Very tasty, simple, and quick. Common ingredients that one usually has on hand! I used red onion instead of yellow and it came out great still. Next time I will add a bit extra tomato paste. Tip: drizzle extra yellow mustard over your own bowl before adding the parsley and pickles, super yummy!

I made this tonight and it was good! I cut down the Italian seasoning to just over a half a teaspoon.  I didn't use the mustard, due to sodium.  Excellent recipe. Thanks!

This Cozy Hamburger Soup = Comfort Food To The Max

This hearty hamburger soup is loaded with ground beef, potatoes and  an assortment of vegetables, all in a savory broth. The perfect easy dinner option that the whole family will love!

carrots (peeled, quartered and sliced)

celery (thinly sliced)

beef (I use 90% lean)

garlic

salt and pepper

can diced tomatoes (do not drain)

tomato sauce

beef broth

russet potato

Heat the olive oil in a large pot over medium high heat. Add the onion, carrots and celery to the pot.

Cook for 5-6 minutes or until softened.&nbsp;

Add the ground beef to the pot and season with salt and pepper to taste.

Cook, breaking up the meat with a spoon, until browned and mostly cooked through. Add the garlic and cook for 30 seconds more.

Add the tomatoes, tomato sauce, Italian seasoning, beef broth and potato to the pot; bring to a simmer.

Cook for 25-30 minutes or until potatoes are tender. Taste and add salt and pepper as desired.

Stir in the corn and green beans and cook for 5 minutes more. Sprinkle with parsley and serve.

Beef & Lentil Soup with vegetables

tbsp Moroccan spice mix (store-bought)

/ 28 oz crushed canned tomato

Yogurt ((plain or Greek))

Coriander/cilantro leaves, onions

Mix spices in a small bowl.

Saute onion &amp; garlic: Heat oil in a large pot over medium high heat. Cook onion and garlic for 3 minutes until golden on the edges.

Brown &amp; spice beef: Turn heat up to high, add beef and cook until it&#039;s no longer red, breaking it up as you go. Add 2 tablespoons of the Spice Mix and cook it for a further 2 minutes - it will smell so good!

Carrot &amp; celery: Add carrot and celery, then stir for 1 minute. (If using your own veg mix, add the veg in this step that will hold up to full 25 min simmer time)

Make broth: Add water, beef stock, canned tomato, lentils and remaining Spice Mix too. Give it a stir, bring to simmer, then place lid on and reduce to medium low so it&#039;s simmering gently. Lentils will take 25 - 30 minutes to cook until soft. Very old lentils can take 5 - 10 minutes longer.

Simmer 15 minutes then add zucchini &amp; green beans.

Simmer 10 minutes longer or until lentils are soft (ie. 25 minutes total).

Serve! Taste and add more salt if desired. Ladle into bowls and serve with yogurt and coriander.

My Grandma’s Hamburger Soup is comforting and delicious whether you make it with or without noodles.  Packed with seasoned lean ground beef, veggies and barley, it’s a hearty “stick to your ribs” kind of meal. Prepared on the stovetop or in a slow cooker, it’s a long time family favorite of ours.

Hamburger Soup With or Without Noodles

onions

carrots (sliced)

celery (sliced)

Egg Noodles (optional)

In a large pot, salt and pepper ground beef to taste, and brown it with your onions.

Drain. Place back in the pot. *at this point you could add ingredients to your crockpot or continue on the stove*

Add the rest of your ingredients and bring to a boil.

Reduce and Simmer for 1 1/2 hours.

Add your prepared noodles before serving if desired.

If you make it in your crockpot, just cook it on low all day.

½ lbs. ground beef

(1 ounce) packets dry Ranch salad dressing and seasoning mix

Brown the beef and onion in a large Dutch oven over medium-high heat until the meat is no longer pink. Drain off fat and return beef and onion to the pot.

Add remaining ingredients to the pot (do NOT drain the cans). Bring to a boil, reduce heat to low, and simmer (covered) for 1-2 hours. Taste and season with salt and pepper, if necessary.

Ladle into bowls, add desired toppings, and serve!

STOVETOP METHOD:

Brown the beef and onion in a large Dutch oven over medium-high heat until the meat is no longer pink. Drain off fat and transfer beef and onion to a slow cooker.

Add remaining ingredients to the slow cooker (do NOT drain the cans). Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Taste and season with salt and pepper, if necessary.

SLOW COOKER METHOD:

This Mexican sopa de coditos features elbow pasta, ground beef, and vegetables simmered in a flavorful and hearty tomato-based broth. It is a warm &amp; cozy soup perfect to serve for a family dinner!

