Tuna Egg Salad is my go-to high-protein lunch when I need something quick – it takes about 15 minutes to make and can be meal prepped ahead.

Tuna Egg Salad

eggs

2.6 oz packet light tuna

mayonnaise ((check labels for whole30))

red onion

salt and pepper (to taste)

Chop the eggs and add them to a bowl with the tuna, mayo and red onion.

Mix to combine and season with salt and pepper to taste.

Eat right out of the bowl with a spoon or piled on a piece of toast, in a wrap, over greens, etc.

Seasoned smashed chickpeas make this vegan avocado toast high in protein and extra filling. The perfect savoury breakfast! Can be gluten free.

High Protein Vegan Avocado Toast

bread (gluten free if needed)

½ large avocado (use a whole avocado if yours isn't large)

apple cider vinegar

chickpeas (rinsed & drained)

Sea salt & black pepper

Microgreens, herbs, homemade sauerkraut or radish slices to garnish

Toast slices of bread.

While bread is toasting, combine avocado flesh and apple cider vinegar in a small bowl. Mash with a fork or hands until almost smooth. Season to taste with salt and pepper.

In another bowl, mash chickpeas (this is definitely easiest using hands, though you can use a fork) until flaky. Season with salt and pepper.

Spread avocado mixture over toast slices, and top with smashed chickpeas.

Decorate with sprouts, microgreens or radish slices and serve!

This budget minestrone is the classic Italian soup made with cannellini beans and broken up spaghetti. Feel free to stir in extra vegetables, depending on what you have in the fridge. This is designed to be a low cost recipe.

Each serving provides 300 kcal, 18.3g protein, 37.1g carbohydrate (of which 14g sugars), 5.2g fat (of which 1g saturates), 16.5g fibre and 1.85g salt.

olive oil

onion, chopped

carrots,

celery sticks, chopped

garlic cloves, finely chopped

tomato purée

tin chopped tomatoes

1.2 litres/2 pints vegetable or chicken stock,

tin cannellini beans, drained and rinsed

100 grams/3½ dried spaghetti, broken into short lengths

cabbage,

salt and black pepper

Chicken Crunch Wraps

Spray Oil (I Use Avocado)

(1.6lb) - Chicken Breast, Diced or Sliced

Garlic Powder

Smoked Paprika

½ tsp (1 grams) - Dried Chilli Flakes (Optional)

Salt & Pepper

Wraps

(10.5 ounces)

Garlic Cloves, Grated

Tomatoes, Finely Diced

(8.8 ounces) - Mozzarella Cheese

Baby Romaine Lettuces, Shredded

Cheesy Nacho Chips

Season Chicken

Add the chicken, spices, and seasonings, except the oil, and combine them in a bowl.

Sear Chicken

Place a pan over medium-high heat, add oil, and sear the chicken for 4-5 minutes or until just cooked through. Remove and set aside. If your pan isn’t large enough, do this in batches to avoid steaming the chicken.

Garlic Yogurt

Add the high-protein yogurt and garlic to a bowl and mix well. Season to taste.

Wrap

To assemble the wraps, lay one large wrap and spread it with garlic yogurt. Place the lettuce, tomato, chicken, cheese, and chips (if using) on the plate. Place one small wrap over the top and fold the large wrap around the small to create a pentagon-style shape. Once rolled, sit it on the seam side to prevent it from unwrapping.

Toast

In a dry pan over medium heat, add the Crunchwrap seam side down and toast for 2 minutes or until golden. Flip and repeat. Remove from the pan. Slice the crunch wrap in half and dig in.

Store Crunch Wraps

Store in airtight containers, food-safe paper, a ziplock bag, or aluminium foil. It will last 4 days in the fridge and 3 months in the freezer. It can be eaten cold or hot and reheated in an air fryer, pan, oven, or microwave.

This healthy, high protein egg salad is creamy and full of fresh flavor—made lighter by using just half the yolks. It’s perfect over toasted bread, tucked into a wrap or pita, or enjoyed on its own for a satisfying, low-calorie meal.

Start by making the hard boiled eggs. You can follow my classic stove top hard boiled egg recipe, or my instant pot eggs or air fryer eggs.

Once cooked, rinse under cold water and peel.

Separate the yolks from the egg whites and discard 2 of the yolks. (My dog loves them!)

Chop the eggs and combine with mayonnaise, dijon mustard, scallions, salt and pepper. You can scale this up to prep ahead for the week.

These recipes are awesome but it would be really helpful if when they are found in a cookbook to actually list which one they are found in.

I am trying to get healthy again!  Made this today with what I have at home using pickles instead.  Turned out great!
