Everything is cooked together in a parchment paper pouch creating an almost mess free dinner that's not only easy, but yummy and good for you too! Best part? It's ready in just about thirty minutes.

Parchment Baked Lemon Salmon And Potatoes With Dill Yogurt

extra virgin olive oil

garlic,

kosher salt and pepper

arugula and basil,

plain greek yogurt

red pepper flakes

Parchment Baked Lemon Salmon and Potatoes with Dill Yogurt

1. Preheat the oven to 400 degrees F.&nbsp; Fold 4 large pieces of parchment paper (about 15x16 inches) in half. Open, and lay on half flat.&nbsp;2. In a small bowl, stir together the olive oil, garlic, juice of 1 lemon, dill, smoked paprika and a pinch of salt and pepper.&nbsp;3. Working on one side of the creased parchment, layer the potatoes, and season with salt and pepper. Place the salmon over the potatoes and drizzle with the olive oil sauce, and top with 2 lemons slices. Repeat with the remaining ingredients to make 4 packets.&nbsp;4. To close, fold the parchment over salmon, pinching to seal the open sides and create a half-moon-shaped packet. Place on a rimmed baking sheet. Transfer to the oven and bake until the potatoes are tender, about 18-20 minutes.&nbsp;5. Meanwhile, in a medium bowl, stir together the yogurt, lemon juice, dill, and a pinch of crushed red pepper.&nbsp;6. Serve the salmon topped with dill yogurt, arugula, and basil. Enjoy!&nbsp;

Shredded Teriyaki Chicken Salad Recipe by Tasty

Make the teriyaki sauce: In a liquid measuring cup or medium bowl, combine the brown sugar, soy sauce, lemon juice, sesame seeds, ginger, and garlic. Whisk to combine and dissolve the sugar.

Butterfly the chicken breasts, then place in a high-walled baking dish. Pour the teriyaki sauce over the chicken, reserving ½ cup (120 ml) of the sauce. Cover the dish with plastic wrap and marinate the chicken in the refrigerator for 20 minutes.

Preheat the oven to 375˚F (190˚C). Line a baking sheet with foil.

Make the dressing: While whisking, slowly drizzle the olive oil into the reserved teriyaki sauce.

Transfer the marinated chicken breasts to the prepared baking sheet. Bake for 25-30 minutes, or until the internal temperature reaches 160˚F (70˚C). Let cool for 10 minutes.

In a medium bowl, use 2 forks to shred the chicken. Pour ¼ cup (60 ml) dressing over the chicken and toss to coat.

Prepare the salad: Add the lettuce to a large bowl. Top with the mango, bell peppers, green beans, avocado, and shredded chicken. Add the remaining dressing and toss well.

Divide between serving bowls and top with the scallions.

This comfort oozing Kedgeree recipe is a real crowd pleaser. Kedgeree is a delicious and easily made breakfast, lunch or dinner. Being extremely versatile makes it the perfect dish to use up leftovers or to miraculously cure a hangover.

Easy &amp; Healthy Kedgeree Recipe

brown basmati rice

undyed smoked haddock fillets (from sustainable sources)

red onions

red chilli

coriander

garlic

ginger

unsalted butter

curry powder

greens

peas

lime

eggs

Thoroughly rinse the rice with water. Add the rice to a saucepan, pour in about 5 times the amount of water to rice and cook it accordingly to the time on the package instructions. Pour the rice into a colander, rinse with cold water and set aside.

At the same time, heat salted water in a big pan and poach the smoked haddock fillets for 10 minutes. Remove the fish with a slotted spoon and peel off the skin. Bring the water back to a simmer to poach the eggs.

Meanwhile, peel the onions and finely slice with the red chilli (deseed if you like) and coriander stalks. Peel and finely chop the garlic and ginger. Place it all in a large frying pan on a medium heat with 1 tablespoon of oil and the butter, and cook for 10 minutes, or until soft but not coloured, stirring occasionally.

Stir in the curry powder.

Slice your leftover vegetables and add them to the pan along with the frozen peas. Gently fold in the rice using two forks so that it remains fluffy.

Flake in the poached fish, gently fold again, season with sea salt, black pepper and lime juice, then keep on a low heat for just 3 or 4 minutes while you poach the eggs to your liking in the simmering water.

Place the eggs on top of the kedgeree and scatter over the coriander leaves.

As well as being tasty, this aubergine and artichoke is low fat, low calorie and cost effective. Make a large batch and eat it cold the next day

Heat 2 tbsp of the oil in a large <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">non-stick frying pan</a> or paella pan. Fry the aubergines until nicely coloured on all sides (add another tbsp of oil if the aubergine begins catching too much), then remove and set aside. Add another tbsp of oil to the pan and lightly fry the onion for 2-3 mins or until softened. Add the garlic and parsley stalks, cook for a few mins more, then stir in the spices and rice until everything is well coated. Heat for 2 mins, add half the stock and cook, uncovered, over a medium heat for 20 mins, stirring occasionally to prevent it from sticking.

Nestle the aubergine and artichokes into the mixture, pour over the rest of the stock and cook for 20 mins more or until the rice is cooked through. Chop the parsley leaves, stir through with the lemon juice and season well. Bring the whole pan to the table and spoon into bowls, with the lemon wedges on the side.

Cod filets (we used frozen)

unsalted butter (melted)

all-purpose flour

garlic powder

Salt and pepper

Place flour and garlic powder in a shallow dish and whisk together. Salt and pepper both sides of the filets. Dip each filet in the flour mixture and coat both sides. Gently shake off excess flour.

Put olive oil in a large skillet and heat the oil on medium high heat. Cook the cod filets in the hot oil for about 5 minutes per side or until fish flakes with a fork. About a minute before the fish is done brush the butter on the fish. Serve.

Eat your greens! This healthy salad makes the most of seasonal produce.

Congee With Miso Sauce

rice

chicken stock chicken bullion powder

white miso paste

soya sauce

green onion (thinly sliced)

boiled eggs to add on top (optional)

chili oil

Clean the rice several times to remove excess starch and then, drop it in a saucepan along with the stock or water along with the bullion powder. If the stock does not have salt, you might have to add some according to your taste. Turn on the heat and bring it to a boil. Then, turn down the heat to low and allow it to simmer for at least an hour, stirring in between, until the rice almost cooked through and turns creamy.

Mix the miso paste with soya sauce, add it to the congee and stir it around.

Drop the assorted veggies, keep it in the low heat  and simmer for 5 minutes. If the consistency looks too thick, add water to thin it out.

Sprinkle chopped green onion on top and serve warm along with half boiled eggs.
