Baked Fish Tacos with Chipotle Lime Cream Sauce

olive oil

cumin

chili powder

garlic powder

coriander

kosher salt

cracked pepper

corn tortillas

sour cream

mayo

diced chiles in adobo

juice of 1 lime

water

flour tortillas

Pico de Gallo

Minute Cilantro Lime Slaw

Place fish in a baking dish and drizzle with olive oil.

Sprinkle fillet with cumin, chili powder, garlic, powder, coriander, and a couple large pinches of salt and pepper. Use your hands to gently massage the spices into the fillet.

Bake for 12-14 minutes or until the fish flakes easily with a fork.

While the fish is baking, whisk sour cream, mayo, chiles, lime juice, and water in a bowl until smooth and creamy. Season to taste with salt and pepper. 

Flake fish into bite-size pieces and divide evenly between tortillas.

Add Cilantro Lime Slaw, a drizzle of chipotle lime cream sauce, and top with Pico de Gallo!

I've never felt so healthy stuffing my face to the gills! Get it?...Gills?... Fish tacos?... I'll see myself out.

I had always wanted to try fish tacos. We live in Missouri, near ponds &amp; lakes, and we love to fish.  But, we have freshwater fish.  I used 2 lb of "flathead" catfish for this recipe.  I found that the catfish filets needed to bake about 8 min longer than recommended.  The fish was wonderful!  It was flaky and seasoned perfectly.  I'm making this recipe again tonight!

Recipe video above. Fish marinated in classic Mexican fresh flavours, seared until golden, are perfect for tacos. The lightly pickled red cabbage is a perfect accompanied for the soft fish, a great texture contrast. A wonderful recipe for white fish fillets, you will NOT miss deep fried fish!

Fish Tacos

fish

lime

lime juice

tbsp chipotle powder ((Note 2))

jalapeno

cilantro / coriander (, finely chopped)

garlic (, minced)

Salt and pepper

red cabbage (, finely shredded)

green onion stems (, finely sliced on the diagonal)

tbsp red wine vinegar

tsp salt

sour cream ((or yogurt))

tortillas

lime wedges

coriander/cilantro leaves

Marinade fish: Combine Fish Marinade ingredients in a ziplock bag. Set aside for 20 minutes to marinate - no longer than 1 hour.

Pickled Cabbage: Place Pickled Cabbage ingredients in a bowl. Toss to combine and set aside for 30 minutes. Drain excess liquid, scrunch cabbage with your hands (to help soften). Set aside.

Pink Sauce: Mix to combine.

Cook fish: Heat oil in a skillet over high heat. Cook fish for 2 minutes on each side, or until golden and cooked.

Remove fish onto plate then flake into large pieces.

To assemble tacos, top with cabbage then fish, a dollop of sour cream and a squeeze of lime juice. Fold tortilla over and enjoy!

These Chili Cheese Tacos blend two types of comfort food in one!

Chili Cheese Tacos

lb uncooked 99% fat turkey breast

onion

garlic

kidney beans

tomatoes

tomato sauce

salt

cayenne pepper

(6 inch) tortillas (I use Mission Extra Thin Yellow Corn Tortillas)

4.5 oz 50% reduced fat sharp cheddar cheese (shredded (I used Cabot))

Mist a large saute pan with cooking spray and bring to medium heat. Add the ground turkey and use a wooden spoon to break it up into small pieces as it cooks. When the turkey is breaking up and almost browned, add the onions and garlic and stir together. Continue to cook another few minutes until the turkey is browned and onions are softened.

Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and cayenne to the turkey mixture and stir together until well combined. Reduce the heat to low and simmer, uncovered, for 10-15 minutes to thicken and allow the flavors to combine.

*Warm your tortillas in small batches between two damp paper towels for 20-30 seconds in the microwave to make them softer and more pliable. Lay out the tortillas and fill each with a ¼ cup of chili. Sprinkle ¼ ounce of shredded cheese over the chili on each taco and serve.

*If not serving all 18 tacos at once you can just store the unused chili, cheese, and tortillas separately and build the tacos as needed. The chili can be frozen.

This recipe is one of my favorite quick healthy meals for dinner that can be made in 30 minutes or less!

The BEST Chicken Fajita Tacos

Tablespoons avocado oil (divided)

smoked paprika

black pepper

chicken breasts,

Tablespoon salsa (divided)

yellow onion, sliced

medium bell peppers, sliced

cilantro leaves (optional, for topping)

medium lime, quartered (optional)

Tablespoons plain whole milk yogurt (or sour cream)

Heat Tortillas

Heat the tortillas up in a pan or directly over the stove and set aside.

Mix Seasoning

Mix the chili powder, smoked paprika, cumin, salt, and pepper together in a small bowl.

Slice Chicken

Slice the chicken breasts into thin strips.

Heat Oil

Heat up 1 Tablespoon of the avocado oil in a skillet or pan.

Combine Chicken, Seasoning, &amp; Salsa

Place the chicken in the pan along with 1/2 of the seasoning mix and 1 Tablespoon of the salsa.

Cook Chicken

Cook for about 10 minutes, flipping halfway through and stirring as needed until fully cooked.

Set Aside

Cook Garlic &amp; Onion

Add the remaining oil along with the garlic and sliced onion to the pan, then cook for 2-3 minutes.

Add Peppers &amp; Salsa

Add in the sliced bell peppers, remaining seasoning mix, and remaining salsa.

Cook Until Soft

Continue to cook for about 10 minutes, stirring often, until the vegetables are soft.

Add Chicken Back In

Add the chicken back in and stir until evenly warm.

Fill Tortillas

Remove from heat and fill each tortilla with the chicken fajita mixture.

Make Cream Sauce

Top Fajita Tacos

Top each chicken fajita taco with cream sauce, cilantro, and a squeeze of fresh lime juice!

These vegan slow cooker lentil tacos are a super easy dinner! Flavorful, family-friendly, and beloved by all kinds of eaters, this is the perfect healthy dinner recipe to make again and again.

Vegan Slow Cooker Lentil Tacos

vegetable broth

salsa

oregano

paprika

dried parsley (or 1/4 cup fresh)

apple cider vinegar

coconut aminos (or sub soy sauce)

taco toppings

Combine ingredients in your slow cooker. Stir a few times and cover.

Cook on HIGH for 3-4 hours or on LOW for 7-8 hours. Each slow cooker cooks a little differently, so exact time will depend on your unique slow cooker or crockpot. Cook until lentils are tender and most of the liquid has cooked off.

Use a slotted spoon to portion out lentil taco filling into tortillas, over rice, greens or however you opt to enjoy this taco filling. Top with sliced avocado, extra red onion, cilantro or whatever your favorite taco toppings are.

Let leftovers cool and store in air-tight container in fridge for up to 3 days.

These Spicy Salmon tacos are super easy to put together and taste incredible. Made with juicy salmon fillets, corn, shredded cabbage and drizzled with a tangy and creamy avocado lime dressing.

Spicy Salmon Tacos with Avocado Lime Dressing

salmon

Preheat oven to 350 degrees.

Mix the paprika, chili powder, salt, and pepper in a small bowl.

Rub the spices over the salmon filets and bake for 10-15 minutes if filet is thawed or 20-30 minutes if cooking from frozen (until the fish is flaky).

While the salmon is baking, create the 3 Ingredient Creamy Avocado Lime Dressing with water instead of yogurt (to thin it out) and only use half of the avocado.

Cut the other half of the avocado into cubes.

When salmon has finished baking, top 4 tortillas with lettuce, cabbage, beans, corn, salmon, and drizzle with the avocado lime dressing.

Serve and enjoy!
