This recipe makes really soft, melt-in-the- mouth British-style fudge. A batch of super-creamy fudge makes a brilliant present for family and friends at birthdays and Christmas. 

Use the iced water hack and you won't need a sugar thermometer. 

Fudge

tin condensed milk

450 grams/1lb light brown soft sugar

120 grams/4½oz butter, cubed

125 milliliters/4fl oz milk

salt

Nadiya's rocky road is a mixture of marshmallows, white chocolate, dried apples and fruity raisins. It's very sweet, so a little bit goes a long way. 


Apple And White Chocolate Rocky Road 

200 grams/7 ounces white chocolate, roughly chopped (or use chocolate chips)

golden syrup

cinnamon

cinnamon biscuits (or digestives)

100 grams/3½oz dried apples, chopped into small pieces

grams/1¾oz raisins

tbsp icing sugar,

Candied orange and lemon peel will keep for 6-8 weeks in an airtight container. Chop and add to fruitcakes, muffins or other treats

Candied Citrus Peel

unwaxed oranges,or 2 oranges and 2 lemons

bar of dark chocolate(or gluten-free alternative), optional

Cut the fruit into 8 wedges, then cut out the flesh, leaving about 5mm thickness of peel and pith. Cut each wedge into 3-4 strips.

Put the peel in a pan and cover with cold water. Bring to the boil, then simmer for 5 mins. Drain, return to the pan and re-cover with fresh water. Bring to the boil, then simmer for 30 mins.

Set a sieve over a bowl and drain the peel, reserving the cooking water. Add 100g sugar to each 100ml water you have. Pour into a pan and gently heat, stirring to dissolve the sugar. Add the peel and simmer for 30 mins until the peel is translucent and soft. Leave to cool in the syrup, then remove with a slotted spoon and arrange in 1 layer on a wire rack set over a baking sheet. Put in the oven at the lowest setting for 30 mins to dry.

Sprinkle a layer of sugar over a sheet of baking parchment. Toss the strips of peel in the sugar, a few at a time, then spread out and leave for 1 hr or so to air-dry.

Pack the peel into an airtight storage jar or rigid container lined with baking parchment. Will keep for 6-8 weeks in a cool, dry place.

To make into a delicious gift, melt the chocolate in a small bowl. Dip the candied orange peel into the chocolate to half-coat them, shaking off the excess. Put them on baking parchment to set, then pack into small cellophane bags tied with ribbon or pretty kitchen string.

With just four ingredients, you can make your own coconut ice at home. They make great edible gifts too! 

You will need a 20cm/8in square baking tin for this recipe.

397 grams/14 ounces tin condensed milk

325 grams/11½oz icing sugar, sifted

Make this Scottish tablet as a sweet treat for family and friends – it makes a lovely gift. Tablet is similar to fudge, but with a more crumbly texture.

Line a 22 x 18cm tray with baking parchment. Put the butter and 150ml water in a <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">pan</a> over a low heat, and melt the butter (don't let the water boil). Tip in the sugar and dissolve, stirring often.

Bring the water to the boil, turn down to a simmer, then add the condensed milk. The mixture will be a light creamy colour.

Cook for 20-30 mins, stirring often, until the mixture is thick and a deep caramel colour.

To test, drop a little mixture onto a cold side plate, it should not run and should be thick and sticky after 30 seconds. Remove from the heat and beat for 10-15 mins until it has slightly thickened. Pour into the prepared tin and leave to cool for 30 mins before cutting into squares.

You can choose any filling you like for these easy little homemade chocolates. They are ideal as sweet nibbles or as a gift for family and friends.

Equipment: you will need a large silicone ice cube tray.

125 grams/4½oz soft unsalted butter

chocolate,

200 grams/7¼oz rich tea biscuits

100 grams/3½oz mini marshmallows

Honeycomb is the most amazing stuff  – add the bicarbonate of soda to the sugar and watch as it explodes in the pan and grows before your eyes. The honeycomb is then mixed with melted chocolate, syrup and biscuits to make a sticky, crunchy square.

75 grams/2½oz caster sugar

flavourless oil (such as vegetable oil),

250 grams/9 ounces dark or milk chocolate,

grams/3½oz unsalted butter,

150 grams/5½oz digestive biscuits

Also known as cinder toffee this light, crunchy sweet is a must on bonfire night and a perfect addition to ice cream.