Sopa de Coditos (Mexican elbow soup)

-7 oz package coditos pasta (elbow macaroni)

beef (or pork, chicken, turkey.)

vegetables

onion

Tablespoons olive oil (as needed)

chipotle in adobo peppers (optional)

cilantro (optional)

garlic (peeled)

cumin (to taste)

salt and pepper (to taste)

Place tomatoes, chipotle peppers (optional) onion, cilantro, and garlic cloves in a blender.

Add 1 cup of water and blend until smooth. Strain and set aside.

In a large pot heat the olive oil and fry the elbow pasta mixing continuously until nicely browned.

Remove the pasta from the pot with a slotted spoon and set it aside.

Add ground meat to the pot and season with salt, pepper, and cumin to your liking.

Break the meat with the back of a spoon and cook until slightly browned over medium-high heat (8-10 minutes).

Stir in the vegetables and cook for one minute.

Pour in the tomato sauce, cook for one minute, then add 6 cups of water.

Bring to a boil and then return the elbow pasta to the pot. Season with salt and cover the pot.

Cook everything for about 10 minutes or until pasta and vegetables are nicely tender.

Adjust seasonings to taste and turn off the heat.

Serve immediately with a squeeze of lime.

One-Pot Pasta and Ground Beef Soup

To a large Dutch oven or stockpot, add the beef, and cook over medium-high heat for about 5 minutes, or until done. Stir and crumble the beef as it cooks. I did not drain the beef but you can if desired; the fat keeps the pasta from sticking and adds flavor to the broth.

Add the garlic, stir to combine, and cook for about 1 minute or until fragrant.

Add the broth, tomatoes, oregano, 1 teaspoon salt, pepper, optional cayenne (doesn&#x27;t make the soup spicy but adds flavor), pasta, bring to a boil, and once boiling, cook uncovered for about 10 minutes or until the pasta is al dente.

Turn the heat off, add the spinach, basil, and stir until wilted.

Optionally add the lemon juice (it really brightens up the flavor of the soup and I recommend it), stir to combine, and taste the soup. If necessary, add more salt. Because I use lower/no salt-added products, I added a total of about 3 teaspoons salt but this will vary based on preference and products used; pasta is also bland and benefits from adequate salt.

Ladle into bowls and optionally garnish with Parmesan before serving.

My husband and I love this soup.  I used Italian sausage instead of of ground beef and added celery and zucchini to veg it up a bit.   I wish I could give this recipe ten stars!

Super easy and fast recipe.  I added a tsp of red pepper flakes because my family likes it spicy.  Next time I'm going to use Italian sausage for more flavor

I only added 32oz beef (stock) and about a cup - if that - of vegetable broth, only because I wanted it a bit thicker than soup (plus I only had the 32oz of beef stock!). Soak the Beans

Pre-soak your beans for 8 hours or use the quick soak method by boiling beans and water for 2 minutes, then covering and letting soak for 1 hour. Drain and rinse before use.

Prepare the Pressure Canner

Fill the pressure canner with a few inches of water as per manufacturer instructions and place on low heat with jars inside to keep warm.

Brown the Ground Beef

In a skillet, lightly brown the ground beef and set aside once cooked through.

Boil the Beans

Place drained beans in a pot with water, bring to a boil, cook for 5 minutes, then drain again to meet safe canning requirements.

Combine Ingredients

Return beans to the pot, add 12 cups broth or water, tomatoes, garlic, spices, corn, onions, and browned beef.

Cook the Soup

Bring the mixture to a boil on high heat, then reduce to a gentle boil for 5 minutes.

Fill the Jars with Solids

Remove the pot from heat and use a slotted spoon to evenly distribute solids into prepared jars, filling no more than halfway.

Add Liquid

Use a ladle to fill jars with remaining liquid, leaving 1 inch of headspace.

Remove Air Bubbles and Check Headspace

Use a bubble removal tool to remove bubbles and adjust liquid levels with boiling water if necessary.

Clean Jar Rims and Seal

Wipe rims with a damp cloth, place lids and bands on jars.

Load Jars into Pressure Canner

Place jars carefully into the pressure canner and secure the lid.

Vent Steam

Allow the canner to vent steam for 10 minutes to remove air pockets.

Process Jars

Process pints for 60 minutes or quarts for 75 minutes at pressure adjusted for your altitude.

Depressurize and Cool

Let the canner depressurize naturally, then remove jars and cool on the counter for 12 hours.

Check Seals and Store
