziki, and a Greek salad. Perfect make ahead meal for lunches all week.

Instant Pot Greek Chicken Gyros

lbs boneless skinless chicken thighs

chicken broth

pita breads or flat breads

Tbs minced garlic

Tbs apple cider vinegar

Tbs lemon juice

Tbs extra virgin olive oil

salt

Black pepper

parsley

dill

paprika

onion powder

plain Greek yogurt

cucumber

tsp minced garlic

lemon

Tbs chopped fresh dill

tsp fresh chopped mint

salt and freshly cracked black pepper

olive oil (1 tsp)

tomatoes

english cucumbers (diced)

onion

olives

feta cheese

Salt and pepper

Combine all marinade ingredients in a ziplock bag, and massage to combine.

Add chicken to the bag, and make sure each piece is covered in marinade.

Let marinade for minimum 2 hours, preferably 8-10.

Cut the cucumber in half lengthwise.

Scrape out the seeds, and then finely chop or grate the remaining cucumber.

Wrap it in a paper towel or cheesecloth, and squeeze out liquid.

Place in bowl, and add remaining ingredients and combine.

Taste, adjust salt and pepper to preference.

Cover in place in refrigerator for 30 minutes to give flavors a chance to combine

Make the Tzatziki

Combine ingredients in a bowl. Set aside.

Salad

Add 1 Tbs olive oil to the bottom of a 6 qt or larger Instant Pot.

Choose the Saute Function.

Once hot, sear the chicken on both sides, in small batches, do not crowd the pot. Set the browned chicken on a platter.

When all the chicken is browned, add 1 cup chicken broth, and any of the remaining marinade to the bottom of the pot.

Place the trivet into the pot and add the browned chicken to the pot, along with any juices that have collected on the platter.

Put lid onto the pot and lock lid in place.

Select High Pressure and 8 minutes cook time. (It will take about 10 minutes to reach high pressure.)

After 8 minutes cook time, turn off pressure cooker and let pressure naturally release for 5 minutes, then quick pressure release remaining pressure.

Instant Pot Instructions

On the stove-top over medium-high heat, heat a large skillet.

Add 1 Tbs Olive oil to skillet,

Remove chicken from marinade, and add chicken to skillet.

Cook for 8-10 minutes, or until chicken is fully cooked (internal temp 1165 degrees) and golden brown.

Stove-Top Instructions for Chicken

Layer pita bread or flatbread with cooked chicken, add tzatziki and salad to preference, and wrap half in foil to hold it all together so it is easier to eat.

This refreshing and light, easy Greek chicken gyros is packed with tender souvlaki chicken, Greek salad, and homemade tzatziki sauce, all wrapped in a pita.

Greek Chicken Gyros with Tzatziki

cloves garlic, crushed

parsley, chopped

lbs. chicken breast (approximately 3 chicken breasts),

tablespoon olive oil

large cucumber, unpeeled

cup plain Greek yogurt

cloves garlic, pressed

tablespoon extra virgin olive oil

teaspoons freshly squeezed lemon juice (juice of 1/4 lemon)

+ 1/2 tablespoon fresh dill, chopped

teaspoon salt

of ground black pepper

+ 1/2 cup romaine lettuce, chopped

cherry tomatoes, quartered

red onion, chopped (roughly 1 small red onion)

feta cheese, crumbled

salt and pepper,

pita breads

Prepare the marinade

. Add all of the ingredients for the chicken souvlaki marinade into a large ziploc bag. Press the marinade around to combine.  Add in the chopped chicken, and press the air out of the bag and seal tightly. Press the marinade around the chicken to coat. Place in the fridge to marinate at least 1 minutes or overnight.

Prepare the tzatziki sauce

.  Grate the cucumber and drain through a cheesecloth, fine mesh sieve or using your hands. Transfer drained cucumber to a medium bowl. Add the yogurt, garlic, olive oil, lemon juice, dill, salt and pepper. Stir to combine. Refrigerate for at least 1 hour before serving to let the flavours infuse into the yogurt.

Prepare the toppings

. In a medium bowl, combine the toppings and toss together. 

Grill the chicken

. You can thread the chicken onto skewers to grill, or grill the individual pieces. Lightly brush olive oil over grill pan. Heat the grill over medium high heat for about 5 minutes, until sizzling hot. Cook the chicken for 7 minutes on each side, or until its internal temperature reaches 165 F (75 C).

