One of our most popular salad recipes! Corn, tomatoes, cucumber and avocado are simply dressed with a hint of lime.

45 Healthy Salad Recipes - Corn Avocado Salad

corn corn kernels)

lb mini cucumbers or 1 large English cucumber (sliced)

lb grape/cherry tomatoes (cut in halves or regular size, chopped)

avocados (cubed)

green onion sprigs (finely chopped)

lime (zest and juice of)

olive oil (extra virgin)

tsp salt

black pepper (to taste)

To grill corn, remove it from the husk and grill on medium heat for approximately 20 minutes. Turn every 5 minutes.

To cook corn in Instant Pot, add 1 cup water, trivet and as many corn as you can fit. Pressure cook on High Pressure for 2 minutes and then release pressure right away.

If using frozen corn, run it in a colander under warm water for 1 minute and drain.

Cut off cooked kernels from the cob by slicing them with a chef's knife. You will end up with strips of cooked corn.

Add cooked corn, cucumber, tomato, avocado, green onion, lime zest and juice, olive oil, salt and pepper to a large salad bowl.

Sir salad gently and serve cold with chicken, salmon or shrimp.

Store: Refrigerate covered for up to 1 day.

How to make Kale Apple Salad

This healthy salad can be prepped in advance for a healthy lunch on-the-go.  It&#039;s gluten free and paleo.

Loaded Burger Bowl Salad In A Jar (with homemade Thousand Island Dressing)

lb 85% Lean Grass-Fed Ground Beef

Yellow Onion, finely diced

Paprika

tsp Garlic Powder

Sea Salt

tsp Black Pepper

tsp Onion Powder

Cayenne Pepper (optional)

Slices of Turkey Bacon, cooked & cut into bite-size pieces

Red Onion, finely chopped

C. Cherry Tomatoes, halved

C. Dill Pickle Slices, chopped

C. Organic Shredded Cheese (optional, eliminate for strict Paleo)

C. Romaine Lettuce, chopped

Tbsp Organic Ketchup

Tbsp Tomato Paste

tsp Raw Honey

tsp Apple Cider Vinegar

Tbsp Organic Pickled Relish (sweetened

Tbsp Water

Add ground beef to a skillet over medium heat.  Once it's about 50% done, add all of the beef seasonings.  Mix until fully combined.  Then, add the chopped yellow onion.  Continue cooking until the ground beef is fully browned and the onion is soft and translucent.

In a mixing bowl, add all of the Thousand Island ingredients, except the water, and mix until fully combined.  Then, pour in the water slowly while mixing.  Continue mixing until fully combined.

Separate all of the salad ingredients into 4 equal parts, including the ground beef mixture.  Get 4 MB Jars or Mason Jars and get ready to layer!

To assemble each salad-in-a-jar, pour in the thousand island dressing first to coat the bottom of the jar (usually about 2-3 Tbsp).  Then, layer the salad in this order:  ground beef mixture, red onion, cherry tomatoes, chopped pickles, turkey bacon, shredded cheese, and romaine lettuce.

Place in fridge for up to 3-4 days.  When ready to serve, dump everything into a bowl or onto a plate, mix, and ENJOY!

Cranberry Apple Brussel Sprout Salad with butternut squash, cranberries, goat cheese &amp; pepitas. A healthy salad recipe perfect for Thanksgiving.

Cranberry Apple Brussel Sprout Salad

torn kale, tear into small pieces

brussels sprouts

butternut squash

red onion

dry cranberries

raw pepitas

granny smith apple, thinly sliced

To a small bowl add whole grain mustard, apple cider vinegar, honey, smoked paprika cinnamon, minced garlic, olive oil, salt and pepper. Whisk until everything is combined and the vinegar and oil no longer separate. Set aside.

To a large bowl add kale. Add a pinch of salad to the kale and using your hands, massage the kale (by squeezing or rubbing it) in between your hands until the kale turns to a forrest green color and becomes fragrant.

Then, to the kale bowl add shredded brussels sprouts, roasted butternut squash, red onion, cranberries, pepitas, sliced apple and goat cheese.

 Toss with dressing right before serving.

Divide the quinoa, cherry tomatoes, cucumber, chickpeas, olive, and feta cheese evenly among 4 bowls.

For the dressing: combine all ingredients in a small bowl and whisk until combined.

Here’s a simple, rustic vegetable salad with French country flair that’s the perfect side dish with whatever you’re grilling this summer! Green Bean Salad with Mustard Vinaigrette and crunchy walnuts is easy to make and comes together quickly! Serve warm or room temperature.

Green Bean Salad Recipe with Mustard Vinaigrette

shallot (finely chopped)

Dijon mustard (or more to taste)

Whisk together the first 7 ingredients in a bowl.  Add salt and black pepper to taste.  Adjust acidity and mustard level as desired.

Place a steamer rack into a large saucepan.  Fill the saucepan with water up to the bottom of the steamer rack.  Bring to a boil.

Place the beans on the steamer rack, cover, and steam for 4-5 minutes or until crisp-tender and still bright green.

Transfer the beans to a mixing bowl and season with a pinch of salt.  Let cool for 4-5 minutes.

Drizzle with the vinaigrette as desired and toss.  (You may not need all of it; reserve the remainder for another use, such as a green salad or a chicken marinade.)

Transfer to a serving platter.  Top with walnuts and parsley.  Serve immediately.
