Sausage and White Bean Soup is an easy and deliciously filling combination of cannellini beans, onions, garlic, roasted tomatoes, kielbasa, and lots of Italian herbs and spices that bring it all together. 

Sausage and White Bean Soup

turkey kielbasa sausage (thinly sliced)

onion

garlic

chicken broth (I used low sodium)

tomatoes

white cannellini beans (drained and rinsed)

salt (or

black pepper (or

baby spinach

In a large stock pot over medium heat, combine sausage, onions, and oil. Saute 4-5 minutes until sausage starts to brown.

Stir in garlic for 1 minute until fragrant.

Add chicken broth, tomatoes, beans, Italian seasoning, salt, and pepper and give it a good stir. Bring to a boil, reduce to a simmer, cover and cook for 10 minutes.

Stir in spinach for 2-3 minutes until wilted. Taste, add salt and pepper if needed, and garnish with grated parmesan cheese and black pepper if desired before serving.

Italian Sausage Spinach Soup

olive oil

onion, (diced)

carrots,

garlic cloves, (minced)

lb Italian sausage, (casing removed (or purchase ground sausage))

tomato sauce

chicken broth

whole-grain elbow pasta

spinach ((or about 6 cups fresh))

Salt and pepper, (to taste)

Heat oil in a large sauce pan over medium heat. Add onions and carrots and cook until onions are fragrant and translucent, about 5 minutes. Add the garlic in the last minute of cooking.

Add in ground sausage and cook until no longer pink, breaking it up with a spoon, for about 5 minutes. Drain off any fat.

Add in the tomato sauce and broth and stir. Turn heat up to high and bring to a boil. Once boiling, cover, and reduce heat to medium low and simmer for 20 minutes.

Add in the pasta, spinach and beans and cook for an additional 10 minutes or until pasta is cooked. Serve warm.
