Grinch Cookies

white cake mix (432 g box)

unsalted butter (softened)

eggs (room temperature)

peppermint extract (or mint extract)

vanilla extract

green gel food coloring

sugar (32 g)

cornstarch

red heart-shaped sprinkle or cinnamon

Preheat oven.

Preheat the oven to 375°F. Line a large baking sheet with parchment paper and set aside.

Mix ingredients.

Use a hand-held mixer or stand mixer to mix together the cake mix, butter, and eggs until well combined.

Add extracts.

Add in the peppermint (or mint) and vanilla extracts and enough green food coloring to achieve your desired color. Mix on low speed just until combined. The batter will be thick and sticky.

Prepare powdered sugar.

In a small bowl, whisk together the powdered sugar and cornstarch.

Scoop dough.

Scoop the dough with a 1 1/2 tablespoon cookie scoop and roll the cookie dough balls in the powdered sugar mixture to coat. (The cookie dough itself is sticky so keep that in mind.) Place about 1 inch apart on the prepared baking sheet.

Bake cookies.

Bake for 10 to 12 minutes, or until the edges are set and the top of the cookies appear dry.

Add heart.

Remove the cookies from the oven and immediately place a heart-shaped sprinkle on each cookie, gently pressing it down so it sticks to the cookie.

Let cool.

Cool the cookies on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

Perfect for the holidays, these Grinch Cookies are wonderfully cakey with crispy bottoms. They&#039;re so easy to make without cake mix.

all-purpose flour ((300 grams))

sugar ((300 grams))

baking powder

salt

unsalted butter

eggs

cornstarch ((56 grams))

red heart-shaped sprinkles or cinnamon candies

Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.

In a large mixing bowl, whisk together the flour, 2 cups of powdered sugar, baking powder, and salt.

Cut the butter into tablespoons and drop the pieces into the flour mixture. Add the eggs and vanilla. Beat with an electric mixer on medium speed until combined. Add 2 drops of food coloring if desired, and beat until well incorporated, making sure there are no white streaks in the dough.

In a small bowl, whisk together the cornstarch and the remaining ½ cup of powdered sugar.

Scoop the dough into 1½ tablespoon-sized balls. Roll each between the palms of your hands to form a ball, then roll in the cornstarch mixture until well coated. Place each ball about  3 inches apart, on prepared baking sheets and slightly press down on the tops.

Bake for 12 minutes or until the cookies start to crinkle and are lightly browned on the bottoms. Remove from the oven and immediately press a heart-shaped sprinkle or candy on each cookie. Transfer to a wire rack and cool completely. Cookies can be stored in an airtight container at room temperature for up to 1 week.

Easy Grinch Cookies

Grinch cookies are an adorable holiday cookie recipe inspired by the classic Dr. Seuss character. These are soft-baked green sugar cookies flavored with peppermint, garnished with a heart that's two sizes too small!

(226 grams) unsalted butter,

1½ cups (285 grams) granulated sugar

teaspoon (5 milliliters) pure vanilla extract

½ teaspoon peppermint extract (optional)

cups (420 grams) all-purpose flour

½ teaspoon baking soda

½ teaspoon cream of tartar

½ teaspoon salt

Additional 1/2 cup granulated sugar

Electric Green Gel Color

Heart-shaped sprinkles

Preheat the oven to 350° F. Line a large cookie sheet with parchment paper or a silicone baking mat.

Combine the butter with the sugar and beat on medium speed until well creamed together.

Add the eggs, vanilla extract, and green gel coloring. Mix until well combined.

In a separate bowl, combine the remaining dry ingredients. Slowly add into the dough and beat on medium-low speed until well combined and dough forms.

Use a large cookie scoop and portion the dough. Roll each ball of dough in granulated sugar and then place each one about 2 inches apart on a baking sheet.

Bake at 350° F for 12-15 minutes. Immediately when pulled from the oven, place a heart-shaped sprinkle on top.

Allow the cookies to cool on the baking sheet for several minutes and then transfer to a wire rack to cool completely.

Authentically pleasing cookies that psy homage to the Grinch. Not your average Christmas cookie! My daughters loved helping and eating. I added 3 hearts to some since his heart grew 3 sizes that day.

Amazing! I made these today and they turned out perfect. I made mine with almond extract instead of peppermint, and I used a smaller scoop. I got 36 cookies when I made them a heaping tablespoon size (maybe 1.5-2 table spoons). Perfectly cooked at 11 minutes.

These vibrant green Grinch cookies with a red candy heart, will bring a whimsical touch to your holiday baking and delight any Dr. Seuss fan out there.

all-purpose flour

sugar

unsalted butter (softened to 65 to 67ºF (18 to 20ºC))

brown sugar (packed)

heart candies (or sprinkles)

Preheat the Oven – Set the rack to the middle position. Preheat to 350ºF (177ºC). Line two baking sheets with parchment paper.

