Homemade Tzatziki Sauce

If you have to cut up the wings into drums, wing, and other weird piece, this is the time to do it.  The easiest way I can say to do this is to bend the pieces at the joint and then cut it next to where the wing bent.  The knife should go through pretty easily and you shouldn&#8217;t have to saw too much.  If you are working hard at it, you&#8217;re not in the right spot.  Cut up the pieces, throw out the weird piece at the end and salt and pepper the wings.  Clean your hands and set aside the cutting board aside.  If you did not need to cut them up, then just take them out of the package, salt and pepper them, and set them aside.

Add all of the marinade ingredients to a large Ziploc bag, saving the olive oil for last.  Squish the marinade around in the bag until the garlic is broken up and the mustard is incorporated into the sauce.  Open the bag again and add the chicken.  Close the bag and shake the chicken around to make sure all the pieces are covered.  The chicken can marinate for 24-48 hours if you are looking to make ahead.  Otherwise it will still be delicious even with just a half hour. 

Heat up the grill.  The wings should take about 15-20 minutes on the grill.  You want to make sure that the wings are crispy and have some charred edges.  In the last few minutes of cooking, add the Naan or Pita bread to the grill to warm up.  Remove everything from the grill to a plate.  Top with parsley, red onion, and/or bits of feta (optional).  Serve with homemade tzatziki sauce.

Champion Chicken Seasoning

Set up your Pit Boss Grill. Once it’s fired up, set the temperature to 350°F. If you are using a charcoal or gas grill, set the temperature to medium high heat.

In a large resealable bag, combine the olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, Champion Chicken Seasoning, and chopped parsley. Seal the resealable bag and give it a good shake to mix the ingredients.

Once the chicken has finished marinating, remove the chicken from the marinade and drain. Place the chicken wings on the wing rack.

Place the wing rack on the grill and insert a temperature probe into the thickest part of one of the wings. Grill the wings for 5 minutes, then rotate, and grill for another 5-10 minutes, or until the internal temperature of the wings reaches 165°F.

Toss the wings in the large bowl with the melted butter and shredded Parmesan until well coated. Serve immediately.

Blot the defrosted chicken wings dry with paper towels.

Brush oil onto each side of the wings and sprinkle with seasoning.

Grill at 350° for 40 minutes or until wings are crispy. Flip halfway through. Serve hot. 

Marinated in onions, garlic and lemon with several warm spices, these Mediterranean-style Grilled Chicken Wings are infused with flavor in every bite. They take only 20 minutes to grill, but for best results, allow the wings sometime to marinate in the fridge.

Grilled Chicken Wings Recipe, Mediterranean-Style

red onion, quartered

extra virgin olive oil

lemons

sweet paprika

coriander

cumin

Aleppo pepper ((or 1/2 teaspoon red pepper flakes))

turmeric

Kosher salt

lemons, halved

In the bowl of a large food processor fitted with a blade, combine the onion, garlic, olive oil, lemon juice and spices. Pulse until well combined into a thick marinade.

Season the chicken wings well with Kosher salt and put them in a zip top bag. Pour the marinade over and zip the bag shut. Massage the bag a bit to distribute the marinade.

Lay the bag of wings flat on a large plate or tray. Refrigerate for 2 to 4 hours, turning the bag over once midway through.

Heat a gas grill to 425 degrees F and lightly oil the grates.

Shake off excess marinate then arrange the wings over direct heat. Cover the grill and cook the wings for 15 to 20 minutes, turning over every 5 minutes, until they are fully cooked through. Grill the lemons, flesh side down.

Serve the wings immediately with the grilled lemons. And squeeze the lemons all over to your liking. Add your favorite sauce for dipping (I like the coolness of Tzatziki yogurt cucumber sauce).

Amazing grilled chicken wings marinaded overnight in lemon pepper easy marinade.&nbsp;

Lemon Pepper Grilled Chicken Wings

tbsp fresh cracked black pepper

Gallon zip-lock bag

Combine lemon zest, lemon juice, pepper, vinegar, oil, and salt in a gallon size zip-lock bag. Close and shake to mix.

Add chicken wings and drumettes to the bag. Push out most of the air and close the bag. Spread the marinade and wings evenly in the bag. Place it on a large plate and refrigerate overnight.&nbsp;

Set the coals to the lowest level, farthest away from the grilling surface so that the outside of the wings don’t cook too fast.&nbsp;Get the grill temperature to about 350 degrees.

Grease the veggie basket with some cooking spray and place wings on it. Spread them out in one even layer.

Cook wings with the grill lid closed but check often to rotate and flip the wings to ensure even cooking.

Depending on thickness of the wings and drumettes, they should take about 20-25 minutes to cook. The very small drumettes will be ready faster, so take them off or move the off the coal side.

**Note: if you wish, save the marinade after the wings are done and simmer it for a few minutes. Use the cooked marinade as dipping sauce for the wings.&nbsp;

Grilled Chicken Wings Recipe

Prepare Grill

Preheat grill using two zone method or direct/indirect. Target 400 degrees Fahrenheit as internal cooker temperature. For this method, place the lump charcoal in a pile in the center of the grill.

Season Wings

Place dry wings in a one gallon plastic sealable bag. Then add the dry rub and corn starch. Seal the bag and shake it to season. Remove wings and place on a cookie sheet.

Grill Wings

Place the wings on the grill in a circle surrounding the heat source. Place cover back on grill and grill for 10 minutes.

