This easy Vegetarian Homemade Ramen comes together quickly and features a rich broth, crisp-tender vegetables, ramen noodles, and traditional Japanese flavors.

Easy Homemade Ramen

mushroom or vegetable broth (reduced sodium)

garlic (minced)

ginger root (grated)

soy sauce

rice wine vinegar

shitake mushrooms (sliced)

red pepper (minced)

ramen noodles (about 3 packages)

white miso paste (optional)

bok choy greens (thinly sliced)

eggs

carrot (grated)

green onions (chopped)

red pepper (diced)

Sriracha

Seaweed (optional)

Prepare Stock

Pour vegetable or mushroom stock into a large saucepan. Add in minced garlic, freshly grated ginger, soy sauce, rice wine vinegar, and miso if using. Bring the broth to a boil and reduce to a simmer.

Simmer

Add in sliced mushrooms, red pepper, and bok choy into the broth, and simmer for 7-10 minutes, or until greens are wilted.

Cook Noodles

Add in packaged ramen noodles (discard seasoning pack) and cook according to package directions–about 3 minutes.

Serve

Dish up cooked ramen into serving bowls and top ramen as desired.

A delicious and nourishing recipe for a quick dumpling soup featuring aromatic broth, vegetables and noodles.

Quick Dumpling Soup

ginger (minced)

vegetable broth

tbsp miso paste

vegetable dumplings (frozen)

pack brown rice ramen

carrots

greens (chopped)

onion

tsp chili flakes

½ tsp sesame seeds (toasted)

Heat a medium sized pot over medium heat. Add the ginger and garlic, and saute for 2 minutes, until fragrant. Add in the vegetable broth, soy sauce and miso paste. 

Bring the soup to a boil, then add the frozen dumplings, noodles, carrots and greens. Allow to simmer over low to medium heat for a few minutes until the dumplings are cooked through and the noodles are soft. 

Transfer to bowls and garnish as desired. Enjoy immediately. 

This one-pot ramen dish packs tons of flavor. Ready in 20 minutes, it&#39;s the perfect &quot;lazy&quot; weeknight meal.

Creamy Thai Red Curry Noodles

noodles noodles

full fat coconut milk

tbsp red curry paste (heaping)

tbsp soy sauce (tamari if gluten-free)

tbsp ginger root (grated)

maple syrup (or honey)

pack puffed tofu

broccoli (chopped)

red bell pepper (chopped)

peanuts (crushed)

lime juice

cilantro (or parsley, diced)

In a large deep pan, add the squares of ramen noodles, tofu puffs, broccoli, bell pepper, and peanuts. 

Turn the pan to medium heat, and add the vegetable broth, coconut milk, red curry paste, soy sauce, garlic, ginger and maple syrup. 

Add the lid to the pan, and bring to a low simmer. After 2-3 minutes, open the lid and stir until the noodles are starting to soften and the spices and sauces are combined. 

Add the lid back on and allow to simmer for an additional 3-5 minutes, until the noodles are cooked through and the vegetables are soft. 

Taste, and adjust seasonings as desired. Serve immediately, with fresh cilantro and lime juice.
