There's nothing better than homemade herb cream cheese! Packed with fresh herbs, it's an easy appetizer or spread for bagels.

Herb Cream Cheese

package cream cheese,

chopped chives, or half chives and half fresh basil or dill

garlic powder

dill

salt

Greek yogurt

Make sure the cream cheese is softened. Leave it out at room temperature for 1 hour, or place it on a plate in the microwave, cook 5 seconds, flip over the block of cheese and cook another 5 seconds. (If it’s not room temperature at this point, cook another few seconds, but air on the conservative side.)

Chop the herbs. Mix everything together in a bowl, adding a little Greek yogurt, milk or sour cream 1 tablespoon at a time if you&#8217;d like a fluffier, more spreadable texture (we used 1 tablespoon Greek yogurt).

Whipped alternative

Make whipped cream cheese by adding 1/2 tablespoon milk and whipping the cream cheese in a food processor or stand mixer. Then add the chopped herbs and pulse until combined.

Herb Cream Cheese Dip

cream cheese (room temperature)

heavy cream

onions

chives

lemon

lemon juice (do not substitute with bottled lemon juice)

fine sea salt or kosher salt

black pepper

red pepper (red pepper flakes, optional)

Use an electric mixer fitted with the whisk attachment to beat the cream cheese. Whisk until smooth.

Set the mixer to low speed and slowly add the heavy cream until well incorporated. Add the scallion, dill, chives, lemon zest, lemon juice, salt and pepper(s). Whisk until the mixture thickens and firms.

Line a 6-inch mesh strainer or sieve with two layers of cheesecloth. Pour the cream cheese mixture into the cloth, press slightly and smooth the top. Fold any excess cheesecloth over the top of the cream cheese mixture. Place the mesh strainer over a small bowl to catch liquid that will drain through the cheesecloth. Cover with plastic wrap and refrigerate overnight or up to 3 days.

When ready to serve, invert the cream onto a serving plate and discard the drained liquid.

½ avocado, thinly sliced

In a small bowl or ramekin, mix to combine cream cheese, garlic powder, salt, and pepper until smooth.

Spread cream cheese mixture over both slices of bread.

Top one slice of bread with the cucumber slices.

Top the cucumber slices with smoked salmon.

Add the sliced avocado, red onions, and tomato.

If desired, sprinkle capers over remaining cream cheese-covered toast. Press lightly to adhere.

Place caper-topped slices, cream cheese-side down, over arugula and slice through the rest of the sandwich to cut in half.
