Healthy Buffalo Chicken Bowls

corn

black beans

avocados

cherry tomatoes (halved)

chicken breasts

TBS garlic (minced)

TBS your favorite ranch dressing

Cook chicken, garlic and hot sauce to slow cooker and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, shred it and set aside.

Next, drain and rinse your corn and black beans and add them to a bowl. Rinse and half your cherry tomatoes and add them to the bowl as well. Lastly, dice your avocados and add them to the mix!

Assemble your bowls by adding your veggie mixture, topping with chicken, and finishing them off with some healthy yogurt based ranch dressing (or whatever your favorite ranch dressing is).

These Buffalo Chicken Quinoa Bowls are topped with avocado, tomato, shredded buffalo chicken and ranch! Served on a bed of quinoa, football food just got a healthy facelift!

Buffalo Chicken Quinoa Bowls

chicken breasts, cooked & shredded

franks red hot sauce (origninal)

cream cheese, softened

quinoa

water

green leaf lettuce

cherry tomatoes, halved

avocados, sliced

red onion

cilantro

optional: drizzle ranch dressing

To a medium sauce pan, add quinoa and water. Bring to a boil. Cover, reduce to simmer and cook for 15 minutes. Turn the heat off and let the quinoa sit there for 5 minutes. Then fluff the quinoa with a fork.

In the meantime, add shredded chicken, franks red hot sauce, and cream cheese to a medium bowl. Mix everything together and make sure all the chicken is coated with the sauce.

Assemble the bowls. Add 3/4 cup of quinoa, 3/4 cup of lettuce, 1/2 cup of the buffalo chicken mixture, cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro. (optional: drizzle ranch dressing on top)

Loved this so much I am making it again tonight, one week later! I swapped the cream cheese with Greek yogurt to make it a little lighter and it was the perfect substitute. I also sprinkled a little feta cheese on the top before serving. My husband loves buffalo sauce so he loved this dish. Thanks for the recipe... it’ll be one we use often!

Looks great ! i love hearty chicken  is delicious and useful for health.chicken provide vitamin A and vitamin C, and chikcen low fat protein.

I needed to find a simple chicken recipe and found this one.  It was quick and easy.  My husband loved it.  I used another blog tip to shred the chicken with my hand mixer, which then. Add it easy to mix in the cream cheese and the sauce.  Very healthy and filling, but not a heavy meal.  We posted pics on FB, and everyone loved it!

Delicious high protein Buffalo Chicken Rice Bowls are made with chicken breast, black beans, brown rice, cheese and smothered in hot sauce. Perfect for meal prep!

Buffalo Chicken Rice Bowls

8 ounce boneless skinless chicken breasts (diced into 1/2 inch cubes)

olive or canola oil

paprika

tsp cumin

salt

canned low sodium black beans (rinsed and drained)

buffalo sauce (Franks)

brown rice

part-skim cheddar cheese (or dairy-free cheddar)

scallions

Heat oil in a medium pot over medium-low heat. Add onions and cook until they have caramelized slightly, about 5 minutes.

Add black beans, paprika, cumin and salt; stir to combine and heat through, 3 to 4 minutes.

While that cooks, heat a large skillet over high heat, when hot spray with oil and add the chicken.

Cook until browned and cooked through in the center, about 5 minutes, flipping so it cooks on each side.

Set aside in a medium bowl and toss with the hot sauce.

Pour 3/4 cup rice in each bowl, top each with 1/4 cup beans and cheese, divide the chicken over the bowls.

If eating right away, I like to melt the cheese by putting it in the microwave 30 seconds. Top with scallions.

To serve

Refrigerate up to 4 days. To reheat, microwave about 3 minutes or until heated through.

For meal prep

Buffalo Chicken breast stuffed with cheese, shredded carrots and minced celery, then rolled, breaded, baked and drizzled with hot sauce. Sound enticing? It should be, this is good stuff!

Stuffed Buffalo Chicken Breasts

cheddar

wedges Laughing Cow cheese

celery stalk (minced)

onion

carrot (minced)

salt and pepper (to taste)

chicken breasts cutlets (3 oz each)

Ritz

mayonnaise

tbsp Franks hot sauce

lemon juice

light butter

garlic powder

olive oil spray

Preheat the oven to 400°F. Lightly spray a baking dish with oil.

Mix cheddar, laughing cow cheese, celery, green onion, carrot, salt and pepper in a dish.

Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.

In one bowl make a breading station out of crushed ritz crumbs.

In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture.

Roll chicken breasts in the mayonnaise mixture, then into cracker crumbs, and put on a lightly greased pan, seam side down.

Lightly spray top of chicken with oil. Bake 30 minutes.

While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder.

Drizzle buffalo sauce over finished chicken breast and serve.

These potato skins are stuffed with shredded buffalo chicken breast made in the crock pot, topped with melted cheese, blue cheese dressing, carrots and celery – they are seriously delicious! What's football without the appetizers.

Buffalo Chicken Potato Skins

medium Idaho or Russet potatoes*

cooking spray

chicken breast (or tenderloins)

celery

garlic

fat chicken broth

hot cayenne pepper sauce (I used Frank's)

tbsp reduced fat shredded cheese

carrots

Skinny Blue Cheese Dressing

In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough).

Cover and cook on HIGH 4 hours or LOW 6 hours.

Remove the chicken from pot, reserve 1/2 cup broth and discard the rest (or save for other recipes).

Shred the chicken with two forks, return to the slow cooker with the 1/2 cup of the broth and the hot sauce.