Flip

After 10 minutes, flip the wings and cover again.

Flip Again

After 10 more minutes flip again, and grill for another 10 minutes. The wings should be crispy on all sides and read at least 170 degrees Fahrenheit. Remove and then place in the sauce.

Combine

In a small sauce pan over medium heat add the KC sauce, butter, and honey. Stir to combine until the butter is melted.

Place in Bowl

Place sauce in a large mixing bowl. Place wings directly from the grill into the sauce and stir to incorporate.

Serve

Serve with your favorite dipping sauce and sides, like carrots and celery.

Grilled Chicken Wings with Crispy Skin

Grilled chicken wings are one of my all-time favorite foods – I fell in love with them when one of our Milwaukee apartments was just around the corner from a neighborhood restaurant that served the BEST crispy char-grilled wings. When we moved out of the neighborhood &amp; out of the city, we craved them constantly, so my quest to figuring out how the to grill chicken wings perfectly began. 
It all comes down to 2 secrets: 

Beer brine. Soaking the chicken wings in a beer brine infuses them with rich, earthy flavor &amp; helps them stay super juicy &amp; tender on the grill. (Don't love beer? No problem. Check the Recipe Notes, below, for some easy swaps.)
2-zone grilling. Perfect grilled wings cook up 2 phases with 2 different heat zones. Gentle indirect heat slowly cooks the wings evenly &amp; prevents them from drying out or burning – they stay super juicy. Finishing them over direct hot heat creates delicious char &amp; makes them super crispy. (Never grilled with the 2-zone method before? No worries! Learn all about 2-zone grilling here.)

This particular recipe is written for grilled buffalo chicken wings (my go-to buffalo sauce is included below!), but it's a great base recipe to make whatever wings you love – BBQ dry rubbed, lemon pepper, teriyaki style wings, &amp; more. Brine the chicken wings in beer

Place the chicken wings in a large airtight container or resealable plastic bag. Pour the beer over top &amp; season with the kosher salt. Toss to combine well, ensuring all the of the chicken wings are submerged in the brine. Cover/seal &amp; transfer to the refrigerator to brine for at least 12 hours or up to 3 days. The longer you’re able to brine, the juicier &amp; more flavorful your grilled buffalo chicken wings will be.

Grill prep

About 30 minutes before you’re ready to grill, pull the wings out of the refrigerator to come to room temperature for more even grilling. Prepare your grill for indirect cooking, creating a zone of direct high heat &amp; a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling. (To learn more about zone grilling, be sure to check out this post.) This is also a great time to mix up the buffalo sauce – simply add the Frank&#8217;s RedHot Original, melted butter, garlic powder, &amp; smoked paprika to a small bowl &amp; mix to combine well.

Grill the wings with indirect heat

Once the grill is hot, place the brined chicken wings on the indirect side of the grill, shaking off &amp; discarding any excess beer brine. Arrange the wings as close to the fire as possible without being over the direct heat. Close the grill lid &amp; cook the wings with indirect heat for 7-10 minutes. Flip the wings, rearranging them so the wings furthest from the direct heat source in the first half of the cook are closest to the heat during the second half, &amp; vice versa. Close the grill lid &amp; cook the wings with indirect heat for 7-10 minutes more. If your wing sections are smaller, they’ll grill up in closer to 7 minutes per side, if larger it’ll take closer to 10 minutes per side – the goal is to cook the wings almost entirely with indirect heat.

Char the wings over direct heat

Arrange the cooked wings over the direct heat to finish them off with a good crispy char, about 2 minutes per side or until as charred as desired, carefully brushing with the prepared buffalo sauce as they cook.

Transfer the grilled buffalo wings to a serving platter, drizzling any remaining buffalo sauce over top. As desired, finish with freshly snipped chives or green onions &amp; crumbled blue cheese. Serve immediately with blue cheese dressing or ranch dressing. Enjoy!

I’m crazy picky about chicken wings. Mostly, crazy picky about texture. And this recipe gives the most perfectly charred/juicy wing! I was a bit nervous about the brine because I’m not a beer drinker but, trust me, nothing tops that flavor.

This is THE BEST wing recipe ever! I used this recipe the first time I ever tried grilling and these wings came out incredibly juicy and flavorful. Brining in beer and zone grilling is the way to go! I’ll never make wings any other way.

These look amazing. I am hoping to grill these up this weekend. We love buffalo, but my kids love lemon pepper. Have you ever tried with any other seasonings? Or any recommendations?

I used a dry rub instead of the brine (personal preference,) but followed your cooking times on my Weber kettle grill.  Your indirect-then-direct method worked perfectly with charcoal, too.  The wings were right around 165 degrees after the total cook time, and were super moist inside.  Most other grill recipes I've seen call for longer cook times, but the wings dry out if cooked much longer.  

I'm bookmarking this page as the best method.

Place wings directly on the grates, allowing excess oil to drip over the mixing bowl, then cook for 30 minutes over direct heat, turning every 5-10 minutes or so, until an internal temperature of 165F is reached. To cook the wings on a gas grill. Preheat a gas grill over medium-high heat to 425-450F. Place wings directly on the grill grates, allowing excess oil to drip over the mixing bowl, then cook for 20-30 minutes (this really depends on the size/thickness of the wings) over direct heat, turning every 5-10 minutes or so, until an internal temperature of 165F is reached.
