Pasta with Spinach &amp; Roasted Red Pepper Pesto

Pasta

almonds

Orecchiette Pasta with Broccoli Sauce - a simple vegetarian pasta dish hailing from Tuscany that is easy to make, healthy and oh so delicious!

Orecchiette Pasta with Broccoli Sauce 

broccoli florets-

short pasta- orecchiette pasta, penne, rigatoni, etc

shallot,

garlic cloves- rough chopped

chili flakes

salt and pepper, more to taste

miso paste (or sub 1-2 mashed anchovies)

veggie broth or chicken broth

lemon zest

Steam small broccoli florets until very tender (easily pierced with a fork)and set aside.

Cook the pasta in 8 cups water with 1 tablespoon salt (measure),  Save a cup of hot pasta water when you drain.

In a large pan, saute the shallot and garlic and chili flakes in the olive oil, over medium heat until fragrant and golden, about 3 minutes.  Stir in the miso paste (or anchovy), then add steamed broccoli,  salt, pepper and the broth.

Bring to a gentle simmer and start breaking apart the broccoli with a metal spatula into tiny pieces. As it cooks it will get easier to break apart. You want the broccoli to basically melt down into a &#8220;sauce&#8221;.  Continue simmering gently on low heat until half of the liquid evaporates and it becomes the consistency of a thick sauce, about 10-15 minutes.

If it seems watery and separated, just keep cooking it down. It won&#8217;t be smooth- but just broken down and very very tender.

Add the pasta. Toss well. Add more hot pasta water to keep it &#8221; saucy.&#8221; Add the lemon zest.

Taste for salt, adjust, adding more along with pepper, chili flakes. If you want more richness add another splash of olive oil (or pat of butter- my husband loves this). Stir in some optional pecorino.

Divide among pasta bowls and top with any of the garnishes you like. Grated Parmesan or pecorino  adds depth,basil ribbons add flavor, and a drizzle of truffle oil elevates.

My wife and I have been making this recipe once a week for the last year. 

Slight alterations: we steam the broccoli in a pressure cooker, and add a little extra garlic and chili.

I see some people complaining in the comments about losing the vibrant green color. A simple solution is to add a quarter teaspoon of sodium bicarbonate to the steaming water. And there you have it. Emerald green broccoli!

Easy and delicious.  I added all optional ingredients except truffle oil and anchovie paste, and only pecorino cheese, however to me something was missing, I added organic fire roasted diced tomatoes and voila perfecto! Will be having once a week from now on,  thank you!

I love this recipe, great for meal prep for work. I stir in baby spinach and green peas at the end , the peas give it a pop of flavour. Make this every month in big batches. Thank you !

Thank you, finally someone who has recipes for us who are trying to eat more plant based meals. So many of the Vegetarian recipes are to over board with items that the rest of us are not familiar with and we don't want to spend a lot of money buying if we aren't going to like it. Additionally someone who posts the nutritional values, with so many people on diets I think that it is adding to the problem because many people have no ideal how many calories are in a recipe. I saw a recipe the other day that looked healthy and sounded good but it had over 800 calories in a serving and this wasn't a Keto recipes. Love your site

Turned out really well.  I added ground pork to it and a little whole milk at the end to make it creamy.  Great way to "bury" some broccoli in dinner.  It is impossible to pick it out!.  My 11 year-old son loved it.

A simple delicious vegetarian recipe for Orecchiette Pasta with Broccoli Sauce – full of flavor and nutrients! 

This is one of my husband's all time favorites now! We make it about twice a month and finish it with home made pesto. The red pepper flakes gives it a nice kick and the miso adds depth. It's great leftover too!

Wow!   Such a great recipe to use broccoli as a pasta sauce.  So healthy and I noted some comments that after cooking the steamed broccoli in the sauce to break it up the bright green color was diminished.  I added a “pop” of green of a cup of frozen peas to the sauce for about a minute to upped the green theme.

Delicious, nutritious, and easy to make! Made for great leftovers, too!

I ran across this recipe while searching ramdomly for something vegetarian to cook a few days ago.  After making sure I had all the ingredients, I made it last night.  It was absolutely delicious, worthy of 5 stars.  I had to adapt the recipe to accomodate a low-FODMAP diet, so I cut out the fresh garlic and shallot and used a garlic-infused olive oil instead. I opted for anchovies (I fudged a little bit here), toasted pine nuts, Kalamata olives, and added small cocktail tomatoes because we love tomatoes.  I added a dry cheese I had on hand and the whole dish was PERFECT!  I also copied a few Mexican recipes from this site this morning,  I'll let you know how it goes.

This is honestly my most favourite recipe ever, I make it all the time!

Thank you for this recipe.  It was very tasty for a dish that is quite healthy.  I had the bolognese over zucchini noodles vs. pasta; and for leftovers just ate it by itself.  It was very good.  I added a little red pepper flakes for some kick but otherwise followed the recipe exactly.

I’ve made this a bunch of times, as written (choosing red wine). It smells great, is healthy and has lots of veggies...a great family meal.

Very good! We made this with zoodles so that we could have garlic bread on the side with less carbs. I also added some dried bay leaves and a little crushed red pepper.

Made it for the 1st time tonight.  Used white cooking wine instead of red (didn't have it) & used sweet Italian sausage instead of turkey sausage (didn't have it).  Was a big hit with the family.  Will make it again.

