tsp baking powder

cocoa powder

maple syrup

almond milk (or any other milk)

stevia (optional)

egg white (or 3T liquid egg whites)

 Mix all the dry ingredients (almond flour, baking powder, cocoa powder) in a small mug or ramekin. 

Beat the egg white until it starts to froth.  

Add egg white, maple syrup, milk, and stevia drops into the mug/ramekin and stir until combined.*

Microwave for 60-90 seconds or until the cake is fully set (no runny parts on the top.)

In a microwave-safe mug or bowl, add the first 6 ingredients and mix well to combine.

Add flour and baking powder and mix until just combined. Do not overmix.

Swirl in peanut butter, and top with chocolate chips.

Microwave for 1.5-2 minutes or until center is cooked through. Be careful not to overcook it though!

Begin by microwaving on high power for 50 seconds. Then microwave for another 10 to 20 seconds, depending on how much the cake has risen and whether the center appears firm. In my microwave, this recipe comes out just right with a cook time of 70 seconds. If using a smaller, older, or lower wattage microwave you may need to add more time (do this in 10 to 15 second intervals.)

For other people subbing, I only had maple syrup so I used a 1/2 tbsp of that instead of coconut sugar, and no vanilla essence cuz my protein powder’s quite flavourful + I’m using soy milk, and it was great. Have also been experimenting with adding more protein (extra tbsp, with corresponding extra 1/2 - 1 tbsp of milk) and next am going to try some frozen berries. Such a forgiving recipe everything seems to work!!

I used rice flour (oat allergy) with casein whey, and skinny syrup.  It came out with an English pudding consistency.  Very tasty!  An easy allergy swap with awesome results!

Take a sweet potato, poke holes in it, wrap it in a damp paper towel and microwave for 5 minutes.  When done (be careful it&#8217;ll be hot), cut in half and scoop out flesh and mash with a fork. Measure out 6 tablespoons to use, keep the rest for another recipe.

Take your sweet potato and combine it with the rest of your ingredients (except chocolate chips) in a large mixing bowl, stirring until well combined.  Fold in chocolate chips.

Pour batter evenly into two ramekins, or microwave safe mugs.

Microwave each, separately, for 80 seconds.  Enjoy!
