These Blueberry Protein Balls are made with healthy dates, crunchy nuts and sweet dried blueberries and packed with flavor, protein and nutrition. In just 10 minutes, you can whip them up for an easy grab-and-go breakfast or pre-workout snack! Gluten-free, grain-free, vegan, paleo and freezer-friendly!

Blueberry Protein Balls

cashews

pecans

vanilla

medjool dates (pitted, about 8)

blueberries

almond butter

tsp vanilla extract

sea salt

Place the cashews and pecans in a food processor and pulse until finely chopped.

Add the remaining ingredients and pulse until the dates are broken down and the mixture clumps together.

Roll a half-tablespoon-size of the mixture into a ball with your hands. Repeat with remaining mixture. This will make about 14 balls. 

Keep in the fridge or freezer in an airtight container.

Raspberry Bliss Balls

tbsp unsweeteend shredded coconut

Medjool dates (, pitted)

cashew butter

plant-based protein powder (, I almond flour)

coconut butter (manna)

Place the cashews in a food processor and blend until finely chopped.

Add the remaining ingredients and pulse until the dates are broken down and the mixture clumps together. Add more almond meal or cashew butter as needed, for the mixture to stick together.

Use a small cookie scoop or scoop out a tablespoonful of mixture and roll into a ball with your hands. Place on a parchment lined baking sheet. Repeat with remaining mixture.

Place the baking sheet in the freezer for 10 minutes.

Meanwhile, melt the coconut butter over a double broiler on the stove or in the microwave. Stir frequently and if using the microwave only do for 15- 20 seconds at a time till completely melted. Remove the bliss balls from the fridge and drizzle the melted coconut butter on top. Allow to set and transfer to an airtight container and store in the fridge for up to 7 days.

Golden Oreo Protein Truffles

Vanilla Sandwich Cookies (Sugar free recommended below)

Vanilla Protein Powder (30 grams)

Oat Flour (22 grams)

Coconut Flour (28 grams)

Tbsp Unflavored Protein Powder (11 grams, see post for subs)

Unsweetened Almond Milk (60 milliliters)

½ scoop Vanilla Protein Powder (15 grams)

Tbsp Non-fat Greek Yogurt (14 grams)

Cream filling from Sandwich Cookies

1½ Tbsp White Chocolate Chips (Sugar-free recommended, 21 grams)

¼ tsp Coconut Oil

Place biscuit part (remove cream) of sandwich cookies in a food processor and process until crumbled (or crush in a zipper bag with rolling pin).

Transfer to bowl, add vanilla protein powder, oat flour, coconut flour and unflavored protein powder.Add almond milk - little at a time - util a dough is formed.Add milk if the mix is too dry or coconut flour if the mix is too wet.

Divide into 10 portions, roll into balls.

In another bowl, mix cream filling from sandwich cookies, vanilla protein powder and Greek yogurt.Mixture should be thick but smooth and rollable.Add milk if too thick, coconut flour if too thin.

Divide into 10 portions and roll into balls.

Take one dough piece, flatten, press a depression, place a filling piece in the middle and cover up. Roll into ball again.

Center:

Place chocolate chips and coconut oil in a shallow bowl and microwave for about 30 seconds - at 15 second intervals - until it’s completely melted. Let cool about 5 mins.

Line a plate or baking sheet with parchment paper.

Place the protein balls, one at a time, in the melted chocolate, and use 2 forks/spoon to roll it around until slightly coated (I do one side)Optionally spread chocolate on top with spoon.

Place on plate to harden.

No-Bake Quinoa Protein Bites

quinoa, (cooked)

oats, (gluten free, raw, not cooked)

maple syrup, (light

Tablespoons ground flax seed

peanut butter

vanilla extract

cinnamon, (ground)

salt

mini chocolate chips

vanilla protein powder

powdered sugar, (optional)

Line a small baking sheet with parchment paper.

Cook the quinoa according to package instructions.

Once the quinoa is cooked, combine all ingredients in a bowl, stir until well incorporated.

Using your hands, roll the mixture into small balls. You can make them into 1 inch or 2 inch balls.

Put the balls on the lined baking sheet and put into the freezer for 6 hours.

Once they've frozen, transfer them into a freezer safe ziplock bag and store in the freezer.&nbsp;

roasted unsalted almonds

vanilla no-added-sugar protein powder

20.00 gm unsweetened cocoa powder

(1/3 cup) smooth peanut butter

4.40 gm vanilla extract

fresh medjool dates, pitted

milliliters (¼ cup) unsweetened almond milk

Step 1

Place almonds in a small food processor and process until finely chopped. Add protein powder and cocoa, and process until combined. Add peanut butter, vanilla, dates and almond milk. Process again until the mixture comes together in a ball, adding a little extra milk, 1 tsp at a time, if required (see tips).

Step 2

Transfer mixture to a clean bowl and roll into 10 even balls. Place, without touching, on a tray or plate. Dust with extra cocoa powder.
