An easy and healthy breakfast, these Greek Yogurt Banana Pancakes provide a delicious protein-packed start to your day.

Greek Yogurt Banana Pancakes

Vanilla Greek yogurt

eggs

white whole wheat flour

baking soda

milk ((I use unsweetened almond milk))

banana, (mashed)

Combine the greek yogurt and eggs in a medium sized bowl. Whisk to combine.

In a separate bowl, mix together the flour and baking soda.

Pour the yogurt mixture over the dry ingredients and stir to combine. Add in the milk and mashed banana and mix well.

Heat a large skillet on the stove to medium heat, or turn an electric griddle to 350 degrees. Melt a little butter in the skillet or on the griddle and scoop batter on top into desired sizes. (I use a heaping 1/4 cup scoop and spread them out a little.)

Once tops start to bubble, flip and cook until both sides are cooked through. Serve with maple syrup, jam, almond butter, or fresh fruit.

Healthy Greek Yogurt Pancakes Recipe (gluten-free option)

oat flour (1 cup old-fashioned oats blended in your Vitamix)

all-purpose flour ((or gluten-free all-purpose flour))

tsp baking powder

½ tsp baking soda

sea salt

cinnamon

TBS sugar ((or coconut sugar))

vanilla Greek yogurt

tsp vanilla extract

eggs (lightly beaten)

TBS milk ((if needed) regular, almond, coconut, etc.)

Butter (or coconut oil (for greasing the skillet))

Preheat an electric griddle to 350 degrees F.

In a large bowl mix together the Greek yogurt, eggs and vanilla. Whisk until mixture is smooth.&nbsp;

Add sugar, oat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon in a small bowl. Whisk until completely combined.

If the batter is too thick, add milk 1 TBS at a time until it reaches your desired consistency.

Grease a griddle or skillet by melting butter on it and moving it around until the surface is coated.&nbsp;

Pour ¼ cup portions of pancake batter onto the greased, heated surface.

Cook until bubbles start forming in the batter and the sides become set (about 2-4 minutes)

Flip and cook for 2-4 minutes on the second side, or until golden brown.
