Basil Pesto Sauce

Place pine nuts in a large food processor. Pulse until a paste forms.

Add parmesan reggiano cheese, garlic, basil, parsley, olive oil, fine salt and pepper. Pulse until a grainy pesto is formed.

Toss with pasta, make pesto bread, use a marinade for chicken or fish, or use as a salad dressing. This can be refrigerated for up to a week.

Basil Pesto Chicken Pasta

Set out a food processor. Place the basil leaves, pine nuts, pecorino cheese, garlic clove, and lemon juice in the food processor. Cover and pulse until finely ground.

Then add in the olive oil, ½ teaspoon salt, and ¼ teaspoon ground pepper. Pulse again until a smooth, thick pesto sauce is formed. Taste, then salt and pepper as needed.

For the Basil Pesto:

Set a large pot of salted water over high heat, and set out a mixing bowl. Once the water is boiling, stir the pasta into the water. Cook to al dente, according to the package instructions. Drain the pasta and place in the bowl.

Stir in the shredded cooked chicken. Allow the temperature of the pasta to come down a little, as to not cook the pesto. Once the pasta is warm (not hot) stir in the pesto, one half cup at a time, until it is as saucy as you like.

Serve at room temperature, or cold. Cover and chill until ready to serve.

Place the sweet potatoes on a baking tray, and rub lightly with a dash of oil. Roast at 190°C (Gas Mark 5 / 375°F) for around 45 minutes, until they're almost soft in the middle.

While the potatoes are roasting, prepare the pesto. Add the nuts, garlic, basil and olive oil to a mini food processor, and blitz thoroughly until smooth. Season to taste, and add enough water to give your desired consistency (I wanted a pourable pesto, so I added a few tablespoons of water).

To prepare the black beans, add them to a mixing bowl with the tomatoes, sweetcorn, parsley, garlic granules, salt and pepper. Drizzle with a little oil, and mix to combine.

When the potatoes are almost soft in the middle, add the black bean mixture to the baking tray, and return to the oven for a further 20 minutes. The beans should be slightly crispy, and the tomatoes will be soft and juicy.

Serve the roasted sweet potatoes topped with the roasted beans, and drizzled with pesto.

Preheat the oven to 400ºF. Line a baking sheet with parchment paper. Slice a loaf of French or Italian bread into ½-inch thick slices.

Place the slices of bread on the prepared baking sheet and spread ½ Tbps pesto over each piece.

Slice the Roma tomato into 8 slices, then top each piece of bread with two slices of tomato.

Finally, add a large pinch of shredded mozzarella to each piece of bread.

Bake the toast in the oven for about 10 minutes, or until the cheese is melted and the toast is brown and crispy on the edges. Baking time may vary depending on your oven and the type of bread chosen, so keep an eye on them. Serve warm!

Add the parsley, nuts, parmesan cheese, garlic, coarse salt and two tablespoons of olive oil into a food processor.
