cauliflower, chopped into florets

red onion, thinly sliced

cherry tomatoes, halved

mayonnaise

sour cream

tbsp sugar

Add veggies into a salad bowl.

In another bowl, whisk together mayonnaise, sour cream and sugar. Pour over veggies and toss together.

Chill in the fridge one hour before serving.

A delicious vegan Moroccan Salad with blood oranges, quinoa, almonds, olives, mint and a tangy, bright blood orange dressing. Perfect for the holiday table, this salad is festive and healthy!

Moroccan Salad with Blood Oranges, Olives, Almond and Mint

quinoa

water

salt

green onions, sliced diagonally

kalamata olives

blood oranges- divided (or regular oranges)

olive oil

red wine vinegar (optional)

honey, maple or sugar

cracked pepper and salt

almonds

mint leaves, torn

Bring quinoa and water and pinch salt to a boil in a medium pot on the stove. Once boiling, cover and lower heat to low and cook 15 minutes.

In a medium bowl, add sliced green onions, sliced olives, and 2 oranges (peeled, cut into quarters, then sliced).

When quinoa is done, fluff with a fork and toss in the bowl with the oranges. Dress with 3-4 tablespoons olive oil, the zest and juice of the remaining orange and 1 teaspoon honey. If you don&#8217;t have a particularly juicy orange, add a splash of vinegar. Stir and taste.  Add salt and pepper to taste. The olives will add quite a bit of salt, so if you leave them out, be sure to add salt.

Scatter with toasted slivered almonds and fresh torn mint leaves.

Feel free to make this ahead and adjust seasonings before serving- quinoa has a tendency to soak up the salt and dressing, so I always check right before serving &#8211; adding more salt or acid if necessary.

VEGAN BROCCOLI SALAD RECIPE

INGREDIENTS
Salad Fillings:
1 head of broccoli (450g)
1/3 cup dried cranberries or raisins (50g)
1/3 cup walnuts or almonds, raw or roasted (40g)
3 tablespoons chopped red onion (25g)
Dressing:
4 - 6 pitted dates or sweetener of choice* (to taste)
1/4 cup vegan mayo**(60ml)
3 tablespoons vinegar/lemon juice of choice or to taste (45ml)
3/4 teaspoon sea salt (4cc)

DIRECTIONS
For the dressing, combine all the ingredients and blend until smooth using your regular blender or immersion blender. Taste and adjust to your preference.

Separate the washed and dried broccoli florets into bit sized pieces. If using the broccoli stems, cut into matchsticks or grate them. Mix the broccoli, cranberries or raisins, nuts or seeds, and red onion with your dressing. Taste and adjust for salt.

NOTES
*Dates vary greatly in sweetness so use as many as you like. Alternatively, you may use any sweetener you prefer including maple syrup, agave, or sugar.

**For a low fat option, choose firm or extra firm silken tofu with a pinch of kala namak (black salt) for a hint of egg-like sulfury flavour and blend very well. I repeat: blend VERY WELL.

For digestive systems that are not well suited to raw broccoli, feel free to lightly steam the broccoli to bring out the bright color and make it easier to digest. Chill the broccoli thoroughly before assembling your salad.
