Old Fashioned Chocolate Fudge

sugar

cocoa ((unsweetened good quality))

salt

milk

butter

Line an 8 inch square pan with buttered parchment paper.

In a medium heavy saucepan stir together sugar, cocoa and salt, then add the milk and stir with a wooden spoon (not a whisk or metal spoon).

Cook over medium heat stirring continuously until mixture starts to boil (a strong boil), approximately 15 minutes.

Turn heat to low and continue to cook without stirring until temperature reaches 234 °F.&nbsp; Approximately 30 minutes.

Remove pot from heat, add the butter and vanilla.&nbsp; Do not stir.&nbsp; Cool to room temperature (110°F), approximately 30 minutes.&nbsp; Then beat with a wooden spoon just until mixture begins to lose some of it's gloss (approximately 6-8 minutes).

Then spread quickly in prepared cake pan and let cool completely, even overnight (at room temperature).&nbsp; &nbsp;Cut into squares.  Store in an airtight container at room temperature.

You can also freeze the fudge in a double bag, well wrapped.&nbsp; Freeze either in pieces or the whole slab.&nbsp; Can be frozen up to 3 months.&nbsp; Keeps in an airtight container for approximately 2 weeks or in the fridge for 3-4 weeks.&nbsp; Enjoy!

CHOCOLATE FUDGE

This easy chocolate fudge recipe comes together in less than 10 minutes with only a few ingredients and it&#x27;s SO delicious!

Fudge Recipe

semisweet chocolate (chopped, 12 ounces, 340 grams)

bittersweet chocolate (chopped, 12 ounces, 340 grams)

oz sweetened condensed milk (2 cans)

tsp sea salt

tsp vanilla extract (10 milliliters)

walnuts or pecans (optional)

Line a 9x9 inch dish with foil or sheets of parchment paper. You can use a larger dish like 9x13, the fudge will just be a bit thinner. Give the foil or paper a spritz of cooking spray or a swipe of melted butter to help it peel off later

Add all the ingredients except the vanilla extract into a medium heavy-bottomed pot and place on low heat stirring frequently.

Once the mixture has thickened and become shiny stir in the vanilla and pour into your prepared dish and smooth with a spatula. Set aside to cool completely, at least an hour.

When your fudge has cooled down remove from dish, peel foil or paper off and cut into squares with a sharp knife.

You can enjoy the fudge immediately or wrap in parchment or wax paper.

Classic Marshmallow Fluff Fudge is one of those nostalgic recipes that so many people love. It&#039;s smooth, creamy, and a wonderfully decadent, indulgent dessert.

Classic Marshmallow Fluff Fudge

Jet Puffed Marshmallow Creme

butter (3/4 cup)

Over medium low heat, melt butter. Add half and half. Mix well.

Pour in sugar and mix until melted. Turn up heat to just above medium, maybe medium high depending on how hot your stove gets. You don&#039;t want too much heat. Bring sugar mixture to a boil. Stir constantly. DO NOT STOP STIRRING.

When the mixture begins to boil, use a candy thermometer or a handheld instant read thermometer to monitor temperature. Stir constantly until the temperature reaches 234°F. Don&#039;t let it go over! This took me about 7-8 minutes of boiling and stirring to reach this point. Be patient!

Immediately remove from heat. Keep stirring. Pour in chocolate chips little by little. Completely melt each batch. When most of the chocolate is melted, stir in vanilla.

Pour in marshmallow cream and mix until fully incorporated. Add nuts. Mix in.

In a small cake pan (9x9, 8x8, 7x9) lined with parchment paper, pour in fudge mixture. Smooth top. Place in refrigerator and cool for about 3-4 hours.

Remove from pan. Cut and enjoy!

Step by step recipe tutorial for making the classic marshmallow fluff fudge recipe that appears on the back of the marshmallow fluff jars. 

The only difference is I used 6 ounces of half & half instead of 5 ounces evaporated milk. I find it to be super silky and creamy. I also added a touch more vanilla.

Maple Fudge

Grease the bottom and sides of a loaf pan with non-stick cooking spray and then line the pan with parchment paper. Leave some parchment paper hanging over both ends of the pan for easy removal later.

Bring the maple syrup to a boil in a medium saucepan over medium heat. As soon as it starts to boil, turn the heat down to low and bring the mixture to a simmer. Then let it simmer for 5 minutes.

Once it has simmered for 5 minutes, add the heavy cream, without stirring, and turn the heat back up to medium. Wait for the mixture to begin boiling again. Once it starts to boil, turn the heat back down to low and bring it to a simmer. Then let it simmer for about 20 minutes (or longer) until the temperature reaches 236°F on a candy thermometer. If the temperature hasn&#39;t reached 236°F after 20 minutes, turn the heat up enough to bring it to a gentle boil.

As soon as the temperature has reached 236°F, immediately remove the saucepan from the heat and add in the butter, without stirring. Let the mixture cool for 8 minutes. Then beat the mixture with an electric mixer for about 5 minutes until it becomes thick, is no longer shiny, and starts to show signs of crystallization.

Quickly transfer the mixture into the prepared loaf pan and evenly spread it across the bottom of the entire pan. Place the pan in the refrigerator for at least 3 hours until completely set.

Remove the pan from the refrigerator, lift the fudge out of the pan using the parchment paper, and cut it into 36 square pieces using a sharp knife. Serve and enjoy!
