It makes 2 ounces not a cup. I prefer thyme to oregano. If you need a dry seasoning I suppose it’s fine As is but if I have fresh garlic onion and thyme I’ll substitute those. Gumbo is labor intensive so I prefer fresh ingredients whenever possible.
