Smoked paprika greek yogurt dip

greek yogurt

½ teaspoon smoked paprika

Combine all ingredients and mix well. Taste for seasoning and adjust salt, paprika, lemon, etc. as needed. Just keep mixing and adding until you’re happy! If you ever feel like you went too far, just add a little more yogurt to mellow it out.

Lemony Yogurt Dip with Spicy Herb Oil

scallions

red pepper flakes less if you prefer less heat

cilantro leaves

flaky sea salt

full-fat Greek yogurt

zest lemon

Heat the olive oil, scallions, red pepper flakes in a small pot over medium-low heat. Cook, swirling occasionally, until the scallions and red pepper flakes start to visually and audibly sizzle

Add cilantro and chives and cook just until the herbs are fragrant. Remove from the heat, and let cool enough to taste and season with salt and pepper.

Optional- add about half of the oil mixture to a mini food processor with an extra tablespoon of fresh cilantro. Pulse until pureed and then combine with the rest of the oil. This makes for a beautiful bright green color and pretty presentation.

For the Herb Oil:

Combine the yogurt, lemon zest and lemon juice in a medium bowl, and season with salt and pepper. Spoon into a shallow serving bowl.

Top with the Spicy Herb Oil and garnish with additional fresh herbs

Serve with homemade crostini, pita chips or fresh veggies. See variations sections of this post for more ideas on how to serve this dip.

Mast O’Khiar (Persian Yogurt and Cucumber Dip)

English cucumber

plain Greek yogurt

garlic cloves, (finely minced)

dried mint, (plus more to serve)

lime, (juiced)

extra virgin olive oil, (plus more to serve)

pepper

pita bread, (to serve)

Grate the cucumber. Using a box grater, coarsely grate the cucumber. Then, either using your hands or a muslin cloth, squeeze the juice out of the grated cucumber until you have squeezed most of the liquid out.

Mix with the Greek yogurt. Add the grated cucumber to 3 cups of Greek yogurt in a mixing bowl.

Season and chill. Add the garlic, dried mint, lime juice, olive oil, and a good pinch (about 1/2 tablespoon each) salt and pepper. Stir until evenly distributed. Taste and adjust seasoning to taste. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.

Garnish and Serve. Remove the yogurt mixture from the fridge, stir, and spoon it into a serving dish, spreading it into an even layer using the back of the spoon. Sprinkle with dried mint and drizzle with olive oil. Serve with fluffy pita for dipping, if you like.

I made this dip yesterday for greek style oven fries and everybody loved it! The herbs give a rich flavour to the dip.

How to Make Authentic Greek Tzatziki

(2 cups) Greek yogurt

peeled,

kosher salt

garlic, finely minced

Peel the cucumber and slice it in half lengthwise.

Use a spoon to scrape out the seeds, then grate the cucumber using a box grater.

Place the shredded cucumber in a clean tea towel or cheesecloth and squeeze out as much liquid as possible. This prevents a watery tzatziki.

In a medium mixing bowl, stir together the drained Greek yogurt, shredded cucumber, salt, minced garlic, olive oil, and lemon.

Cover the bowl and refrigerate for at least 30 minutes before serving.

Top with dill, and optionally additional olive oil when serving.

Serve as a dip for pita bread, grilled meats, or fresh vegetables.

Store leftover tzatziki in an airtight container in the refrigerator for up to 5 days.

I love this "sauce"! I tried it in several versions, but this original, with Greek style yogurt is definitely the best for me. Here in Croatia we have a habit of making a version ov tzatziki which uses sour cream instead of yogurt and onions instead of garlic.

I prepare mine the same way. Lived in Thessa, Santorini and Crete in the early 1990s, and had learnt to prepare numerous Greek dishes. Though I am Italian &amp; French, I love Meze.

I mean this is pretty much spot on for the perfect tzatziki. My mother made it this exact way, and it is delicious. I grew up on Rhodos, and this is my favorite thing to eat.