Cook on HIGH for an additional 30 minutes. (Makes 1 1/2 cups chicken)

Meanwhile, pierce potato with a fork a few times all around.

Place in microwave and cook on high about 5 minutes per potato; set aside to cool.

Cut potatoes in half horizontally.

Scoop out potatoes (I save the extra potato to make skinny garlic mashed potatoes the next day) leaving about 1/4 inch thick wall, skins will weigh about 1 oz each.

Heat oven to 450°.

Lightly spray potato skins on both sides with oil and place a foil lined baking sheet.

Season with salt and pepper and bake 10 minutes.

Remove from the oven, add 2 tablespoons of chicken meat filling into each potato skin, top with 1 tbsp shredded cheese and bake 5 minutes or until cheese is melted.

Top each with 1 tsp blue cheese dressing, shredded carrots and celery and start eating!

This healthy buffalo chicken pasta bake is the BEST. It&#039;s creamy with a little spice and whole lot of flavor! It&#039;s quick, easy, and will be your new favorite dinner recipe.

Buffalo Chicken Pasta Bake

whole wheat penne pasta (cooked)

chicken (cooked)

plain greek yogurt

Frank's hot sauce

mozzarella cheese

cheddar cheese

green onions

Preheat oven to 400 degrees.

Spray a 9 x 13 casserole dish with cooking spray and set aside.

In a large bowl, combine the greek yogurt, ranch seasoning, hot sauce, and half of both cheeses. Mix well.

Add the pasta and shredded chicken to the sauce mixture. Stir until chicken and past are coated.

Pour the pasta mixture into the casserole dish. Sprinkle the remaining cheese evenly across the top of the pasta.

Bake for about 15 minutes, or until the cheese is melted.

After cooking, top with green onions.

Enjoy!

½ Cups Cottage Cheese (Fat Free, Reduced Fat,

Ounces Buffalo Sauce (Low Sodium Preferred)

½ Tablespoons Ranch Seasoning Mix (Low Sodium Preferred)

½ Cup Cheddar Cheese (or Other Cheese (Make sure it compliments the Buffalo))

Ounces Chicken (*Cooked (Rotisserie and Canned work great!))

Process or blend your Cottage Cheese, Buffalo Sauce, and Ranch Seasoning Mix together until smooth

Mix in your Cheddar Cheese and Chicken (shred or chop it up)

Pour your mix into a microwave safe dish

Microwave for :45 seconds

Mix everything around

Repeat until your mix is hot enough for you

Microwave Instructions (Fastest!)

Coat an oven safe dish or pan with non-stick cooking spray and pour your mix in

Optionally top it with some additional Cheddar Cheese

Bake it on 350F/176C for around 30-35 minutes or until your edges start to brown

Oven Instructions

Coat an air fryer safe dish or pan with non-stick cooking spray and pour your mix in

Cover your dish or pan with foil

Air Fry it on 325F/162C for around 15 minutes

Remove your foil and let it air fry for an additional 3-5 or until your see some browning

Instant Pot Buffalo Chicken

homemade buffalo sauce ((1 cup + 2 tablespoons))

chicken breast

salt and pepper, to taste ((depending on your buffalo sauce, you might not need any extra salt))

Pour 1/4-1/2 cup of the buffalo into the bottom of your Instant Pot and spread around. The amount will depend on the size of your instant pot, but you want it to cover the bottom of the pan.

Add chicken breasts and season with salt and pepper if desired. Close Instant Pot lid, make sure vent is set to seal, and set to poultry mode on high pressure for 13 minutes. Manually release pressure when done.

Open the lid and set it to saute mode for 5-10 minutes to help absorb excess liquid (the chicken gives off liquid as it cooks). While Instant Pot is on saute mode, shred chicken with two forks. Be careful as the pot will be hot. Once most of the liquid is absorbed (you still want some - about 1/3-1/2 cup left/in the pot), turn off Instant Pot.*

Pour in the rest of the buffalo sauce (about 1/2-3/4 cup) and stir to combine. Enjoy however you like!

Absolutely love this recipe! I’ve had it way too many times and love it so I’m wondering if I can do the same but with bbq sauce? I want to make bbq pulled chicken sliders and it use our Ninja pressure cooker.

Great recipe, quick to make and VERY versatile. I used this to top some twice baked potatoes--delish! And it's a big batch, so we had leftovers for some tasty sammies. :)

Made this as a meal prep last week and my husband and I loved it! We primarily had it on salads and wraps with some homemade ranch dressing. Definitely getting added to the regular meal rotation. This might be my new favorite way to prepare shredded chicken it was so quick and easy! I'm thinking about trying it with enchilada sauce instead of buffalo sauce next time I want to make enchiladas.

Delicious! Although I must’ve done something wrong. I used franks red hot Buffalo sauce and I added the whole bottle (I was getting a bit confused) so that PLUS the salt I added to the chicken made it super duper salty. No ones fault but my own. I must’ve read the directions wrong but I’m going to remake it another time and maybe do the homemade Buffalo sauce.

Tonight, I used this recipe for the second time; however, this time I made BBQ pulled chicken instead of buffalo chicken. I swapped the 1/4 cup of buffalo sauce for chicken broth (and I added a 1/4 teaspoon of liquid smoke) when cooking and added BBQ sauce, a tablespoon at a time, while cooking off the liquid. It turned out well- I will definitely try this again in the future.

Soooo juicy and delicious!! We used chicken thighs &amp; I accidentally hit the porridge button on the instant pot but it still worked out 🤣 adding to the weekly rotation for sure.
