broccoli (roughly chopped)

apples (diced)

sweet onion (finely diced)

low sugar Craisins

sugar

Tablespoons apple cider vinegar

Dijon mustard

canola oil

black pepper

Salt,

In a large bowl, add broccoli, apples, onion, and Craisins. Gently mix together.

In a medium bowl, combine remaining ingredients.

Fold dressing into broccoli mixture until broccoli is completely covered.

Cover bowl and chill in fridge for at least 2 hours because serving to let the flavors meld together.

You could also make this dish the day before.

plain Greek yogurt

honey

apple cider vinegar

salt

celery seed (not celery salt!)

In a large mixing bowl, combine broccoli, onion, bacon, and raisins.

In a small bowl or measuring cup, whisk together dressing ingredients: yogurt, honey, vinegar, pepper, salt, and celery seed. Taste and add salt and pepper to season as you like.

Pour dressing over broccoli and stir to combine until all broccoli is coated with dressing.

For best flavor, refrigerate for at least one hour and stir again before serving.

No Mayo Broccoli Salad with Blueberries and Apple

Delicious, healthy broccoli salad recipe made with simple ingredients like fresh blueberries, carrots, sweet dried apricots, almonds and sunflower seeds. This easy, vegetarian broccoli salad is tossed in a light tahini dressing and is perfect for summer parties or meal prep!

Healthy Summer Broccoli Salad

For the salad:

carrots

apricots

cilantro

¼ cup finely chopped flat leaf parsley

½ cup toasted sliced almonds*

For the dressing:

drippy tahini

½ lemon, juiced (about 2 tablespoons fresh lemon juice)

water,

maple syrup

garlic clove,

¼ teaspoon salt, plus more to taste

In a large bowl, add finely chopped broccoli, blueberries, carrots, diced apricots, red onion, cilantro, parsley, toasted almonds and sunflower seeds. Set aside.

Make the dressing by whisking together the following ingredients in a small bowl: tahini, lemon juice, water, maple syrup, garlic and salt and pepper. Immediately drizzle over salad and toss to combine. Garnish with extra toasted almonds and cilantro. Serve immediately or place in the fridge for later. Salad will keep well up to 5 days and is great when made ahead of time.

Toss all the salad ingredients together in a bowl.

Pulse the dressing ingredients in a food processor until smooth. Pour over the salad ingredients and toss to combine.

Healthy No-Mayo Apple Broccoli Salad with Walnuts and Cheddar

Easy Healthy Broccoli Salad made with Greek yogurt for a crowd-pleasing summer side dish! Tangy, creamy, and just as good as the original.

lb broccoli, chopped into small pieces (2 medium heads of broccoli, florets only)

red onion, diced

roasted sunflower seeds

dried cherries, chopped (or dried cranberries)

tbsp extra virgin olive oil

tbsp white vinegar

tbsp honey

tsp fine sea salt

Plenty of freshly ground black pepper

Place chopped broccoli, red onion, sunflower seeds and dried cherries in a large mixing bowl.

In a small bowl, whisk together yogurt, olive oil, vinegar, honey, salt and pepper until smooth.

Pour over broccoli mixture and toss well until everything is coated. Taste and adjust seasoning if needed, adding more salt, pepper, or vinegar to get flavors to really pop if necessary. The broccoli will soften a bit and the salad will get even more flavorful as it sits.

Made this last night, no changes, to bring to a dinner gathering. So easy, so tasty, Everyone loved it! I did add bacon because I looooove bacon, but tasted it prior to adding and it was still great without the bacon. The dried cherries really make it sing. This is my new favorite side dish and will be in rotation all summer!

I just made the salad and it tastes of this world. I added some sundried tomatoes to add color to it plus I added some dijon mustard for more flavor. This is a great keeper for us.

Slices Uncured Bacon

C. Broccoli Florets (about 2 heads of broccoli)

Purple Onion, chopped

- 1/2 C. Dried Cranberries

C. Unsalted Sunflower Seeds (raw or roasted)

- 1 C. Organic Shredded Cheddar Cheese

Mayonnaise

Tbsp Raw Apple Cider Vinegar

Cook bacon in a skillet or oven until browned.  Let cool.  Once cooled, crumble into small pieces.

Add broccoli florets, crumbled bacon, chopped onion, dried cranberries, sunflower seeds, and shredded cheese to a large salad bowl and toss ingredients until combined.

For the salad base:

Add all sauce ingredients to a small bowl and whisk until fully combined.

Pour sauce over broccoli salad and mix until fully combined.

For best results, cover salad and let marinate in the refrigerator for at least 3-4 hours or overnight.  The longer it marinates, the better!

For the sauce:

Blanch the broccoli in boiling water for 1 minute. Drain and rinse with cold water.&nbsp;

In a large bowl mix together mayonnaise, vinegar and sugar. Stir well.

Add broccoli, bacon, onion, cranberries or raisins and almonds to a large bowl. Drizzle with desired amount of sauce.

Refrigerate for at least 1 hour before serving. Toss again to coat before serving.

Store in the fridge for up to 2 days.

Crunchy Broccoli Salad Recipe | Dairy-Free + 7 Ingredients!

broccoli florets (about 2-3 heads)

carrot, grated

Easy Vegan Mayo (or store-bought)

cranberries*

Salt and black pepper,

Wash and chop the broccoli, carrot, and red onion. Separate the broccoli florets from the stems. Chop the heads into small, bite-sized pieces, then peel the stems and finely dice them.

Add the vegan mayo and apple cider vinegar to the base of a large bowl, then mix well. Toss in the broccoli, carrots, and red onion, then mix until all pieces are evenly coated in the dressing. Fold in the sunflower seeds and dried cranberries, then add any additional salt and black pepper to taste.

Let sit for at least 10 minutes before serving to allow the flavors to combine. Refrigerate any leftovers in an airtight container for up to 5 days.

Excellent! I made with storebought mayo this time because I didn't have ingredients to make the homemade mayo, but I plan to try that next time--happy to heave the healthier alternative. Also used ready-shredded coleslaw mix bc I didn't have fresh carrots, and it turned out great! I can't wait for a potluck to take this to. :)

This is something I make on the regular now as a salad on the side, or I bulk it up for a complete lunch by adding chickpeas and extra veggies. I think it would also be amazing bulked up with baked tofu or tempeh (trying this next!). I've already reviewed this salad, but I love it so much I had to come back and review it again. :)

Healthy Broccoli Apple Salad with Greek Yogurt

Strips Bacon

Broccoli,

Cup Roasted, salted Sunflower seeds ((32 grams))

Cup Red onion, (thinly sliced)

Large Fuji apple, (roughly chopped)

Cup Non fat, plain Greek yogurt

Tbsp Honey

Tbsp Yellow mustard

tsp Apple cider vinegar

Salt, (or to taste)

Heat a large skillet on medium heat. Cook the bacon slices until golden brown and crispy on each side, about 2-3 minutes per side. Transfer to a paper towel lined plate and press out any excess fat.

In a large bowl, stir together all the salad ingredients. Crush up the bacon and stir it in.

In a medium bowl, whisk together all the dressing ingredients. Pour over the salad and toss until well coated. Season to taste with salt.

Cover and refrigerate the salad at LEAST 2 hours (up to overnight) to develop flavor and so the broccoli absorbs the dressing&nbsp;

Then, in a small bowl, combine the mayonnaise, lemon juice, honey, and cayenne pepper. Stir to combine.
