To make a flax egg, combine the flax and the almond milk in a small bowl and let sit in the fridge for an hour.

Meanwhile, preheat oven to 350 F and place a silpat on a baking sheet.

In one bowl, mix together the almond flour, oats, cinnamon, baking powder and salt.

In another, mix the banana, coconut oil, almond butter, maple, vanilla and flax egg. Mix the dry into the wet until combined, then fold in the dates, almonds and Manitoba Harvest hemp hearts.

Roll into small 2 tbsp balls and flatten them out on the baking sheet so they’re 1/2 inch tall. Sprinkle generously with more hemp hearts and bake for 12-15 minutes until golden brown.

Have a stash of these seeded chocolate rounds ready to go and you'll never be caught out in a 3pm slump.

Make dough: In a food processor, pulse together all the ingredients until a thick dough forms. If the dough does not hold together when formed into a ball, add a tablespoon more of almond milk.

Make dough bites: Scoop a tablespoon of dough for each bite-size ball and roll between palms to form into a ball. Place each ball on a plate. You should have a total of 13 dough bites.

Finish: Stick 5 sugar-free chocolate chips into the top of each dough ball. Serve immediately or chill in the refrigerator before serving. After, store in an airtight container in the refrigerator.

This Protein White Hot Chocolate recipe is too easy not to share, especially since I make it all the time. My go-to on cold nights!

Protein White Hot Chocolate

To make on the stove: In a small pot, heat vanilla shake over medium-low, stirring occasionally, until warm but not boiling, about 1 to 2 minutes. Reduce the heat to low and stir in the white chocolate chips. Stir constantly until the chocolate is fully melted and smooth, 30 to 60 seconds more.

To make this in the microwave, pour shake in a large microwave safe mug with the white chocolate chips and microwave 1 ½ minutes, stirring well halfway, until heated through and the chocolate is melted and smooth. Top with whipped cream, if using and sprinkle with nutmeg.

The white chocolate kicks up the flavor a notch!   I will definitely make this again, and again.

High protein baked spaghetti minis, made in a muffin tin! Perfect for snacks and packed lunches, these spaghetti minis are vegan, grain-free, oil-free and gluten-free.

High Protein Baked Spaghetti Minis (V, GF, Oil-Free)

oz chickpea flour spaghetti, broken

cauliflower

chickpea flour

flaxseed meal

water ((I use filtered tap water))

marinara sauce

mozzarella style cheese

Cook pasta

Cook the pasta according to package directions, adding the cauliflower during the final minute of cooking; drain, shaking off excess water.

Preheat oven

Meanwhile, preheat oven to 400F (200C). Line 12 cups of a standard size muffin tin. with silicone liners (or, if you eat oil, grease or lightly spray the muffin tin cups)

Whisk

In a large bowl, whisk together the chickpea flour, flaxseed meal and salt. Gradually whisk in the warm water (gradually to avoid lumps). Stir in the marinara sauce, spaghetti and cauliflower.

Portion

Divide noodle mixture evenly between prepared cups, pouring any extra batter in the bowl directly over each cup of noodles. Sprinkle tops with cheese.

Bake

Bake in the preheated oven for 20 to 25 minutes until cheese is melted and noodles at edges look browned and slightly crisp.

Cool

Cool on a wire rack for 15 minutes before running a knife around the edges of the cups and removing. Serve warm or room temperature.

Easy, Three Ingredient Protein Bagel (Gluten Free)

plain Greek yogurt

organic all-purpose flour ((gluten free or regular))

tsp baking powder

sea salt

egg egg

In a large bowl, add all ingredients and mix well. Form dough into a ball.

Place dough ball on a clean surface and slice into 4 equal parts.

Roll each part into a ball and place on a parchment paper-lined baking sheet. Slightly flatten each dough ball and form a hole in the center of each.

Brush egg whites (or 1 whole egg whisked) onto each bagel.

Bake for 30-35 min. or until the bagels are slightly golden.

Let bagels cool at least 15 min. before slicing open.

Add toppings of choice and enjoy!

Hello! I just made the gf bagels using dairy free cashew and coconut vanilla bean yogurt. We made cinnamon and sugar, everything bagel seasoning, and plain with sea salt. They were all eaten within 10 minutes. My kids loved them and want me to make them again! My 8-year old son loved the sweetness balanced with the saltiness and the texture. These are way better than gluten free store bought bagels--taste and texture. *I did have sticky dough, so I simply put flour on my hands and a little on the dough as I prepared the bagels. Just like the classic but better! These protein buckeyes are made with a creamy peanut butter base, topped with hardened chocolate and packed with protein.

Peanut Butter Protein Buckeyes

butter

Vegan protein powder (vanilla)

tsp Vanilla extract

tbsp Maple syrup

Dairy-free chocolate chips

Coconut oil

In a small bowl, combine the peanut butter ball ingredients.

Mix until everything is sticky, it may look a bit dry.

Line a cutting board with parchment paper and grease your hands with coconut oil.

With your hands, roll the batter into balls roughly 1-1.5 inches in diameter and place them on the parchment paper. Re-grease your hands a sneeded.

Place in the freezer for 45-60 minutes.

When ready, heat the coconut oil and chocolate chips in a small pot over low heat. Stir until melted and combined. Remove from heat.

Remove the buckeyes from the freezer. Place a toothpick into the top of one peanut butter ball and then dip it into the chocolate coating it ¾ of the way.

Place the ball back on the cutting board and repeat until done.

Place the peanut butter buckeyes back in the freezer to set for another 45 minutes.

Let them thaw to enjoy them.

Makes 8 balls.

I make these for my kids at least every other week because they love them so much!

Line a plate with parchment paper, making sure it can fit in the fridge.

In a large mixing bowl, combine all ingredients except chocolate chips and coconut oil until a thick dough forms.

Roll the dough into 16 balls.

Make the chocolate coating by combining chocolate chips and coconut oil. Microwave for 30sec, stir, and repeat until smooth.

Dip each ball into the melted chocolate.

Place in the fridge for 10 min until hardened.

Store in the fridge and enjoy!

They taste great!  I was disappointed in the quantity and size, though.  Recipe said a tablespoon each and would make 16 balls.  I did maybe 1/2 tablespoon each and the mixture only made 10 balls.

I have to say, these were quite tasty. But like a comment above, they were very sticky. I put them in the fridge for an hour before coating them in chocolate hoping they would get a little more solid. Unfortunately, they were still super sticky and stuck to the parchment paper.  So even though they were nowhere near looking like a ball, they still tasted yummy and I will make again. My family also liked how "gooey" they are inside the chocolate shell. I think I will modify the amount of PB powder next time and see if more will help the consistency.  Thank you for posting this recipe.  :)

Line a small baking sheet with parchment paper or wax paper (for easy cleanup).

Add the cocoa powder and vanilla extract to the bowl. Whisk until completely blended. The mixture will look thick and fudge-y.

Using a medium cookie scoop or a heaping tablespoon, portion rounded mounds of the cookie dough onto the prepared cookie sheet. With damp hands, shape each mound of cookie dough into a thick cookie that is 2-inches in diameter.

Chill

Chill the cookies in the refrigerator (at least 1 hour) or freezer (at least 20 minutes) until set. Transfer the set cookies to an airtight container.
