Homemade Cool Ranch Doritos Recipe

small corn tortillas (I used one package)

dry ranch seasoning

smoked paprika

garlic

onion

salt

peanut oil oil

Heat oil in a dutch oven or deep fryer and heat to 350F. You want about 2 inches of oil minimum.

Cut the uncooked tortillas into wedges, like pizza slices.

In a medium bowl, mix together the ranch seasoning, paprika, garlic, onion, and salt. The seasoning works best super fine, so you can pulse in a blender if you would like, but its optional.

Working in batches, fry the tortillas until crispy, about 3 minutes per batch. I used a wooden spoon to press the tortillas down one at a time to let some of the air out, otherwise they can puff up very easily. Be careful with this step because the oil can bubble up.

Place the fried tortillas on a paper towel lined plate and sprinkle with seasoning. Toss to combine, then sprinkle the flip side. You want to do this right after removing from the oil. Allow to cool.

Repeat with the rest of the tortillas. This will make quite a bit of tortillas, about 5-6 dozen for the amount of seasoning. You can also keep the seasoning in an airtight container for later use!

Store chips in an airtight container for up to two weeks. Enjoy!

Homemade tortilla chips with guacamole & charred tomato salsa

To make the tortillas, heat oven to 200C/180C fan/gas 6. Brush both sides of the tortillas with the oil, then cut into triangles with scissors. Arrange in a single layer on 1 or 2 baking sheets and bake for 7-8 mins. Remove, sprinkle with salt and set aside.

To make the guacamole, halve and stone the avocados, then spoon the flesh into a bowl. Pour over the lime juice and a sprinkle of salt, then crush with a potato masher until puréed but still chunky. Add onion, coriander, chillies and chipotle paste. Stir through and set aside until needed.

For the salsa, place the tomatoes, cut-side up, in a shallow baking tray. Season, and place under the grill until blackened, about 15 mins. Meanwhile, in a dry non-stick frying pan, blacken the chillies and garlic. Keep turning to darken on all sides, about 10 mins. When done, peel the garlic and place in a food processor. Place the chillies in a plastic bag to steam for a few mins, then peel, deseed and stem. Add the flesh to the food processor along with the tomatoes, onion, coriander, lime juice and chipotle paste. Season and pulse until chunky.

cottage cheese (low-fat recommended, but 4% works)

cheddar cheese

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Place the ¾ cup of cottage cheese into cheesecloth or a nut milk bag (or fine mesh sieve) over a bowl. Squeeze or press out as much excess moisture as possible. Discard the liquid. This step is crucial for crispiness.

(Optional) If using powdered seasonings, transfer drained cottage cheese to a mixing bowl and mix them in using a spatula or spoon. Use a bowl scraper to get all the cheese.

Use a small cookie scoop (about 1 teaspoon size) or two spoons to drop small dollops of the drained cottage cheese onto the prepared baking sheet, aiming for ~16 piles. Leave ample space between piles for spreading.

Evenly sprinkle the ¼ cup of shredded cheddar cheese over the cottage cheese piles. Add any optional sprinkle-on toppings now.

Carefully place the baking sheet in the preheated oven. Bake for 10 to 20 minutes.

Watch closely after 10 minutes. Chips are ready when spread, golden brown, and crispy at the edges.

Remove from the over and let cool completely on the baking sheet placed on a cooling rack for 5-10 minutes to fully crisp up.

Gently lift cooled chips from the liner using a thin metal spatula or fish spatula. Enjoy immediately or store as directed below.
