Healthy Seeded Crackers

hemp seeds (see notes)

sesame seeds

flaxseeds

yeast

dry oregano

garlic powder

½ tsp chilli flakes (optional)

salt

chickpea flour (besan)

olive oil

Preheat oven to 320 °F

Place all the dry ingredients into a large mixing bowl.

Add the olive oil and water and stir well until all thoroughly combined. Allow to rest for 5 minutes.

After the dough has rested, pour the mixture onto a piece of baking paper.

Cover the dough with a second piece of baking paper. Using a rolling pin or a bottle, gently roll out the dough to approximately 0.25-0.5 cm thick (the thinner the crispier).

Carefully remove the top layer of baking paper.

Place the baking paper with the rolled-out dough onto a baking tray and slide it into the preheated oven. Bake until golden, for 20 to 25 minutes.

Once baked, remove the tray from the oven and allow the crackers to cool down. This cooling time is essential as it helps the crackers to harden and achieve their characteristic crunch.

After the crackers have cooled, break them apart with your hands. You can make them as big or as small as you like.

Crispy Butter Beans are a healthy, high-fiber snack or appetizer made with a fresh and bright lemon-herb green sauce for dipping. They are so good, even my kids love them!

Crispy Butter Beans (Air Fryer or Oven)

butter beans

onion powder (divided)

smoked paprika

salt (to finish)

parsley (chopped)

mint (chopped)

lemon

lemon juice

red chili flake

Onion powder is dehydrated, ground onion that is commonly used as a seasoning. It is a common ingredient in seasoned salt and spice mixes, such as beau monde seasoning. Dry the beans well on paper towels until completely dried.

In a medium bowl, toss beans with 2 teaspoons olive oil, 1/4 teaspoon kosher salt, 1/4 teaspoon of the onion powder and smoked paprika.

Transfer to the air fryer basket and air fry 380F for 15 minutes, shaking the basket every 5 minutes. When done, finish with sea salt.

While the beans cook, make the dipping sauce. Combine 1/3 cup of the bean liquid, parsley, mint, lemon zest, lemon juice, remaining 1 tablespoon olive oil, remaining 1/4 teaspoon onion powder and remaining 1/4 teaspoon salt in a blender.

Blend until smooth. Transfer to a small bowl & top with chili flakes.

Serve the roasted beans with green dipping sauce.

If baking in the oven instead, preheat the oven to 400°F. Be sure your beans are very dry (it helps if you leave them on the counter a few hours before baking.)

Transfer the beans to a parchment-lined baking sheet in a single layer (you may need to use more than one pan or bake in batches), and bake for 20 to 28 minutes, stirring half way or until the beans are crisp and golden.

Oven Method: (Not as crispy as the air fryer)

Gina I am prob your #1 fan and have made many, many of your recipes and have been really thrilled with them all. Unfortunately this one really missed the mark with the dip. It was very, very watery. I kept reading the instructions over and over to see if I messed something up but I didn't. Any thoughts as to why it was so watery? I added some nonfat yogurt to try to thicken it up, but I didn't want to add to much, in case it would change the flavor. Regardless, it was delicious and everyone loved it. I would just like to know how to thicken up the dip. Thanks for all you do!

This Apple Chia Pudding with Peanut Butter makes the perfect light breakfast, snack, or healthy dessert — packed with protein and fiber to keep you full and energized.

Apple Chia Pudding with Peanut Butter

½ teaspoon ground cinnamon (plus more (optional) for topping)

Pour 2 tablespoons chia seeds each into 2 (16-ounce) mason jars or containers with lids.

Add ½ cup milk and ¼ teaspoon vanilla to each jar then mix with a fork until chia seeds are evenly distributed.   Add ½ cup yogurt, ½ tablespoon syrup and ¼ teaspoon cinnamon to each jar and mix again, scraping the bottom and sides of the jar as you mix so the chia seeds don’t clump.

Seal and refrigerate for at least 2 hours. When ready to eat, add ½ the diced apple to each jar. Top with a dash of cinnamon and drizzle with melted peanut butter.

To serve, mix in the jar and enjoy.