This was DELISH!!!! I didn't use wine, celery, or parsley because I didn't have any, and used spaghetti instead of angel hair, so I can only imagine how good it would be when made 100% properly. It has such a good flavor. I did do a splash of chicken broth to make up for no wine. But wow wow wow I can't wait to make this for my family some day, they would love it!

Have made this countless times.  It never disappoints.  I serve over spaghetti squash and it makes for an almost zero point weight watchers meal.  I add additional red wine, extra fresh parsley, a little extra oregano and also add some crushed red pepper.

Place water and salt in a medium pot and bring to boil over high heat. Add optional olive oil ( to prevent sticking)

This Shrimp and Orzo one pan meal cooks up quickly in a broth based sauce. &nbsp;Add any or all of your favorite veggies to make it different every time!

20 Minute One Pan Shrimp and Orzo Dinner

shrimp . Thawed if frozen. (31-40 count)

Heat large skillet to medium high heat.

Add butter and olive oil. Heat until butter is melted.

Add onion, garlic and orzo.

Cook for 3-4 minutes until onion is translucent and orzo is slightly toasted.

Add chicken broth, salt and pepper.

Reduce heat to medium. Cover and cook for about 10 minutes, stirring occasionally, until orzo is soft and just a small amount of liquid remains in the pan.

Toss in the shrimp, lemon juice, peas and basil. &nbsp;Stir and cook for an additional 5-6 minutes or until shrimp is cooked through and peas are warm.&nbsp;Add 1/2 cup grated parmesan, stir until combined.

Garnish with lemon slices and additional grated parmesan.

In large, deep skillet with a lid (or a dutch oven), heat olive oil over medium-high heat. Once the oil is hot but not yet smoking, add the ground chicken, onion, and red and green bell peppers. Brown the meat, breaking it apart with a spoon, until it is fully cooked through and the onions are translucent, about 8 minutes.

Add the garlic, chili powder, cumin, oregano, salt, and pepper and cook just until the garlic is fragrant, about 30 seconds. Add the water, salsa, tomato sauce, pasta, and beans.

Simmer

Reduce the heat to medium low, then cover the pan. Let simmer gently, stirring occasionally, just until the pasta is al dente and most of the liquid is absorbed (more liquid will absorb as it cools), about 12 to 15 minutes. As you stir the pasta while it cooks, check to make sure it&#39;s not becoming dry. If it is, stir in water as needed to keep it moist and simmering.

Sprinkle

Remove the pan from the heat and stir in half of the cheese, then sprinkle the remaining cheese on top. Serve hot with any of your favorite toppings.

Pasta with Italian Chicken Sausage, Peppers and Escarole is an easy weeknight dish!

Escarole Pasta with Sausage and Peppers

escarole

pasta (white, whole wheat

olive oil (extra virgin)

red bell pepper (chopped)

garlic (chopped)

tsp crushed red pepper

Rinse escarole and tear into bite sized pieces.

Cook pasta in a large pasta pot of salted water according to package directions for al dente.

Reserve 1 cup water before straining.

Meanwhile, while pasta water boils, heat a large non-stick skillet on medium heat.

Add olive oil; when hot add onions, peppers, garlic, salt and pepper. Cook until soft, about 4-5 minutes.

Add sausage, breaking up with a wooden spoon and cook until golden, about 6 to 8 minutes.

Add escarole, cover and cook 2 minutes; remove the cover, stir and cook about 3 more minutes or until wilted. Adjust salt and pepper to taste.

Add the cooked pasta, crushed red pepper flakes, reserved water and Parmigiano Reggiano, toss well and transfer to a large serving bowl.

Skinny taste is always a hit in my house. This is a fast and delicious dinner. I made a gluten free pasta and a regular pasta and just used the prepared ingredients as a sauce/topping. The grated cheese and red pepper flakes really hit the flavor.

This is amazing. We added half a bulb of fennel only because we had it in the fridge and wanted to use it up. Ice addition. This will be in our regular rotation!

I was using up what I had in the fridge and decided that this recipe would work the best with what I had on hand. I used hot Italian sausage, and asparagus instead of escarole because I didn't want to go to the store. It was fabulous!! I blanched the asparagus then added it in place of the escarole. It was so delicious!! I can't wait to try it as written, but this is a forgiving recipe if you need to make some changes. Many thanks.

I make this all the time!  Peppers, onions, celery, Lv it! Chicken broth yes a must with pasta water.

I’ve made a “not so light” version of this but wanted something lighter, especially after Thanksgiving. This was delish! I used spinach and added a splash a white wine. Also added some better than bouillon to the pasta water.
As others said, may add some tomatoes and mushrooms next time.

So easy and yummy! I used kale and chickpea pasta. I added bone broth instead of the pasta water.  I also threw in mini tomatoes.  Soo good.

I made this recipe with Impossible Sausage (spicy) and added zucchini instead of escarole which sadly I did not have - but I have plenty of zucchini! lol  The Impossible Sausage comes in a 16-oz roll and is easy to crumble and brown. This was an amazing recipe and sooo good. It is in my family's regular dinner rotation now.

This was another amazing recipe! It tasted like something you would order in an Italian restaurant!! The only thing that was odd, I couldn't break up the texture of the Al Fresco sausage so I had to cut it into pieces (almost chopped), Other than that, it was delicious!!
