Easy Lettuce Salad Recipe with tomato, cucumber, dill, onion, olive oil, salt, pepper and one secret ingredient that makes this green salad THE BEST healthy summer salad.

Lettuce Salad with Tomato and Cucumber

lb (2 medium) English cucumbers (coarsely chopped)

lb (4 medium) tomatoes (coarsely chopped)

lb (large bunch) any lettuce (coarsely chopped)

dill (finely chopped)

white or red onion (thinly sliced)

tbsp extra virgin olive oil

tbsp toasted sesame oil (optional (see notes))

salt

black pepper (to taste)

Garlic and vinegar (to taste (optional))

In a large bowl, add cucumber, tomato, lettuce, dill, onion, olive oil, toasted sesame oil, salt and pepper. The easiest is to prep and add ingredients in order as listed and as you are preparing them (washing and chopping the vegetables).

Toss gently just until combined.

Serve immediately or within an hour.

How to make Kale Apple Salad

A vegan salad that satisfies, loaded with healthy fats from creamy cashew dressing, toasted seeds, and avocado.

Summer Vegan Green Goddess Salad

(75 g) raw pepitas

fine sea salt,

Persian cucumbers, thinly sliced crosswise

heirloom tomatoes, cut into wedges (or 1 cup stemmed and halved cherry tomatoes)

firm-ripe avocado, peeled, seeded, sliced

hempseed hearts

yeast

flaky salt

black pepper

Toast the pepitas in a dry skillet over medium heat, shuffling the pan frequently, until puffed and golden, 3-5 minutes. Remove to a small bowl and toss with a little olive oil and salt to coat the seeds.

In a large bowl, combine the greens, cucumbers, tomatoes, and as much of the dressing as you like, tossing to coat the vegetables evenly. Gently toss in the toasted pepitas and avocado. Divide the salad among bowls and finish each with a good sprinkle of hempseed hearts, nutritional yeast, and a pinch or two of flaky salt and pepper. Serve right away.
