Easy Caesar Dressing Recipe!

garlic

Parmesan cheese, finely grated

lemon juice (1/2 lemon)

mayonnaise

Greek yogurt

olive oil

anchovy paste (optional but recommended)

Dijon mustard

salt

Grate the garlic, or finely mince it. Grate the Parmesan cheese as finely as possible (it&#8217;s helpful to use a microplane or the fine holes on a grater). Juice the lemon.

Whisk together all the ingredients in a bowl. Store refrigerated (keeps at least 1 week).

Homemade rich and creamy Caesar dressing. It&#039;s perfectly balanced, not overly fishy, or garlicky, and once you make it you&#039;ll never buy store-bought Caesar dressing ever again!

Homemade Caesar Dressing

anchovy (minced then mashed)

garlic (mashed)

lemon juice

dijon mustard

parmesan cheese (grated)

If using anchovy paste, then whisk everything in a bowl until well combined. If using anchovy fillets, then place all of the ingredients in a food processor.

Blend until you get a creamy and smooth Caesar dressing.

Start to finish, recipe took about ten minutes to make. This is a terrific Cesar dressing.  I'm 75 and I will never buy another bottled Cesar dressing.

This is my favorite Caesar Salad dressing recipe.
It is rich and full of flavors. I love the thick creamy texture with freshly grated Parmesan Reggiano and the garlicky, lemony tang that comes through. 
I find I don’t need to add any salt because the anchovies provide enough salt. 
I have yet to eat a Caesar salad in any restaurant that even comes close to this recipe.

Prepare the lettuce

Wash and dry the romaine lettuce thoroughly. Tear larger leaves into halves or thirds by hand, leaving smaller leaves whole, then chill until ready to assemble the salad.

Make the garlic-anchovy paste

In a large wooden salad bowl or mixing bowl, combine the minced garlic, anchovy fillets, a pinch of kosher salt, and freshly ground black pepper. Use the back of a spoon or fork to mash them into a rough paste, ensuring the anchovies break down fully.

Mix the dressing base

Add Dijon mustard, fresh lemon juice, Worcestershire sauce, and the raw egg yolk to the mashed garlic-anchovy paste. Whisk together vigorously until the mixture is smooth and well combined.

Emulsify the dressing

Slowly drizzle the oil into the bowl while continuously whisking to create a thick, creamy dressing that coats the ingredients evenly.

Adjust seasonings

Taste the dressing and adjust the lemon juice, salt, pepper, mustard, or Worcestershire sauce to your preference for balanced flavor.

Toss the salad

Add the chilled lettuce to the bowl and toss thoroughly to coat every leaf evenly with the dressing.

Add cheese and croutons

Sprinkle in half of the freshly grated Parmigiano Reggiano cheese and half of the croutons, then gently toss again to incorporate them evenly.

Garnish and serve

Top the salad with the remaining grated Parmesan and a fresh crack of black pepper. Serve the Caesar salad immediately for best texture and flavor.

Prepare the Chicken Cutlets

Slice the chicken breasts horizontally into 4-6 thin cutlets. In a small bowl, whisk together the egg, milk, garlic powder, salt, and pepper. Place the breadcrumbs and panko in another bowl. Dip each chicken cutlet into the egg mixture, then coat with the breadcrumbs mixture. In a shallow pan, heat 1-inch of vegetable oil over medium-high heat. Fry the cutlets until golden brown and crispy, approximately 5 minutes per side. Remove and set on a paper towel-lined plate to drain excess oil.

Make the Garlic Butter

In a small bowl, combine the slightly melted butter, mayonnaise, minced garlic, chopped parsley, and grated Parmesan cheese. Mix well.

Toast the Bread

Slice the hoagie or baguette rolls lengthwise. Spread the garlic butter generously on the cut sides of the bread. Place the bread halves in a 450ºF oven or under the broiler for 3-4 minutes, until toasted and fragrant. Keep an eye on them to prevent burning.

Prepare the Caesar Dressing

Whisk together the mayonnaise, sour cream or Greek yogurt, Parmesan cheese, lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce, grated garlic, salt, and pepper in a bowl or mason jar until smooth and well combined.

Toss the Romaine

In a large salad bowl, toss the chopped romaine lettuce with 3-4 tablespoons of the Caesar dressing until evenly coated.

Assemble the Sandwiches

Layer the crispy chicken cutlets on the toasted bread, then add the dressed romaine lettuce. Top with extra grated Parmesan cheese if desired. Close the sandwich and serve immediately for best flavor and texture.
