Fresh and vibrant Thai Chicken Noodle Bowl with Peanut Sauce! Loaded with veggies, and kissed with peanut sauce, these noodle bowls make a marvelous dinner.

Thai Chicken Noodle Bowl with Peanut Sauce

chicken breast (2 large)

ginger

garlic (minced)

fish sauce

soy sauce

sesame oil

chile garlic sauce

DeLallo Whole Wheat Capellini Pasta

mung bean sprouts

basil leaves (use Thai Basil if you can find it)

green onions

cucumber

peanuts

limes

peanut butter

chicken broth

honey

rice vinegar

garlic

Place the chicken in a baking dish and top with grated ginger, garlic, fish sauce, soy sauce, sesame oil and chile garlic sauce. Allow the chicken to soak while you prep the rest of the ingredients.

Preheat the grill to medium heat and bring a large pot of water to boil. Meanwhile, place all the ingredients for the peanut sauce in the blender. Puree until smooth.

Grill the chicken for approximately 5 minutes per side, then place on a plate and cover with foil to keep warm.

Drop the pasta in the boiling water, cook according to package instructions (about 2-3 minutes) then drain.

After the chicken has rested at least 5 minutes, slice it into pieces. Then toss the pasta with the peanut sauce and divide into bowls. Top each bowl with chicken slices, bean sprouts, basil leaves, green onion, cucumber slices, peanuts, and a couple lime wedges.

A simple healthy lettuce wrap (or salad) recipe with exotic Thai appeal. Nam Sod is an easy meal that makes your dining room seem like an authentic Thai restaurant!

Nam Sod Lettuce Wraps

peanut oil

pork

mint (chopped)

lime juice

red pepper

butter lettuce (leaves separated)

carrot

red onion

onions

cilantro

red bell pepper (optional)

Place a large skillet over medium heat. Add the oil, ground pork, garlic and ginger. Brown for 5 minutes, breaking into small pieces with a wooden spoon. Then add the mint, soy sauce, fish sauce, lime juice and crushed red pepper. Stir and cook another 3 minutes until the liquid absorbs.

For lettuce wraps: Place a spoonful of the nam sod meat filling in lettuce leaves, then top with veggies and peanuts.

For the salad: Arrange the lettuce leaves in 4 serving bowls, then divide the nam sod between the bowls and top with veggies and peanuts.