Mix the Dry Ingredients – In a medium bowl, whisk together the flour, ½ cup of powdered sugar, baking powder, and salt.

Cream the Butter and Sugar – In a stand mixer or hand mixer fitted with the paddle attachment, add the butter, ¾ cup of granulated sugar, and brown sugar. Mix on medium speed (setting 5) until light and fluffy, about 2 minutes. Scrape down the sides and paddle.

Add the Eggs – Add the eggs, one at a time, mixing on medium-low speed (setting 4), for about 30 seconds each. Mix in the vanilla for 15 seconds.

Add the Color – Mix in enough food coloring until a bright green color is achieved. I use 8 to 10 drops of gel coloring.

Make the Dough – Gradually add the flour mixture in four additions. Mix on low speed until just combined. Let the dough sit for 10 minutes to thicken. It should feel like modeling clay.

Coat and Roll the Dough – Add ½ cup granulated sugar into a shallow dish. Add ½ cup powdered sugar into a separate shallow dish. Portion out 1 ½ tablespoons (1 ounce, 30 grams) of dough, then roll into a ball. Roll each ball in granulated sugar then transfer to the powdered sugar bowl and roll to coat. Repeat with the remaining dough.

Flatten the Dough – Evenly space the dough balls on the prepared baking sheets, at least 2 inches apart. About 12 cookies per sheet pan. Use the bottom of a measuring cup to flatten each ball into a 2-inch wide disc, about ½ inch thick.

Bake – Bake one sheet at a time until puffed in the center and the edges set, about 12 to 14 minutes. Rotate the pan halfway through.

Add the Hearts – Remove the cookies from the oven and immediately press one heart into the surface. I like to place them off-center to the right.

Cool – Leave the cookies on the sheet pan for 5 minutes, then transfer them to a wire rack. Cool completely before serving.

How to Make Festive Grinch Cookies!

Easy bright green Grinch cookies made with boxed cake mix! These cookies are soft and gooey, and decorated with tiny heart-shaped sprinkles, and powdered sugar. The kids can help you make these fun cookies!

cornstarch ((Cornflour in the UK and Australia))

canola oil (or vegetable oil)

eggs (at room temperature)

box cake mix

green food coloring

heart shaped sprinkles (or candy melts)

Preheat the oven to 350°F/180°C. Line 2 cookie sheets with parchment paper or silicone baking mats. Set aside.

In a medium sized bowl, combine powdered sugar with corn starch and set aside.

In a separate bowl, combine butter with oil and eggs. Using a hand mixer, beat until well combined (30 seconds).

Add the cake mix, and mix until combined. The batter will be thick.

Add green food coloring, and mix again. I used Wilton green leaf gel coloring. Add enough to reach the desired shade.

Using a small cookie scoop, scoop dough balls directly into the powdered sugar and corn starch mixture. The dough balls will be very soft. Gently roll in the mixture and transfer to the cookie sheets.

Bake - rotating the cookie sheet halfway through - for 8-10 minutes or until the cookies have puffed up. If you cook for too long, the edges will brown and change color so avoid that from happening.

Remove from the oven. Allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.

To decorate with hearts, use 1 tablespoon of the leftover corn starch and powdered sugar and mix with 1 tablespoon of water. Use this as glue and attach the hearts. Or use icing.

The dough was a lot thicker and stickier than I was prepared for what that might have been because my butter wasn’t as soft as it should’ve been in the beginning. Really great recipe. I took a picture I wish I could’ve posted.

These are a family favorite, just came back to grab the recipe and realized I didn't leave a comment. Tasty and not overly sugary. And totally cute.

We made these with the kids and it was so much fun. We didn't have the cute heart-shaped sprinkles (I just ordered some for the next time), but followed the recipe as written. It worked out perfectly. It was a fun afternoon activity. I enjoyed one with a cup of coffee and they had it with milk. I will be making it again.

Combine the cake mix, eggs and oil in a large bowl until mixed completely. Add green food coloring until the mixture is a deep bright green (like the Grinch!). It will become lighter as it bakes. Place the dough in the fridge for at least 20 minutes.

Add the powdered sugar to a large shallow bowl. Use a cookie scoop to scoop the chilled dough into balls and coat evenly in the powdered sugar.

Place the sugar covered dough balls on a parchment lined baking sheet and press the heart shaped sprinkles into the center of the dough.

Bake at 350°F for 8-10 minutes, let the cookies cool for 2-3 minutes on the baking sheet before transferring to a cooling rack.