Assemble the gyros

. Warm the pitas on the grill, about 1-2 minutes per side. Then, on the centre each pita bread, add a few spoonfuls of the salad toppings in a line down the middle. Top with grilled souvlaki chicken, and a generous scoop of tzatziki sauce. Fold the pita up and enjoy. You can also wrap it in parchment paper and twist the bottom to keep the ingredients inside.

Greek Chicken Gyros Recipe with Authentic Tzatziki Sauce

Make this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.

lbs. chicken breast tenders (boneless, skinless)

extra virgin olive oil

Greek yogurt (plain, full fat)

white wine vinegar

garlic

marjoram

rosemary

cucumbers (peeled or unpeeled)

red onion

finely diced flat leaf (Italian Parsley (optional))

Make the Tzatziki SauceMake this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.

Marinate the Chicken

Measure the marinade ingredients and put them into a 1 gallon zip top bag, close the bag and then massage the bag to mix well.

Add the chicken tenders to the zip top bag, close the bag and then massage the bag so that each chicken tender is well covered by the marinade.

Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don’t marinate it longer than 24 hours or your chicken will be too mushy.

Warm the Pita Bread

Preheat your oven to 250 degrees Fahrenheit.

Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.

Cook the Chicken

You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill / grill pan with olive oil, then preheat using medium high heat.

After the grill / grill pan is hot, remove the chicken from the marinade bag and place on the grill / grill pan.

Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.

Remove the chicken from the grill / grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.

Slice the chicken tenders and put on a serving plate.

Assemble the Gyros

Lay out a warmed pita bread.

Place sliced chicken down the middle of the pita bread.

Top the chicken with an ample amount of tzatziki sauce.

Garnish the top of the tzatziki sauce with cucumber, tomatoes, red onions, feta cheese and optionally parsley.

Fold up the pita bread and enjoy!

Greek Chicken Gyros with Authentic Tzatziki Sauce

It&#039;s so easy to make your own Greek chicken gyros at home! Full of flavor the simple marinated chicken is perfect for easy family lunches and main meals.

Grilled Chicken Gyro

½ pounds boneless skinless chicken breasts

lemon juice (plus 1 tablespoon zest)

Pat chicken dry and pound chicken if some parts are too thick. Combine the olive oil, lemon juice, oregano, garlic, salt and pepper in a bowl or resealable freezer bag. Add chicken and toss well to combine. Marinate for at least 30 minute

Preheat grill or grill pan to medium high heat. Place chicken on the grill for 5-7 minutes. Use tongs to flip over and cook until juices run dry, approximately 5-7 more minutes. Discard extra marinade.

Remove chicken from the grill and allow to rest for 5 minutes before slicing

Serve in a pita with vegetables and tzatziki sauce, if desired.

These Greek Chicken Gyros are meticulously seasoned and roasted to perfection. The chicken is marinated in a combination of savory, tangy and herbaceous flavours, stacked on a spit and slow-roasted until the exterior develops a slight caramelized char while the inside remains tender and succulent 🤤.

Greek Chicken Gyros

boneless skinless chicken thighs (1.3kg total)

honey Dijon mustard

garlic (or 3 very large ones)

lemon zest (two lemons zested)

dry oregano (to taste)

water (or stock (for the bottom of the pan))

Preheat the oven to 425F (220C).

In a bowl add the chicken, olive oil, honey Dijon mustard, garlic, salt, lemon zest, and oregano. Mix well. You can marinate for a minimum of one hour (even overnight for best results).

Once marinated, take the Vertical Gyro Spit Plate and thread the chicken thighs making sure to rotate each one opposite from the last.

Note: if you don’t have a Vertical Gyro Oven Plate, cut an onion in half, place it on a baking sheet lined with parchment (or foil) and position two wooden skewers vertically into the onion and voila, you made your own spit and don’t need to buy one!

Now, place the gyro in the oven and add 1 cup of water or stock to the base (which will create our sauce).

Tip: you can pierce a small piece of foil making sure to cover the top chicken thigh as it will start to burn first on the top as it bakes.

Bake for 75-90 minutes or until fully cooked. Mine took exactly 1.5 hours.

Take it out of the oven, let it rest and cut! You can enjoy this chicken gyro with loaded Greek fries, on pita with tzatziki, on a Greek Salad and so much more!
